TL;DR — Prince Street Pizza squares are the 💣 Do you prefer corner or edge slices? ¶ The other day I joined @SeanTaylorUS in his #31DaysOfPizza project, which he’s been doing every year in October (#NationalPizzaMonth) SINCE 2002. 🙌 Sean’s goal is to eat at least one slice 🍕 from a different pizzeria each day, with at least one guest/friend/person. ¶ We met at #PrinceStreetPizza, where THE move is to go for one of their square slices. Any other pizzeria, we’d all be raving about their regular round #pizza, which is really quite good, actually, but the squares so eclipse it that if you’re having only one slice, which I was, you’d be a moron not to rock the rectangle. ¶ Sean ordered one each of the “Prince Perfection” (plain Sicilian) and the “Spicy Spring” (fra diavolo sauce and oodles of pepperoni). ¶ I had a #lightmeals vibe that day so I went with a single Prince Perfection—just cheese and sauce. But this is CRUCIAL: I asked for an edge slice. Not a corner. ¶ We waited, staked out a place at one of the ledges, and shot the breeze. I explained how I’d transitioned over the years from a corner connoisseur to an edgier guy. On pies like Prince Street’s, with a relatively thick border, you just get too much naked crust. I’m not even one of these economy-of-pizza dudes calculating square-inch coverage of cheese and sauce, I just want more balance. ¶ They called Sean’s order, he grabbed it, and we kept chatting while we waited for mine.… ¶ “Plain Sicilian!” ¶ Aha! … But … the woman behind me in line grabbed it before I could swim through the crowd to the counter. ¶ No biggie. I’ll just wait for the next… ¶ “And another plain Sicilian!” ¶ I stepped up to grab… UGH. Lady, you nabbed my edge slice! ¶ But, again, no biggie. Reframe the situation is what I did. This was a chance to try a corner slice again and evaluate whether I really did prefer edges. ¶ And, yes. Yes, I do. ¶ How ‘bout you? Corner or edge? My daughter became friends almost instantly with a little girl at her table in Kindergarten and has been talking about inviting her over almost since the first day of school. “Maybe she can come over to play and Papa can make us pizza.” ¶ Today was their first play date. And Papa made them pizza—a New York–Sicilian style plain pie based on thr @kenjilopezalt recipe on @SeriousEats. ¶ I bought a black steel pan at Bari Restaurant & Pizza Equipment earlier in the week in anticipation. It yielded THE BEST result yet for me with this style and recipe. My other secret weapon is the fact that I give my Baking Steel a good long preheat at 550°F to really jumpstart the bake and make sure the thick crust gets good oven spring and cooks through properly. ¶ Margot gave it “4 thumbs up,” her highest rating. ¶

One more pizza from Sunday’s #PizzaAdventure in Coney Island. Pro tip: with a crowd, you always have to weight the order heavily in favor of plain pies, and you want to figure at least 2 slices per person. Six people then equals 12 slices, and the only way to get that is with two pies (8 slices per pie times 2 equals 16.) That said, with Kindergarteners you could probably factor in 1.5 slices per child. Still, with our pizza group, that would have put us at 9 slices, so… Always best to over-order and bring some home, right?! OF COURSE I’M RIGHT! So we did 50% of our total pizza allotment as plain (see my previous pic), 25% mushroom, and 25% pepperoni. This then, obviously, is a half-mushroom, half-pepperoni pizza. All that said, I probably committed the amateur move of asking two 5-year-olds what they wanted on the non-plain pie. (NB: I only recently learned what an “own goal” is. See also: unforced error.) Luckily, they both piped up “MUSHROOM” in unison. Oh, remember what I said about bringing extras home? Well, you should also consider what you’re doing AFTER pizza, because you don’t want to have to carry the box around all day — no one yet has solved the issue of having to carry pizza flat. To avoid this, I powered through more slices than I probably should have eaten, leaving only one slice on the battlefield. ¶ Anyway. Took advantage of the beautiful day today to get out to Coney Island for a #PizzaAdventure. This time we went with one of Margot's neighbor friends and her mom, neither of whom had been to Totonno's. It's always fun to introduce people to great pizza and great pizza experiences. Afterward we went to the boardwalk and rode a bunch of kiddie rides. #hastalapizza #😊🍕✌️

Here’s a pizza we were just goofin’ around with after we’d wrapped up with one of our monthly pizza pop-ups at our host restaurant, EMILY. It’s got pickled jalapeños and banana peppers along with a swirl of ranch dressing. This eventually morphed into our Ranchero pie, which omits the banana peppers.

This is what we’ve named the “Collaboroni.” It’s a testament to the unique relationship with have with the folks at EMILY, the Brooklyn restaurant that hosts our pop-ups once a month. EMILY has on its menu a pizza called the Colony, which features pepperoni, pickled jalapeños, and a drizzle of post-oven honey. The Collaboroni is basically that same toppings combo on a Margot’s Pizza bar pie chassis. It’s a Margot’s X Emily collabo, hence COLLABORONI. You get the picture. 😊🍕✌️

I used to talk shit on pizza tossing, but that was coming from a place of ignorance. As I learned to make pizza in a commercial setting, I realized there are many ways to stretch dough and that tossing isn’t really going to do anything adverse to the final product. Plus, the dough acrobatics is just a fun tangential aspect to the big pizza tradeshows. (And, yes, I know that these tossing competitions are done with synthetic dough.) Blah blah blah. Hasta la pizza.

Been meaning to get to this Upper East Side (relative) newcomer, Marinara Pizza, for a while now. It caught my eye when I saw a photo of its Sicilian pepperoni pizza on its website. Then the other day I put two and two together and realized it’s a relatively short trip via the Second Avenue subway extension from my office. So now I can say I’ve traveled the entirety of the new spur, having visited 63rd/Lex, 72nd St, and 86th over the last few weeks for nonpizza activities. ¶
  It’s a good slice. Airy and light but crisp and sturdy enough to hold an ample amount of cheese, which seems to be laid down directly on the dough, the way L&B Spumoni Gardens does, giving it that oddly satisfying springy-gummy chew where the cheese has melted into, and become one with, the dough. The sauce was just ever so slightly sweet, which worked well as a foil for the salty pepperoni. Good stuff. I can see why the early online reviews are good. ¶ #hastalapizza 😊🍕✌️
