Takasugi - Lantern Flowers: Latern flowers are often given as offerings to help guide the souls of the dead during Obon and Takasugi was drawn with them in the Pride Kakumei opening which I felt ties in a lot to his journey throughout the series.
Bansai - Periwrinkle: I think the Kiheitai in general is kind of heavily defined by their loyalty/feelings toward Takasugi so I chose periwrinkles which represent faithfulness and trust for Bansai, since he seems to have an absolute loyalty and trust towards Takasugi.
Matako - Carnation: Similarly for Matako, I chose carnations because they represent love and fascination and are also a gift typically given on Mother's day. I feel the combination of all of those attributes tied in well towards to Matako's feelings toward Takasugi.

Just randomly had thoughts about Naraku Bansai this morning and the implications are devastating. I'm very tempted to write something for it

Shinsuke and Bansai's relationship is one of a kind among all the commander-vice relationships in Gintama.
All the other commander-vice pairs have a certain kind of power imbalance where they started: Kondo saved Hijikata from the streets, Kamui was raised by Abuto, Isaburo raised Nobume, Tatsuma was Mutsu's captive, Utsuro is an immortal who gave the mortal Oboro his blood.
Shinsuke and Bansai were equals. they were both wanted criminals on the run, brought together by being instant partners in crime. Neither had more power than the other; neither really "inspired" the other in a way that fundamentally changed their worldview like for most of the other pairs above, although Shinsuke and Bansai obviously changed each other. Neither felt indebted to the other.
Interestingly, you'd also notice how it's never explicitly stated that Bansai is the vice to Shinsuke's commander. Hijikata, Nobume, Abuto and Mutsu are explicitly the vices of their respective organizations, but not Bansai. In fact, one chapter from the Class 3-Z novels has Bansai and Shinsuke being co-leaders and co-producers. It's not outrageous to fathom, that they might also in fact be co-leaders in the series proper.
