solangelo headcanons because i am Going Through It (there's a lot buckle up)
- nico has acne on his cheeks and chin 
- will has a cleft lip w a scar that goes up to his nose; it’s not v noticeable and no one rly notices it but nico gazes at him A Lot and asks about it one day; will explains and nico thinks it’s cool and now he kisses it every time they say goodbye
- they both grow their hair out; will sometimes ties his up to keep it out of the way and nico loves when he does; nico ends up dying a little bit of his red bc of peer pressure from thalia
- nico has a gap between his front teeth it’s very cute 
- will blushes really easily; nico will just vaguely flirt with him like call him cute or something and will turns RED 
- will has piercings; three in each ear lobe, one helix, and one nose 
- nico ends up getting a helix piercing too just bc he thinks it’s cool

- he has a nice singing voice but he doesn’t sing for anyone; he only sings in front of will and even then it’s just if there’s music playing and they’re both doing stuff

- wills nails are always painted and sometimes when he’s focussing too much on work and isn’t taking care of himself the paint chips away 
- nico always notices and makes sure they have at least one or two days just to make sure will is getting sleep and is relaxing and stuff (he paints wills nails for him) 
- will is puerto rican god bless 
- he never lived there but he visited a lot as a child and he and reyna bond over san juan and the food one day (nico listens very fondly) (wills favourite food is mofongo and reyna likes pastelón but they both have a soft spot for habichuelas guisadas)
- will does like stick and poke tattoos in the apollo cabin; usually it’s just like little tiny ones for other campers or on himself and one day nico wants one

- will keeps all the drawings he gives him; he ends up with them pinned to the wall by his bed and on his desk in the infirmary and in his moms apartment for when he visits 
- nico can crack like every joint in his body and all of his fingers and toes; getting up in the morning is an ordeal 
- it drives will crazy but he refers to him as his rice krispies boyfriend 
- will is very 420 friendly; that is to say that he’s a stoner but he doesn’t smoke that much at camp bc he doesn’t have time to and there isn’t much privacy (nico is curious about it and they get high together one day and nico discovers that it helps with his chronic pain; also will is hot when he smokes especially when when they’re shotgunning ANYWAY)
- nico has always had trouble walking and stuff (he trips and stumbles a lot) especially on days that his chronic pain is worse 
- he just blames it on having bad depth perception for a while but he can’t use it as an excuse when he needs to lean on things to stand 
- one day will notices and brings him to the infirmary for a crutch and nico tries to insist that he doesn’t need it but will gives him the whole < there’s nothing wrong with needing assistance > and < you deserve to be able to make your life easier > spiel 
- his first one is just the standard silvery gray but after a while he gets one that’s red and black
- he uses it to smack jasons legs when he’s being annoying 
- nico calls will amore and baby and my love and will calls him angel and honey and sweetheart 
- nico is chronically touch starved and is constantly just reaching out to grab wills hands or putting his leg over wills leg while they’re sitting together 
- nico is a coffee snob 
- but he also has a sweet tooth and loves chocolate and gummies and stuff 
- nonbinary he/him will and ‘i have so many more things to give a shit about’ nico 
- nico and hazel both swear like sailors 
- so does will but he also has bedside manner 
- nico does not 
- nico shows affection by biting and licking will; not even in a sexual sense just literally taking a chomp of his cheek or licking the back of his hand and will is just ‘thank you angel’ (especially on days that he’s less verbal/it’s harder for him to speak; will knows what it means)
- nico lays on his bed with his head hanging off the edge upside bc it’s fun sensory wise and the first time he does it with will present will doesn’t even question it he just moves to sit on the floor facing him 
- it becomes a thing they do and after they get together they do the spider-man kiss very often 
- their first i love you happened because will was doing something very mundane and nico just Gazed at him; will finally noticed and was like yes? and nico just ‘im in love with you’ 
- will always has a hand under nico’s shirt even before they start dating just because he’s so warm that nico wants to be as close as possible to him 
- nico hates balloons so on his birthday will puts up streamers across like the whole ceiling and they hang down and drape everywhere and it looks so pretty it stays for months 
- neither of them like The Big Light so nicos cabin only ever has a bunch of lamps on 
- before he starts collecting things (like lamps) he barely sleeps bc he’s scared of the dark and one day will mentions it to one of his siblings because he’s stressed and wants to help him so his sibling gives him some fairy lights and a nightlight to give to nico 
- they help 
- nico becomes besties with one of wills sisters and ends up just casually hanging out in the apollo cabin all the time to paint with her and hang out and stuff 
- he also ends up going to the apollo cabin if he’s had nightmares just to take naps in wills bed even if will isn’t there like if he’s working  
- will comes back and immediately kicks his shoes off to cuddle with him 
- nico has a collection of hoodies and jumpers and sweaters that he ‘borrows’ from will; he doesn’t really ever wear them out but he wears them when he sleeps because they’re warm and they smell like will; will finds out bc he goes over one morning to take nico to breakfast and nico opens the door very sleepily wearing nothing but boxers and wills hoodie; will just about dies 
- nico is a koala bear; he loves holding onto wills arm and hugging him and hiding his face in his neck or chest and they soon find out that will is able to pick him up no problem (which proves helpful when nico is injured or exhausted but also just when nico wants to climb up him and be held)
- nico is very good at cooking but no one knows until like years later when they visit nico and wills apartment and they’re all gushing over how good dinner is and nico is just :) 
- speaking of their apartment 
- nico’s favourite place is the fire escape window 
- he sits up there to smoke and read and people watch and will joins him to stargaze 
- there are stacks of books everywhere bc nico reads a lot 
- they’re a beaded doorway cushions on the floor dinner in the living room wind chimes on the balcony family 
- they get a cat that they name bisgatto (he’s an adopted black cat)
- they both have sensory issues and go shopping for like linens and stuff together to make sure they can both use what they buy (eventually they get so familiar with each other’s needs and will be like ‘nico/will would love this’ and stuff) 
- back to the koala thing; they always wake up completely wrapped around each other; will always gets up first bc he wakes up really early and while he’s making coffee nico will come into the room and just climb up him and hold on 
- eventually their smells (will smells like citrus and nico smells like earth) turn into one smell (because they’re a family) (nico still wears wills clothes)

