Nowadays, potlucks are more associated with a specific style of party where everyone is asked to bring a dish for the group to share. But in the 1960’s, Helen Corbitt’s idea of a potluck was a little different. As the much lauded and much loved Director of Restaurants at Neiman-Marcus for twenty years, Helen’s version of potluck was simply making a meal for yourself using what you already had on hand in your fridge. To her it was a style of cooking that highlighted creativity in the kitchen, cut down on food waste and encouraged more adventurous eating habits. It also featured just a few simple, everyday ingredients that were quick to throw together, sophisticated in flavor and visually appealing. When she moved to Texas to start her retail job, she introduced potluck on the menu in the Zodiac Room at Neiman Marcus. It became such a popular restaurant offering that she wrote an entire cookbook in 1962 featuring only her most favorite potluck recipes. As it turns out, that was a pretty lucky style of cooking for Helen. The restaurant still uses many of her recipes to this day! What's the food that you always keep in your fridge? Foods, beverages, or condiments you are never without... I'm curious to know! ------------------------------------------------------ Do you want to know mine? ------------------------------------------------------ Surprisingly they are strawberries and blueberries or raspberries! Well yes. They stay in the fridge for days, I buy them every week and I always keep them available in the fridge. They are a healthy snack, which hydrates me and always satisfies me, and I never get bored. It will be because of their colors so inviting or it will be because of the belief that they do really good for my health! My portion sizes are 45 grams of blueberries/raspberries and maximum 100 grams of strawberries at a time. I fill up my body with vitamin C, antioxidants and fibers (3 grams of dietary fiber with only this portion size)! ------------------------------------------------------ Strawberries are considered a super food mainly because of their high concentration of ellagic acid! Also, blueberries are rich in this phenolic constituent that is believed to be a powerful antioxidant, anti-inflammatory, antidiabetic, cardioprotective, neuroprotective, and prebiotic element. ----------------------------------- Here it is my go-to healthy snack, plenty of micronutrients and dietary fiber!
