Mozuku somen (cooking)

As I wrote before, mozuku is a seaweed that can be harvested in the waters around Okinawa. It's delicious when you eat it with vinegar, but this time, I mixed it with ``somen'' (extra-thin udon), which is representative of summer in Japan, and ate it with mentsuyu(noodle-soup). The amount is almost 1:1. This way of eating is my originality.

モズクは、以前も書いたが、沖縄近海で採れる海藻。酢で和えて食べると美味しいが、今回は、日本の夏を代表する麺：「そうめん」（極細うどん）と豪快に混ぜて麺つゆを入れて食べた。量はほぼ１：１。この食べ方は、私の独創である。

Kinjiso is a plant in the Asteraceae family that is native to Amami Oshima and the main island of Okinawa. It is characterized by the purple color on the underside of its leaves. The taste is especially sharp when it is made with vinegar. In mainland Japan, it is called Suizenjina in Kumamoto and Kinjiso in Kanazawa. The name comes from the skin color of the sweet potato ``Kintoki=kinji'' and the underside of the leaves of this plant, because of their similarity.

金時草の酢の物（料理）

金時草（きんじそう）は、奄美大島、沖縄本島などが原産のキク科植物で、葉の裏がムラサキ色になるのが特徴です。特に酢の物にすると、味が冴えます。日本本土では熊本で水前寺菜、金沢で金時草と呼ばれます。その名称は、サツマイモの「金時（きんとき）」の皮とこの植物の葉の裏の色が似ているからだとか。

In Japan, chrysanthemum flowers are eaten as edible flowers. There are two types, yellow and purple, and the most representative type of purple is ``Mottenohoka''. This is because people who ate the food said it was ``unbelievably delicious,'' and it is delicious. Carefully remove the petals from the calyx, boil them lightly, and toss them with sambai vinegar (a mixture of equal parts of soy sauce, vinegar, and mirin).

“もってのほか”（菊の花）の三杯酢（料理）

日本では、食用花として、菊の花を食べる。黄色と紫色の2系統あるが、紫色では“もってのほか”が代表である。料理を食べた人が「もってのほか美味しい」と言ったからだそうだが、実際美味しい。ガクから丁寧に花びらを取り、軽く茹でて三杯酢（醤油、酢、ミリンを等量混ぜた液）で和える。

Seared bonito (cooking)

A famous dish of Kochi Prefecture. The surface of the bonito is roasted over a straw fire so that the surface is seared and the inside remains red. Cut this and eat it with sauce. It's exciting. I use a mixture of soy sauce, ground ginger, ground garlic, and tarragon to make the sauce.

カツオのタタキ（料理）

高知県の名物料理。カツオの表面を藁の火で炙り、表面を焼いて、中は赤いままとする。これを切り、タレを付けて食べる。豪快である。私は醤油、摺り生姜、摺りニンニク、タラゴンを混合してタレにしている。

Japan's NHK "Minna no Uta" is a long-running program of quality nursery rhymes. This song was composed by a young Ryuichi Sakamoto who became famous as a member of YMO. Anticipating the golden age of computers, it is performed using electronic music. It's aimed at children, but it has decent music.

Mitsuteru Yokoyama and Osamu Tezuka are often compared as Japan's representative science fiction cartoonists, but Yokoyama Mitsuteru's talent may surpass Tezuka Osamu by far. They are competing to release their works at the same time, but Yokoyama is often the winner. "Astro Boy" (Tezuka) and "Tetsujin 28" (Yokoyama), "Triton of the Sea" (Tezuka) and "Babil II" (Yokoyama). Tezuka likes to talk about robots with human minds, but Yokoyama hardly ever talks about them. "Magma Ambassador" (Tezuka) and "Giant Robo" (Yokoyama)are the same, but "a robot that should not have a heart, Giant Robo" ignores the commander's order and sacrifices himself. The action brought tears to the young men and women of the viewers at the time. The heartfelt actions of those who do not have a heart touch people's hearts.

日本の代表的なSF漫画家として、横山光輝と手塚治虫はよく比較されるが、横山光輝の才���は、手塚治虫を遥かに凌駕するのではないか。同時期に競うように作品を発表しているが、横山に凱歌があがることが多い。「鉄腕アトム」（手塚）と「鉄人２８号」（横山）、「海のトリトン」（手塚）と「バビル２世」（横山）など手塚は「人間の心を持つロボットを好んで取り上げるが、横山はほとんど取り上げない。「マグマ大使」（手塚）と「ジャイアントロボ」（横山）も同様だが、「心を持たないはずのロボット、ジャイアントロボ」が、命令者の命令を無視して、自己犠牲の行動に出たことは、当時の視聴者の若い男��の涙を誘った。なまじ心を持たない者の心ある行動が、人の心を打つのである。

普通のカボチャの５分の１くらいの大きさの食用ミニカボチャ。調理法はカボチャに準じる。切り分けて塩少々、砂糖を適量入れて煮込み、仕上げにシナモンを振る。

Irish National Anthem (The Soldier's Song)

Isn't it rare for a national anthem to feature soldiers and the military? This is probably the result of a long feud with a different race (Anglo-Saxon), but as an Asian, it is difficult for me to understand this kind of emotion. Of course, the original poem is in Gaelic, but the English translation was used. Please forgive me, people of Ireland.

Lemongrass tea (cooking)

Lemongrass, a Poaceae herb native to Southeast Asia, contains a component called limonene, just like citrus fruits, and has the same scent as lemon. In Thailand, the stems are mainly used to flavor a soup called Tom Yum Kung or to make tea. It can be easily brewed in a normal herbal teapot. The Poaceae family is a monocotyledonous plant with a simple structure, but it is more evolved than a dicotyledonous plant and adapts to changes in the environment.

東南アジア原産のイネ科のハーブ、レモングラスには、柑橘類と同じくリモネンと言う成分が含まれ、レモンと同じ香りがする。主に茎を、タイ国ではトムヤンクンというスープの香り付けにしたり、ティーにしたりして、飲用する。普通のハーブ茶器で簡単に淹れられる。イネ科は、単子葉植物で、構造が簡単だが双子葉植物より進化していて、環境の変化に適応している。

Brown mushroom ajillo (cooking)

Since I can't buy shrimp easily, I used affordable brown mushrooms to make ajillo. Olive oil and garlic are essential, but I try to add at least chili pepper and salt. I'll make it with shrimp one of these days.

Boiled eggplant with clove flavor (cooking)

Make slits in the skin of the eggplant Which was cut lengthwise and soak it in water for about 30 minutes to remove the bitterness. Add soy sauce, kombu dashi, oyster sauce, and water to a frying pan, add the eggplant, cover, and steam for about 10 minutes. Shake the cloves when softened and remove from heat. The eggplant is a magical ingredient.

　

茄子の煮びたしクローブ風味（料理）

縦に切った茄子の皮に切れ込みを入れ、３０分ほど水であく抜きする。フライパンに醤油、昆布だし、オイスターソース、水を入れ、茄子を投入、１０分ほど蓋をして蒸し煮にする。柔らかくなったところでクローブを振り、火から降ろす。茄子は魔法の食材。
