Imagine walking into a buzzing classrom filled with anticipation, as grade 12 students from different sections prepare to unveil their extraordinary projects! As you navigate through the sea of innovative displays, your eyes are drawn to a striking rack adorned with vibrant greenery. It's not just an ordinary rack, but a magnificent creation that cleverly combines functionality and eco-consciousness. This ingenious contraption has the ability to care for its leafy inhabitants by providing them with water precisely when they need it, ensuring their growth and vitality.
The students have transformed a simple rack into a living, breathing work of art. The project involving a pen ink made from kamote (sweet potato) is also intriguing. It's impressive how these students are thinking outside the box and finding alternative resources for everyday items. It's clear that the presenters put a lot of effort into their projects, and their passion for their work is evident. They understood the pressing need for sustainable solutions and had taken it upon themselves to address it head-on. By utilizing recyclable materials, they were not only reducing waste but also proving that beauty and functionality can arise from unexpected sources.
These types of experiences can be truly inspiring, as they demonstrate the power of dedication, innovation, and the impact that even small-scale projects can have on society.

Merienda: Halo-halo
Tumblr media
Halo-halo is the best way to beat the heat. In the scorching afternoons under the sun, I grew up buying halo-halo from the friendly manang that sells these for at least 15 pesos. As I’m walking home, I usually look for the cup with the most ube or leche flan atop—it's a competition when I get home for who gets the most of these. Sometimes, these are even sold on campus and I would usually ask the ate to add lots of leche flan and ube.
Halo-halo is not to be confused with Beyonce’s lyrics. It comes from the Filipino word “halo” meaning mix. It is technically a dessert, but can be eaten on its own as a merienda. Halo-halo contains different ingredients like jelly, pinipig (flattened rice), nata de coco (coconut gel), munggo (sweet beans), bananas, langka (jackfruit), corn, kamote (sweet potato), macapuno (coconut sport) and buko (coconut). It varies from every vendor and sometimes you can ask the manang nicely to customize your order. (I usually ask to take the pinipig and munggo out.) It is topped with shaved ice, evaporated milk, and ube or leche flan. You can see these being sold on the streets or even in famous fast food places. Some vendors also offer Mais con Yelo or Saging con Yelo which are other shaved ice delicacies in the Philippines. Going by its name, you have to mix it first!
Halo-halo originates from the Japanese occupation when they introduced Kakigori, a Japanese shaved ice dessert, to the country. Other similar Japanese shaved ice desserts are the Mitsumame and Mongo con Hielo. There was a limited supply of ice in the country until the Americans came and built the Insular Ice Plant. Japanese settlers saw this as a way to earn money in the city, popularizing kakigori or better called mong-ya as they added monggo, red, and kidney beans. After the Japanese occupation, Filipinos started to twist this dessert to their own tastes by adding more native ingredients like ube and thus, the birth of halo-halo. In Asia, there are other similar desserts like the Ais Kachang in Singapore, Cha  Ba  Mau in Vietnam, Bingsu in South Korea, and Nam Keng Sai in Thailand.
Like its root word, halo-halo is a mix of all the shared cultures we share from countries around the world, especially those near us. It proves that our history can also be tied with other cultures, forming a diverse country we live in. We halo or integrate bits and pieces of other cultures and add it to our own. As colorful the halo-halo can be, so is our history. The next time I order halo-halo, I’ll remember to remain open and welcoming as well as to be resourceful of these learnings I pick up from others.

Lunch. I ate half already. Boiled fish with ginger, white Gabi (a type of taro root crop), kamote (sweet potato), some okra and string beans, as little salt. Simple, healthy, great for the abs and overall fitness. https://www.instagram.com/p/ClsfYwfPl1D/?igshid=NGJjMDIxMWI=

Supply Chain Brief: Food BLUF: Butter prices hike while rice, turkey, and tomatoes see quality and availability disruptions (and price increases). Manpower constraints in manufacturering and trucking industries have partly added to a shortage of some dairy products while increased prices have been seen in butter. Butter prices are up 26.6% from this time last year while butter cold storages are down 18%. Butter prices are up due to an undersupply of milk (which typically sees an annual oversupply to be used in churning for butter). Drought conditions and avian-flu-forced-cullings have led to a shortages of turkey, chicken, potatoes, rice, wheat, and tomatoes. Lawmakers have begun urging the U.S. Department of Agriculture (USDA) to substitute and promote kamote or sweet potatoes as alternatives to rice amid a growing concern for rice availability. India earlier banned exports of certain forms of wheat and rice and added a 20% export fee to other forms of rice. According to Food and Agriculture Organization (FAO) groundwater sources rice cultivation increased by 10% since 1993, meaning rice supplies are more reliant on groundwater sources, this while groundwater crops in India, and globally see decreased water stability and loss of rice production. Rice has become a global fallback food source as wheat supply decreases, in-part due to the war in Ukraine. Japan has begun using rice flour as an alternative to wheat. As more countries look to rice, the available and price of rice are disrupted. Debrief: Conspiracy theorists and some legitimate news editorials have pointed to a 2015 "war game" titled "Food Chain Reaction: A Global Food Security Game" in which the games and study theorized that in 2020 the "world’s food system" would be "under increasing stress" due to "extreme weather and political conflict" that "undermines food production" and creates shortages, prices increases, and social unrest. The games found that such a scenario would cause "instability and volatility" to be the "new normal and both are inevitably linked to food secur...(CLASSIFIED, see more at www.graymanbriefing.com)

Q is for Kamote Q! Kamote cue is sliced sweet potato that is deep fried with sugar... coating the timeless root crop delicacy in a shell of caramelized sugar. It is then skewered on a stick for easy enjoyment. Possibly nicknamed after sticks of barbecue, kamote cue is one of the most common street food snacks in the country, next to banana cue! What other popular snacks sold by vendors do you enjoy? Know any vegetable dishes that start with the letter “Q”? Artprint: https://society6.com/product/q-is-for-kamote-q_print
