cinnamon rolls i'm gonna type out because my printed copy is a mess by now
Ingredients:
(makes 1 9x13" pan/12 cinnamon rolls)
---DOUGH---
1.25 teaspoons active dry yeast
3/4 cup/6 fluid ounces/170 grams warm water
0.25 teaspoon sugar
1/2 cup/4 fluid ounces/113 grams warm milk (doesn't need to be super warm if the water's hot enough and you mix them together before adding)
1.5 teaspoons honey
2 tablespoons/1 fluid ounce/30 grams vegetable oil
1.25 teaspoons salt
about 4 cups/16 ounces/480 grams flour, plus more as needed
---FILLING---
1 tablespoon cinnamon
1/2 cup/3.75 ounces/105 grams brown sugar
2 tablespoons/1 ounce/28 grams butter, melted
about 1 tablespoon/0.5 ounce/14 grams butter, softened
Instructions:
Mix together yeast, water, sugar, milk, honey, and vegetable oil. Set aside for a bit to let the yeast activate. Add in 3 cups/12 ounces/360 grams flour, pour salt in on top of flour. Mix with a spoon/dough hook if you have a stand mixer (or your hands if you're good getting messy) until cohesive. Continue kneading, adding more flour as needed, until dough is smooth, soft, and only slightly sticky. Place in a greased bowl, cover, and set in a warm place to rise until doubled.
Ideal temperature for this is about 80-85 degrees Fahrenheit, but it's not too picky. It'll take up to several hours if it's on the cold side, closer to an hour if it's warm.
When dough is just about ready, mix together cinnamon and brown sugar in a small bowl. Make sure the butter's melted and ready.
Turn out the dough onto an oiled countertop or rolling mat. Stretch, pat, or roll into a 12x16 rectangle. (I never really need a rolling pin for this, it should be pretty soft and relaxed.) (The rectangle can be longer, for taller cinnamon rolls, or taller, for thinner spirals. You pick!)
Brush/pour/smear melted butter onto the dough, making sure to get all the edges and corners. Sprinkle cinnamon sugar mixture onto dough evenly, leaving one edge with about 1/2" free. Starting at this edge, roll dough up into a tight cylinder.
Using a sharp serrated knife (preferred) or floss/thread, cut or garrote the cylinder into 12 rolls. You can do more if you like mini and short rolls, or less if you want gargantuans, but it might affect the cooking time.
Using the softened butter, grease a 9x13" pan. Place rolls in a 3x4 grid in the pan. Cover and let rise until puffy. Preheat oven to 375 degrees Fahrenheit.
Once rolls are puffy, bake them in the preheated oven for 30 minutes. (Underbake by maybe 5 minutes if you plan to reheat them for later service.)
Cool in pan.
OPTIONAL CREAM CHEESE TOPPING:
(makes idk how much, this recipe lives only in my head and is based purely on vibes)
Get some cream cheese out, maybe 1/3 to 1/2 what you want the final volume of the frosting to be. Also, about a quarter as much butter as there is cream cheese. Let 'em sit on the counter until they're softened. You can make this with them straight from the fridge but it's a lot harder on your hand/eggbeater/mixer.
Cream together butter and sugar until they're smooth and spreadable. Add in some orange zest (maybe 1/2 teaspoon? depends how much you like oranges) and vanilla extract (measure with your heart <3).
Shake in some powdered sugar? how much? beats me (ayoo). start with maybe 1/3 cup (about 40 grams), beat that in, taste it and see how you like it. I probably end up with about 1 cup total, but I cannot stress enough how much I have not kept track.
Beat in a little milk if you want the frosting to be thinner. Probably about 2 tablespoons. If you want it real thick, disregard. Keep in mind it'll stiffen if stored in the fridge, and get runnier if heated up (such as when being put on a warm cinnamon roll).
Taste the frosting. Add more of whatever you think it needs. Taste it again, just to make sure. maybe a third time just to double-check --okay nope that's probably enough tasting, time to actually use it.
Top a cinnamon roll with frosting! last time i ended up with about 30 grams per cinnamon roll (so about 360 grams of frosting in total)

i think a lot about that one scene in botl where nico summons theseus and percy's surprised that he doesn't look all buff and strong - that he looks just like them, and not even older in age. he expects theseus to be prepared, to look experienced, but instead he gets someone who's a frightening image of the average demigod, and it's scary. it's a reminder of how things, no matter how shrouded in legend, haven't really changed. it's the same formula, the same pawns, and the same game.
