Sure thing! I'll do you one better, I'll give you my recipe for ANY KIND of fruit wine.

Please note, this will make approx 5 gallons of rather strong, dry wine. It will be about 15% ABV, and I encourage you to BE CAREFUL when drinking it, as it can be stronger than you expect.

Full instructions Below;

Supplies; (These are reusable items or materials which you use to make the wine).

(2) 5 gallon brewing buckets (or a 6 gallon food grade bucket. Regular 5 gallon ones are too small; you can use practically any kind of food grade container, as long as it's glass, stainless steel, or HMPE/UHMPE plastic). you can TECHNICALLY use 1 brewing bucket and 1 regular 5 gallon, cause of lees and other loss, but ehhh. Make sure the bucket lid has a hole to accept your airlock, and is waterproof otherwise.

(1) large plastic tub or container. I like big HDX totes for this.

(1) siphon (get the 24" one. just do it.)

(1) brewing airlock

(1) StarSan (sanitizer)

(1) hydroemeter and matchjing graduated cylinder (this is to measure the potential strength).

(1) waterproof baking scale

(1) pair of nitrile gloves

(1) 24" long stainless steel mixing spoon (ALUMINUM IS BAD DO NOT USE)

(1) Turkey Baster (New, Clean, Unused. Label it for brewing only)

(1) Large stainless steel, glass, or ceramic bowl

Theory (I promise to be brief here).

Alcohol is made when yeast eats sugar and oxygen, the byproduct is more yeast, carbon dioxide, alcohol, and what are called esters (complex aromatic chemicals). Not all yeast are made equal, and many thrive in specific environments, or make specific byproducts.

Some universal rules;

No Vitamin C, Citric Acid, or Citrus Juices. (Kills the yeast.)

No Juices w/ Preservatives. (You can use from concentrate, as long as there's nothing else in it).

No Artifical, or Non-Sugar Sweeteners (It doesn't work).

Nothing With a High Protein Content (Milk, nuts, etc. It will rot. Don't.)

Nothing with a lot of salt. (Also kills the yeast.)

Between 100-70F, for most yeasts.

Ingredients

5 gallons of fruit juice (any blend, any brand, any kind, follow the universal rules.)

Sugar/Sweeteners (I like dark brown sugar and unsulphured molasses, expect to use 4-6 pounds)

Spices, mixins, whatnot (see below).

Process.

Sanitize; You will need to make a batch of StarSan (read the instructions!) with warm water in your large plastic container. This is your sanitary solution. This will kill unwanted microorganisms. It is 100% food safe. Do NOT rinse or wipe sanitized items, if a sanitized item touches ANYTHING that isn't sanitized, it is no longer sanitized. You will have to sanitize everything except your ingredients, and that includes your hands, repeatedly, any time they touch anything that is not explicitly sanitized. To sanitize something, immerse it it for approx five seconds, and pour/let drip any remaining star san on or in the object. The residual star san is FINE. Don't worry about it.

Must; Pour your fruit juice into your brewing bucket (AFTER SANITIZING THE BUCKET). This will mix all the fruit juices you may use, this is vital. Meanwhile, put your yeast packet (UNOPENED) into your pocket. Trust me.

Measure; Use your turkey baster to fill your graduated cylinder, and hydrometer. Note (WRITE DOWN) the brix, and specific gravity. Use this calculator: https://www.brewersfriend.com/brix-converter/ to get the current potential ABV. Now, work out what ABV you want, by gradually increasing the brix, until it hits a point you'd like. Take those Brix, and plug them into this calculator: https://www.brewersfriend.com/chaptalization-calculator/ to get how many pounds of sugar to add. Measure that amount of sugar by weight, into your bowl. If you are using liquid sweeteners, you will have to work out how much sugar they have, by weight; that can take some math, but there are ways to find it online. Add that sugar/sweetener to the brewing bucket, and mix until dissolved. Take a second measurement, to confirm that the Brix has gotten to the correct levels.

Mixins; add any spices, or mixins you want. I am very partial to a half or whole cup of coldbrew concentrate, 2 ounces of vanilla extract, and a small bit of cinnamon (very small). You can add black tea, cloves, nutmeg, even citrus zest; just follow the universal rules, and if feasible, sanitize the material. If you can't sanitize it, it should be ok, generally, as long as it's visibly clean and free of gunk.

Mix! Add your yeast. You do NOT need to prep your yeast, save for to get it up to body temperature SLOWLY (put it in your pocket while you work). Put your sanitized lid on your brewing bucket/vessel, and shake vigorously. If this is not feasible, or you are not very physically strong, instead vigorously mix the mixture. Your goal is to aerate the mixture, to add oxygen, which the yeast needs for it's initial growth spurt.

