Okay so hear me out…
I was asking myself: why China? What's the matter with this particular country that makes Ed pick it without missing a beat?
They need a refuge, which should be far away, yet reachable by ship. Fair. But there are many countries fulfilling these requirements. Why China?
And then it hit me.
What is China famous for? Or was, back in the days?
Fine fabrics, colourful garments and expensive silk. They used to trade those to the west, thus forming the historically Silk Road, which spanned almost the entire Asian continent.
Ed is a well-travelled man. He has heard of China's silk for sure, maybe he has even seen it first-hand, once or twice.
When he freely dreams of a life with Stede, and is looking for a place to start anew, he immediately suggests China.
Why?
Not only because it's far away. But because it's a country that is just as colourful as Stede and on top of that it is defined by the one thing that had been their secret connection from the start. Fine things.

↳ @firestarsandseneschals asked Ginny Weasley or Hermione Granger
"Three Dementor attacks in a week, and all Romilda Vane does is ask me if it’s true you’ve got a Hippogriff tattooed across your chest."
Ron and Hermione both roared with laughter. Harry ignored them. "What did you tell her?"
“I told her it's a Hungarian Horntail," said Ginny, turning a page of the newspaper idly. "Much more macho."
“Thanks," said Harry, grinning. "And what did you tell her Ron’s got?"
“A Pygmy Puff, but I didn’t say where.”

Time did reverse. The teacup that I shattered did come together. The place was made for Abigail in your world. Do you understand? That place was made for all of us, together. I wanted to surprise you. And you, you wanted to surprise me. I let you know me. See me. I gave you a rare gift. But you didn't want it. – Didn't I? – You would deny me my life. – No. No. Not your life, no. – My freedom then. You would take that from me. Confine me to a prison cell. Do you believe you could change me, the way I've changed you? – I already did. – Fate and circumstance have returned us to this moment when the teacup shatters. I forgive you, Will. Will you forgive me?