Comida Criolla & Fusion Restaurants

Sofrito is a powerful base ingredient in Puerto Rican and most Caribbean cuisine. It's a flavorful pureed paste that, in Puerto Rico, is made with peppers, ají dulce and cubanelle, culantro, cilantro, garlic, onions, salt, and oregano. Chop the ingredients, put them in a food processor, and blend until it forms a paste. This condiment is used to make soups, stews like sancocho and carne guisada, and even rice and beans.
So, how do sofrito, sancocho, and carne guisada connect with comida criolla? The cooking method was brought to the Americas by Spanish conquistadores during colonization. Its European origins, along with African and indigenous roots, help to make Puerto Rico's comida a beautiful and savory mixture of its history and heritage.
Chef Joel Devariel has been the executive chef at Casa Miramar, a restaurant located in the Miramar neighborhood of San Juan, for two years. Listen as he describes what comida criolla means to him and how dishes like sancocho and carne guisada use locally sourced ingredients to create authentic Puerto Rican creole cuisine that represent the heritage of three cultures (indigenous, African, and Spanish) in one.

Taking pride in their history and not only telling, but, showing its story is one way that fusion restaurants pay their respect. Whether it's a local kiosko or a high-end restaurant, both, and restaurants in between, represent Puerto Rico.

Mi Casita Seafood is a restaurante criollo located in Loíza. It's an outdoor dining restaurant with an ocean view. It's not air conditioned, but it doesn't need to be. Why not? Because every restaurant, building, apartment, condo, or house doesn't have A/C. Its charm and reputation is for being a local restaurant that represents, not only Loíza, but Puerto Rico, and its way of life. Mi Casita Seafood uses locally sourced ingredients and combines it with centuries worth of cooking techniques to produce authentic comida puertorriqueña. Everything on the menu, from crab arepas, to alcapurrias, to seafood stew (asopao), to mofongo relleno, to conch salad, to octupus, lobster, fried whole red snapper, arroz y habichuelas (rice and beans), and dulce de coco (coconut candy) all represent Puerto Rico. Here, mofongo is prepared as a side dish and served two ways: either sweet plantain (amarillos) mofongo or mofongo solo as mentioned in La comida criolla-Creole Food blog post. Although it's a seafood restaurant, the restaurant also offers churrasco (grilled skirt steak), chicken, and much more.

These types of fusion restaurants aren't just in Loíza. They're located throughout the entire island and carry the heart of Puerto Rican cuisine. In San Juan, La Casita Blanca and Casita Miramar are two restaurants, built decades apart, that offer two different approaches to creating and serving authentic comida criolla. Both restaurants, owned by the same family, serve comida criolla of varying styles in distinct locations.
La Casita Blanca is located on Calle Tapia in the Villa Palmeras neighborhood of San Juan. The restaurant is a white, renovated house that is a symbol of respect for the working class where everyone is treated like someone. It's a neighborhood restaurant where local neighborhood people can go and be served. It's accessible to everyone, regardless of their status, and is a sign of humble beginnings.

Like, Mi Casita Seafood, it doesn't have A/C, but, it does offer indoor seating. As with many dwellings in Puerto Rico, multiple opened windows provide a cross ventilation system for the restaurant. The menu is on a chalk or dry erase board that sits on an easel. The easel is brought to each table once the guests have been seated. Don't let the design fool you. La Casita Blanca is consistently rated as one of the top Puerto Rican restaurants on the island. It serves mouthwatering foods that celebrate each of the three cultures that have formed comida criolla like mamposteado or arepas de coco rellenos con bacalao (coconut arepas stuffed with codfish) which are featured below.