Airlock; Add the airlock, write the Brix, and starting date on the bucket or on a small bit of painter's tape, and store in a room with a stable temperature, away from sunlight. 70-90F is ideal for most yeast.

Wait; Check on the airlock, it it's making bloop noises, it's fermenting. When it stops making bloop noises, or they seriously slow down, the fermentation is done. this will take approx 1-2 months, in my experience.

Check; Make your star san again, sanitize your gear. Open your brewing bucket. If you see mold, when you open the brewing bucket, you failed. Try again. If you see brown/crusty stuff on the sides, thats OK; that's Kroysen, it's normal. Use your baster as before, to check the Brix/SPG. It should now read near zero. If so, it's done, if not, maybe add a bit more yeast, close it up and wait a little longer. If there are any off flavors, make a note of them. that's not unusual, and it's NOT impossible to fix. Google the specific flavor smell or whatever, and you'll find suggestions. If it's rotten eggs/feet smell, see next step.

Rack; When it's ready as above step, use your siphon to siphon the wine from it's current bucket, to a second one. Do your best to not disturb the bucket before or during this step, as a lot of dead yeast has settled to the bottom, and we want it to stay there. This second bucket can be a regular, food-grade 5-gallon bucket; since you will be leaving some stuff behind, and fermentation is done. If the wine smells like rotten eggs, you need to "air rack" it, that means, when you siphon it, let the wine pass through a strainer or collander on the way out, or let it fall from a height, so knock out the sulphur dioxide. APPLE WINE WILL ALWAYS NEED TO BE AIR RACKED.

Enjoy! You can bottle it at this point, or do what I do, which is have a bucket with a spigot that I can grab a glass from whenever I feel like it, in a cool dark place in my basement.

K1V-1116 yeast

Throughout the Edo Period, Japan was largely closed off from the rest of the world, relying solely on its limited domestic resources. As a result of this, reuse and recycling were a natural part of life with almost all daily items experiencing multiple life cycles. At the forefront of this 250-year period of sustainability were professions that centered around repairing and repurposing everyday goods and materials, giving new life to items that would today end up in landfills. In his book, “Just Enough,” Azby Brown introduces a number of the professions that led to this period of sustainability and we’ve listed some of our favorites below.

Tinkers

Tinkers were local craftsmen who repaired damaged pots and kettles. Often found carrying portable forges and bellows on their backs, they used scrap metal to repair holes and cracks that would otherwise render these essential household items useless.

Scrap metal dealers would purchase unrepairable items from tinkers and exchange candies and toys with local kids for nails and other usable metal scraps they found while playing.

Paper lantern and umbrella repairmen

While most umbrellas in modern-day Tokyo are quickly lost or broken and disposed of, the raw materials that made Edo Period umbrellas often saw multiple lives with umbrella repairmen carving out a fairly lucrative niche for themselves.

These repairmen would buy used umbrellas, assign a price based on the condition of the bamboo frame then disassemble, repair and resell them to new buyers.

Discarded materials, such as the waterproof oiled paper would pass onto local butchers for wrapping fish and miso.

With umbrellas and paper lanterns sharing essentially the same materials, umbrella repairmen would also cross over into the realm of lantern repair and often sub-contract this work out to low-level samurai.

Used clothes dealers

If you thought Shimokitazawa was overrun with used clothing dealers these days, Brown says there were as many as 4,000 of them in Edo.

With new clothes being unaffordable for the average family, when it came time to update the wardrobe, old garments would be washed and taken to a dealer to be exchanged for refurbished items at a small fee.

These dealers would take apart kimono, dye them and reassemble them for resale, a task made easier due to the way kimono are designed.

As clothes would begin to wear out, they found new life as aprons, diapers, pouches, cloths and eventually kindling before becoming ash which would also be repurposed.

Barrel repairers and recyclers

If you knew your way around a bamboo barrel hoop in the Edo Period you could make a steady living for yourself repairing the various types of shoyu, sake, miso or vinegar barrels found in the average home.

The more experienced itinerant barrel hoop makers could also find work as barrel recyclers, a specialized craft that saved reusable barrels and casks from early disposal.

After collection, recyclers would inspect, grade, refurbish and resell them onto brewers and liquor shops who would choose from new, new-looking, slightly used or worn barrels depending on their intended use.

Ashmen

Most daily items in the Edo Period were made from burnable plant-based materials such as wood, bamboo, straw and cotton.

Rather than have worn-out rope, sandals, hats, raincoats or baskets end up in landfill, these items could be burnt to provide heat and turned to ash, which is where the ashman comes in.

