This is a super authentic, spicy, tangy, traditional South Indian recipe. There is a variation of this recipe all over Southern part of India. Pavakkai kadalai Ellu curry Recipe: - Bitter melon and garbanzo cooked in Tamarind, along w roasted and ground lentils, Sesame seeds. Dry Roast & grind and kept aside: Dry roast 3 Tblsps each of Channa dal, Urud dal, Coriander seeds, Curry leaves, 3 tsps whole Black pepper, 10-12 Whole red chilies. Fry roast and grind and keep aside 2 Tblsp black sesame seeds to be added in the end. Cutie orange size Tamarind, soaked in hot water and blended, strained and kept aside. If you are using paste, add 4 heaped Tblsps of the paste along w 3 cups water. 3 medium size Pavakkai/Bitter melon, deseeded cut in cubes of half moon, I added a can of garbanzo, just for a variation. You can add a cup of cooked peanuts if you want. In a deep sauté pan, add 5 Tblsps of Oil. Traditionally they add Coconut oil in Kerala and Peanut oil in Karnataka. I added Sesame oil. 1 tsp mustard seeds, once it splutters add, curry leaves, 3 broken red chilies snd 5 slit green chilies, salt, turmeric, hing. Add the cut butter melon and the cooked garbanzo, sauté until the butter melon is soft to touch, now add the tamarind extract and Jaggery. Let it cook and thicken a bit, approximately 10 min. In medium high heat. Reduce the heat to medium and add the ground lentil mixture. Mix well to avoid forming lumps. If it becomes too thick fast add a cup more of warm water to the mixture snd mix well. Let it cook well until the oil starts to float on top. Check the seasoning and adjust if need be. Now, add the ground sesame seeds, mix well and let it cook for a minute and switch off the flame. It’s ready to be served w hot rice, rotis or even Dosa. The tangy, spicy, savory goodness!💕😋The Quintessential part of every South Indian food lover’s craving- ‘Puliyodharai’ #puliyodharai #pulihora made from homemade Pulikachal! All South Indian need to have a dose of Tamarind in any form atleast once it twice a week. If not, please, sorry to say, you can’t consider yourself one! It’s one of the hallmarks of South Indian food is #tamarindrice Recipe: Dry roast & grind: Channa dal, Urud dal, peanuts (yes, I know, believe me, it’s good) fenugreek, coriander, curry leaves, red chilies, sesame seeds, hing & salt- Coarsely ground, cool and store it in a air tight container. Take a key lime size tamarind, soak it in hot water, put it in a blender and pulse it in low, strain it and add some more water to the pulp and squeeze out more water. Save the tamarind water. In a sauté pan, add 1/4 cup of sesame oil, mustard seeds, let it splutter, add Channa dal, peanuts, curry leaves, a couple of broken red Chilli, 3-5 slit Thai Chilli, turmeric, salt, Jaggery and the tamarind water. Let it all cook well and start to thicken. Reduce the flame and sprinkle 2 TBlsp of the ground spice mixture stirring using a whisk continuously so to avoid lumps. Let it thicken and cook until all the oil stars to float. Once it thickens, switch off the flame and let it cool uncovered. Meanwhile, add washed 1 cup of rice to a rice cooker, add 1 & 1/2 of water, add 4 Tblsps of the prepared paste and little bit more salt, mix it well and let it cook. Once the rice is done, transfer it into a bowl and let it cool down fir 20 min covered w a paper towel or a kitchen towel. Now, add more of the tamarind spice paste, mix well, and add more if need be according to your taste. Add a couple of taps of the fry powder and a few Tblsps of sesame oil to the mixed rice. Keep it aside for atleast 20 minutes to set. It’s ready to eat. We just had it w chips! You can store both the fry spice mix and the tamarind mixture for a long time in the refrigerator. A very simple and quick‘Podi potta Sambhar made w tons of veggies and besan/Kadalamaavu/Chickpea flour instead of cooked toor dal. Quick recipe & note: Sauté the veggies (onion, green chili, bell pepper, tomatoes, eggplant, carrot, drumsticks/Moringa) w salt, add turmeric, hing/asafoetida anc Sambhar powder, add Jaggery and tamarind water cook until the veggies are cooked. Add 1&1/2 cup water in a blender w 2 tsp of chickpea flour/besan snd blend it until smooth and add it to the Sambhar. Keep stirring to avoid lumps. Add more water if it becomes to thick, add chopped cilantro and check for seasonings. Adjust if need be and cook for atleast 10 min medium heat until the besan is nicely cooked. Garnish fenugreek, mustard seeds, curry leaves and a red chili. Serve a steamed rice. Crispy Oven Baked Crispy Cauliflower served w tangy Ranch dressing! 😋Recipe: Preheat the oven to 350*F, wash the cauliflower, cut them into florets and pat them dry. In a bowl add, 3/4th cup butter milk, 3 Tblsps Besan/Chick pea flour, 1/4 tsp turmeric, salt, cayenne pepper, black pepper, Ajwain/Carom seeds or Sesame seeds and mix well into a thick batter. Add the cauliflower, mix them well and let it marinate for 20 min. Covered. After 20 min, mix well and if you feel it’s a little watery add more flour. In a separate wide bowl add seasoned bread crumbs. I had home made ones which I had made w left over bread, mixed w a bit of salt, pepper, Parmesan cheese and parsley. Mix the cauliflower well one more time and add the cauliflower one by one in the bread crumbs snd toss them until coated and lie them in a parchment paper lined baking sheet. Bake them for 20 min. Take them out and turn the florets on the other side and bake them for another 10 min. Goes great w any type of tangy spicy sauce. I served it w Ranch dressing since the florets was already spicy! Dinner: Super Nutritious Quinoa Kale salad w dry fruits and nuts tossed w apple cider vinaigrette! This makes a big bowl of salad and can feed a family of 4. Recipe: 2 cups cooked quinoa w salt, 1/3 cup brown rice (Optional), I had some so I added them, 1 cup finely chopped Kale of any greens of your choice, al these to be finely chopped, 1 cucumber, 1 green apple, 1 tomato, 1 shallot, 1 red bell pepper, 1/2 cup cranberries, 1/4 cup sliced almonds, 1/4 cup pumpkin seeds, 1 stick celery, 1/2 cup parsley. Add everything to a big bowl and toss it together w apple cider vinaigrette. Made morekuzhambhu/Buttermilk curry w a variation. It’s a South Indian version of the North Indian ‘Kadi’. Recipe-Wash and cut cucumber or winter melon and boil it in 2 cups water along w a few drumsticks, turmeric, hing/asafoetida, salt and pepper. Grind together, 1 cup of coconut w 7-9 Thai chilies, little curry leaves, 2 Tblsp besan/Chickpea flour w warm water to a smooth paste. Add it to the cooked cucumber, mix well and let it simmer for 7 minutes, add more water if it becomes too thick. The chick pea flour has to cook well. Now add 2 cups of buttermilk. Mix, check for seasonings. Let it cook in low until the mixture starts to rise up and start to bubble. Put off the heat. In a small seasoning pan, add oil, mustard seeds, fenugreek/Methi seeds, curry leaves and 2 broken red Chilli. Once the mustard seed splutters and the Methi seeds turn Holden brown, add it to the morekuzhambhu. It’s ready to be served w hot rice.