Remaining true to its founder's vision and honoring Puerto Rican heritage, Casita Miramar represents an elegant twist on comida criolla. Although served on fine dinnerware, appetizers like buñelos, entrées such as fricase de pollo (chicken stew) served with rice and red beans and tres leches cake with a coquito sauce, represent the best of what the island has to offer.

Instead of serving bread, bacalaitos and a house soup, seasoned with a sofrito base, are served at each location. Their presentation may differ, such as the case with the bacalaitos pictured below (La Casita Blanca on the left and Casita Miramar on the right), but the taste is 100% criollo.

La Casita Blanca teaches history and Casita Miramar teaches colonial history. Although their design, decoration, and menus have differences, their similarities are in showing courtesy, offering exceptional service, and incorporating bold flavors that use ingredients and products grown in Puerto Rico by local farmers.Mi Casita Seafood is Loíza and La Casita Blanca is Villa Palmeras. Both are an external representation of their respective neighborhood and town. Regardless of its location, each offers comida criolla.
In the audio clip below, Chef Devariel and Sr. Jesús Pérez de León characterize La Casita Blanca and Casita Miramar, the role they play in fusion restaurants, and the influence of African origins in criollo cuisine and Puerto Rican culture:
One dish that's served at Casita Miramar that, at first, may seem out of place, but, indeed, belongs on the menu is pegao. It's a "repurposed" dish that's cherished by many. Instead of throwing out the leftover rice that's stuck to the bottom and sides of the pot, pegao uses it to create a new dish where the rice is on covered with habichuelas blancas (white beans). This creates a crunchy yet soft comfort meal that's familiar to Puerto Ricans.

Pegao is another great example of comida criolla because it incorporates elements across multiple cultures. Not only is it a Puerto Rican dish, but it's also a Dominican dish known as concón in Santo Domingo, The Dominican Republic.
There's no mistake that pegao and concón share similarities. Both Puerto Rico and the Dominican Republic were former Spanish colonies that saw the decimation of indigenous populations and the increase in the African slave trade. Taking into account its history and the use of shared ingredients like yuca and plantain, pegao and concón could serve as the future of criollo cuisine. Although Puerto Rican comida criolla is known to represent three cultures-in-one, its future may look different as Dominican immigration to the island increases. Could the influence of Dominican cuisine, cooking methods, and culture form a new comida criolla that represents four cultures-in-one?

Potaje de Berros
Es el potaje por excelencia en los tiempos fríos y un plato muy consumido en la isla de Gran Canaria, formando parte de la dieta habitual de muchas familias. Suele comerse como primer plato del menú, aunque dado su alto componente alimenticio, también puede ser plato único.
RECETA 1 (DE LA FAMILIA QUINTANA DE LAS LAGUNETAS, SAN MATEO, GRAN CANARIA)
INGREDIENTES
Todas las cantidades que a continuación se van a exponer son aproximativas y dependen del gusto de cada casa.
500 gr de berros. 2 puñados de judías pintas frescas. 1 cebolla, cortada en cuatro trozos. 1 trozo de calabaza, cortado en tres. 1 calabacín mediano, cortado en trozos pequeños. 1 batata blanca, chica, cortada en trozos pequeños. 1 batata amarilla, chica, cortada en trozos pequeños. 1 trozo de ñame, cortado en trozos pequeños. 1 zanahoria grande, de la tierra, cortada en trozos pequeños. 2 papas medianas, cortadas en trozos pequeños. 2 piñas de millo, cortadas en tres o cuatro trozos cada una. 1 trozo de carde de cerdo entreverado. 1 trozo de chorizo cortado en rodajas. 2 ó 3 dientes de ajo, pelados y enteros. 1 cucharadita de pimentón dulce. 1 cucharadita de colorante alimenticio (le da buen color al potaje). Un chorrito de aceite de oliva Sal al gusto

