Grand Prairie Microgreens is a local neighborhood urban microgreens grower that produces over 125 varieties of organic and non microgreens, wheatgrass and edible flowers, for the restaurant industry as well as the retail consumer.

Minutes after a 1982 wine tasting was postponed, @chefdat kindly invited me to join him at the Chef’s Table at Flora Street Cafe. This was one of Chef Evan’s @linecook83 last meals before heading to Chicago to join @thealineagroup at Michelin-starred @roisterchicago And what an epic, world-class meal it was! The was not the standard tasting menu. Rather it was an amazing mix of classic staples (lobster tamale pie with caviar; asparagus salad with jumbo lump crab; scallop crudo- swipe left for video), and new courses such as a scallop mousse in the form of a marshmallow (pic 3). This scallop mousse was a preview of a new menu item for Fauna, the highly-anticipated 16-seat restaurant that will soon operate inside Flora Street Cafe with Diego Fernandez, currently chef de partie at Alinea. The beverages were top notch too - cool custom cocktails were mixed in with a barrage of wine and champagne. The 08 J.B. Becker Kabinett Trocken paired perfectly with the seafood courses. The 12 Torbreck Steading (2/3 Grenache) was the perfect match for the tasty quail - each shared a smokey note and the bright fruit from the Grenache complimented the quail even better than the 13 Belle Pente Murta Vineyard Pinot Noir from Willamette, which was also showing well. I’m not sure what the dessert is called (pic 8), but it was really, really good - especially when paired with proper Champagne!
