Best Sugar Cookie Recipe Ever
These cookies are the perfect Christmas(or any other holiday) cookie for decorating. They are soft and delicious, and hold their shape perfectly. I will post how I decorated them in another post. Here is a picture:

Recipe:
Makes: about 2 dozen large cookies
Prep: 20 minutes
Baking: 8 minutes
Total time: 28 minutes
Ingredients:
2 sticks Butter softened
1 cup Sugar
1 tablespoon Vanilla extract
2 teaspoons Baking powder
1/4 teaspoon Salt
3 cups Flour
Directions:
Cream together butter and sugar
Add in vanilla, baking powder, and salt. Mix until fully incorporated.
Mix in flour 1 cup at a time. If you are using an electric mixer(or your hands), your mixture should look sort of sandy, and the biggest chunks should be around pea-sized. If you are using a spatula, your mixture should be a big smooth lump of dough.
Roll out onto floured surface. You may only want to roll out about half of the dough if your surface is small. Roll to desired thickness(I do 1/4 inch). Cut out and move to baking sheet lined with parchment paper.
Bake for 6-8 minutes at 350, or until golden brown on the bottom.
Tips:
Softened butter should be room temperature, or cold enough that it feels cold to the touch, but you can press your fingers in with minimal pressure. If you try to make this with melted or hot butter, the cookies will not hold together.
Make sure the surface is very floured, the dough will stick to a counter very easily.
These cookies are VERY easy to overcook. I have made many batches or dry sugar cookies in my life, and it is not fun. To make sure that you cookies are not over cooked, after about 6 minutes, check the bottom of a cookie with a spatula. If it is golden brown, it's done. If it looks the same color as the top of the cookie, leave it in for another minute or so. If it is any darker than golden, take it out immediately and move the cookies to a cooling rack. If you are really worried about your cookies overcooking, you can take out same color as the top cookies and leave them covered with foil on the baking sheet until they cool, the heat from the tray will finish baking the cookies.

First Holiday Recipe of 2020!

These peppermint meringue cookies are delicious and pretty(if you do it right)
RECIPE:
Peppermint Meringues.
Prep Time: 15 minutes
Cook Time: 1 hour 30 minutes
Cooling Time: 1 hour
Total Time2 hours 45 minutes
Makes: 15 cookied
Ingredients:
2 egg whites
⅛ tsp. salt
⅛ tsp. cream of tartar
½ cup sugar
2 peppermint candy canes, crushed
Instructions:
In a mixing bowl, beat egg whites on high speed until very foamy. Sprinkle with the salt and cream of tartar; beat until medium-soft peaks form. Gradually(very slowly) add sugar, beating until stiff peaks form, about 7-8 minutes.
Drop by teaspoonfuls onto ungreased foil-lined baking sheets. Sprinkle with crushed candy. Bake at 225°F for 80 minutes.
Turn off the oven heat and leave cookies in the oven with the door slightly ajar for at least an hour or until the cookies cool.
Store in an airtight container
Tips:
It is VERY easy to mess up a meringue. Beating for too long, adding the sugar too fast, or beating a lower speed, can all ruin your meringue.
Fear not! If you over-mix and your mixture is too watery, you can beat it for about 20 more minutes. It will not reach the best consistency for these cookies, but they will still bake nicely.
For an extra peppermint flavor, add a few drops of peppermint extract to the eggs in step one.
Step three is not necessarily the most important, I took mine out of the oven after about 15 minutes and left them on the baking sheet until they were cool(about 5 minutes)

My mother has a severe nut allergy, so all my recipes will be nut free
I have many friends and family with organic, gluten free, dairy free, vegan, etc diets, so I try to make a lot of those recipes too