PREPARACIÓN
Este no es el típico plato que se pueda improvisar, ya que, para hacerlo, desde la noche anterior hay que dejar las judías pintas en remojo, si no son frescas.
Ponemos en un caldero los berros bien picados, las judías, la carne de cerdo entera, el chorizo y los trozos de la piña de millo. Todo esto lo dejamos guisar bien y luego añadimos el resto de los ingredientes, lo llevamos a ebullición, bajamos el fuego casi al mínimo y a fuego lento lo dejamos otro ratito hasta que todos los ingredientes se integren y queden bien cocinados, esto se puede comprobar pinchando las zanahorias con un tenedor. Luego se aparta del fuego y se deja enfriar. Con la batidora de mano, en un recipiente aparte, trituramos la cebolla y la calabaza, así apotajará mejor nuestro caldo de berros, se deja reposar un poco, antes de servirlo.
Si hacemos el potaje de berros en la olla exprés, ponemos todos los ingredientes a la vez, dejamos que suba el vapor, y bajamos la olla a fuego suave durante 20 minutos, lo dejamos reposar antes de servir.
Si nos sobra una buena cantidad, lo molemos todo con la batidora de mano, excepto las piñas, y nos quedará un rico puré de berros.
Esto no es más que una de las formas de preparar esta receta, pero puede servir de guía a los que aún no se han aventurado en su elaboración.
Este es un plato que al degustarlo se suele acompañar de una cucharada de gofio, o de gofio escaldado, un buen trozo de queso, que puede ser tierno, semiduro o duro, y si se quiere con un poco de cebolla roja bien cortada y bañada en un chorrito de vinagre.
RECETA 2 (DE DOÑA ROSAURA SANTANA MONTESDEOCA, GÁLDAR)
En un caldero con agua se ponen las judías a fuego lento. Cuando estén casi guisadas se va preparando en una sartén una fritura con cebolla, tomate, pimiento y ajo. Al rato se añade la piña, la sal y el ñame (pelado y limpio con un paño, pues si se lava se pone duro). Cuando el ñame esté blando se incorporan las papas y los berros juntos. Se sacan unas pocas papas con ñame y algunas judías, se escachan con un tenedor y se vuelven a introducir en el caldo para que se apotaje.
Doña Rosaura sirve un plato de sardinas fritas para acompañar este sencillo y gustoso potaje.
Otra manera de prepararlo es haciendo inicialmente un sofrito con la cebolla, el tomate, el pimiento, los ajos y un chorrito de aceite en el propio caldero en el que se hará el potaje. Cuando esté todo bien doradito se le añade el agua y un puñadito de sal. Una vez que el agua comience a hervir se agregan los berros picados y la piña de millo, de manera opcional, hay quien pone zanahoria, habichuelas, calabaza, calabacines y ñame, todo troceado. Posteriormente se agregan las papas y el azafrán, si se quiere.
Como se puede ver hay diferencias sustanciales entre estas recetas, no solo en cuestiones como la elaboración, sino que también prescinde esta última de la carne de cerdo.
RECETA 3
INGREDIENTES
500 gr de berros 250 gr de judías pintas 500 gr de papas 250 gr de carne de cochino salada (opcional) 1 piña de millo 1 cebolla 1 tomate 2 o 3 dientes de ajo 1 pimiento verde Azafrán Aceite Sal
PREPARACIÓN
Este no es el típico plato que se pueda improvisar, ya que, para hacerlo, desde la noche anterior hay que dejar las judías de remojo al igual que la carne, pero en recipientes diferentes, siempre y cuando vayamos a utilizar esos ingredientes; hay familias que al potaje de berros no le ponen carne.
Al siguiente día se ponen las judías al fuego en un caldero con agua «espantándolas» con agua fría cuando comiencen a hervir.
Luego se añade al caldero los berros bien picados, la carne también troceada y la piña, que se suele cortar en rodajas, e incluso desgranar en algunos casos.
Todo esto lo dejamos guisar bien y luego añadimos las papas, partidas en trozos no muy pequeños para que no se deshagan. Junto con esto vertimos en el caldero la cebolla, el pimiento y el tomate bien cortado y preparado. Por último, añadimos los dientes de ajo majados o laminados, junto con un chorrito de aceite y un poco de azafrán y de sal para dar gusto.
Lo dejamos al fuego otro ratito hasta que todos los ingredientes estén bien cocinados, esto se puede comprobar pinchando los berros o las papas con el tenedor. Luego se aparta del fuego y se deja reposar un poco antes de servirlo.

So excited to have a New York Dominican Bodega in Lincoln Park , yes the real deal over half the products straight outta New York.  Authentic Dominican food counter with a few tables to eat inside,  spotless clean and restrooms too. We visited twice since opening 2 weeks ago,  always very busy.  Saturday a line at the food counter non stop for the hour we visited.  A young Dominican family husband n wife team with brother and auntie plating up food from the homeland.  All customers Dominican we only gringos in the place both visits,  telling you this place is an instant hit. First visit had Empanadas, one each Pollo,  Queso and Pizza filled outstanding,  along with Bistec Encebollado a bed of Arroz Blanco be Steak on Rice. Market is filled with 3 aisles of products not found in Michigan,  cooler with Meats and Cheeses.  I bought a fantastic Colombian Chorizo with an explosion of flavor cooked at home.  On My Saturday visit I took my own plate to fill for 2 of us to eat,  just look at the photos OMG marvelous unique food.