Rather than discarding of ash, households and businesses such as public baths would collect their ash and sell it to local ashmen.

With ash from straw and cotton cloth containing large amounts of potassium, it was in high demand as an additive for fertilizer or for use in ceramics, dyes or sake production which created a lucrative business for motivated ashmen.

isobel was born in hammersmith, london on the the 17 of september 1979. the youngest of the two howard siblings by seven years, she was an unexpected ( but happily recieved ) surprise. the child of a successful concert cellist father and accountant mother, she grew up comfortable and wanting for nothing.

school was a breeze for academically-minded isobel, and when it came time to make a decision about tertiary education, she was ambitious. she applied to all the top universities in the UK, and to the shock of her family, even a few US ivy leagues. due to her excellent grades, she had her pick of the litter when it came to acceptance time. and she chose cornell in new york.

life in america was challenging at first, especially as a lone international student. isobel kept herself busy with her degree in animal science, and eventually as she made more connections, she began to feel at home. her course was thrilling, and only solidified her desire to become a vet and one day own her own practice. working with large animals, specifically, felt like her calling. horses were her favourite patients, reminding her of the joyous times spent riding on her grandparent's farm as a girl.

isobel was studying in the library in her third year at cornell when she was approached by a man who introduced himself as mark howard. he was a few years her senior, engaged in postgraduate studies, and devastatingly handsome. the two began talking, and soon enough they were an exclusive item. isobel had dated people before but never seriously, never long enough to fall in love. with mark, she did; and it was effortless. isobel completed her honours year with flying colours, and she and mark moved into a small apartment near campus together. she began working as a veterinary technician at a local clinic. and then she fell pregnant.

liam howard came into the world bloodied, his screams a soundtrack for his mother's joyous tears and father's beaming smile. isobel put her plans for veterinary college on hold to raise liam, and mark took more shifts to support the family. for the first few years of liam's life they were a strong unit, their home filled with laughter. the couple moved to a nice two bedroom home in colorado, with a backyard large enough for a dog they named buck. but when isobel went back to work and started studying again, things began to change. isobel and mark found less and less time for each other, and a kernel of resentment grew between them for careers they had to stop and start.

liam was eight when isobel discovered mark had an affair. it was a one time thing, he told her, born of loneliness and frustration, but isobel could not get past it. she been lonely and frustrated too, and still she had not betrayed him. they divorced shortly after, agreeing to a split custody agreement for liam's benefit.

eventually, isobel did get that veterinary practice she dreamed of, and slowly her life got back on track. she began dating again, too, exploring her sexuality in a way she never dared to as a younger woman. for all his faults, mark barely bat an eye when she asked him to look after liam one friday night so she could go on a date with a woman. none of the relationships worked out for her, though not for lack of trying. she didn't lose sleep over it. she thought she had time to figure it out.

an infectious outbreak — that's what the media called it anyway, before internet shut down. military trucks rolled into town and began herding people out of their homes shortly after, but before they could reach her, isobel had driven to her ex-husband's. it was his week with liam, and there was no way in hell she'd let herself get rounded up without her child by her side.

surviving the end of the world proved tough, but even more difficult was surviving it alongside her ex-husband. the early years very nearly drove her insane, stuck in a military quarantine zone in the same house. every little thing she used to love about mark drove her insane. however as time went on, they established a truce. liam was now a gangly preteen, and presenting as a united front made parenting insurmountably easier. a unorthodox family of three, they stayed in the safety of the quarantine zone. if not for the bodies of the dead visible from the high boundary walls, they could almost imagine they were living an ordinary life.

they were eight years into the end of the world when the sickness began to spread. her veterinary skills put to work at the camp's medical station, isobel was one of the first to fall ill. it started with a sore throat and headache, and before she knew it, isobel found herself in a makeshift hospital bed, slipping in and out of consciousness. moments of waking were spent in panic, looking for the face of her son. but she was isolated, set aside with the rest of the sick. she began to rot away there, until one day when she awoke she was being carried through the ruins of the quarantine zone. the military had been overrun. her home was gone.

after what she later discovered were days, isobel came to in the university of eastern colorado's hospital. her rescuer had dragged her all the way to the nearest sign of civilisation. hooked up to an IV, the camp's medical staff rehydrated her devastated body and provided her with the care her previous home had not. it took her a week to gather the strength to walk the length of the halls, and not a day longer to convince the staff to let her outside. there was no sign of her son or ex-husband amongst the uec crowd, but still isobel refused to let herself think the worst. if she was able to make it out alive, barely breathing and unable to walk, then liam and mark surely could too.
