I Tried (And Maybe Perfected?) Food52's Roasted Spaghetti

Someone in a Discord server I’m in (not even a foodie one, just a “hey look at this cursed bullshit” one) recently posted a link to a recipe on Food52 claiming that the best way to make spaghetti is to roast it first. At first, I thought, “Beautiful, just my brand of terrible food crimes, I could kiss you on the mouth.”

But we here at Food Bytes Back are dedicated to saying, “hey, but what if it was more fucked up, but in the most logical way possible?” (Mostly because I can’t just point at a 4-year-old recipe and say “lol.”)

You see, Food52 says that this is the logical next step for those who like the roasty-toasty flavors of roasted vegetables, but to me there’s one thing missing. Roasted vegetables aren’t just thrown in the oven dry, you gotta put some olive oil, salt, and pepper on those bad boys! So I’ve decided to do a little experiment: I’ll do a pan of dry-roasted spaghetti as a control, and a pan of oiled and seasoned spaghetti just to see what happens.

It may also be worth pointing out that I’m using “Thin Spaghetti” here, because that’s what I had. As such, I will still be roasting at Food52’s suggested 350F, but for much less than their suggested 10-15 minutes.

Attempt #1

Ah, shit. I was playing with the cat and got distracted.

Attempt #2

Wow, this stuff really does turn fast, huh. This time around, I did it for 5 minutes, then checked every minute for what would end up being 2 more minutes, and it still went a little darker than I would have liked. But because my impatience (and/or hesitance to just bake off all of my mom’s spaghetti) was getting the better of me, I decided that this would have to be good enough.

If you can’t tell from the picture, the oiled pasta definitely took on more of a fried-looking texture, which is more-or-less what I was looking for.

Alright, now it’s time for a step that Food52 says is optional: Rehydrating the freshly baked pasta. They say you can actually boil it as is, but that it will take longer to cook and just won’t get more cooked than al dente (which sounds like a good thing tbh). But if I’m going full gremlin with this, then I wanna put the spaghets in plastic bags and fill them with water, and let them hang out for a bit (The original recipe says 2 ½ hours, but again, this is thin spaghetti, so I did like 2).

“Gee, Riley,” you say. “The counter’s looking a little wet there, did you not seal the bag all the way?” Listen here, jackass. Don’t fuck with me. I will cry.

Ok, so post-soak there’s still a noticeable difference. The most-roasted of the oiled ones didn’t seem to rehydrate as much as the most-roasted of the plain ones, and the oiled ones in general seem much less flexible than the plain ones. It's almost as if oil and water don't mix or something. Also, the bag water on both is noticeably brown, which makes me think that some of my roasty goodness may have seeped out of the pasta.

The original recipe said that this would cook about the same as “regular pasta,” which I assumed meant dry pasta, but, as it turns out, they meant fresh. Who would have guessed that rehydrated pasta would cook so quickly.

I gotta say, eaten plain, it’s a little disappointing. Only my most burnt noods have any toasty flavor on them at all. Was I supposed to boil it in that bag water? That would have probably helped keep some of that toastiness intact. That being said, even plain, it is a step up from eating regular plain pasta; I wouldn’t call it “toasty” but the flavor is… more concentrated? When paired with one of their serving suggestions, a “no-cook ricotta, parsley and olive oil sauce” (read: ricotta, parsley and olive oil mixed together) it works a little better. The herabciousness of the parsley actually helped bring out some of the nuttiness. (Holy shit… I never thought I would say that parsley actually added something to a dish…)

I don’t know if it’s placebo effect or maybe it’s just because this tray got a little more burnt, but I feel like the toastiness is more present here. And, when eaten plain, there’s a little bit of fruitiness from the olive oil, too. The salt and pepper seem to more or less wash off in the bag water, however. It may also be worth noting that that fried-looking texture I mentioned earlier has translated into a very strange, irregular texture post-boil. It’s possible that the main reason why the original didn’t say to use oil was for the sake of having a more Instagram-able final dish. Said textural deformities are essentially completely covered up by the sauce, however, so it’s basically like they were never really there.

Attempt #3

More than anything else, I was curious how well this would keep in dry storage if roasted ahead of time. After all, I’m not going to be reaching for the sheet trays every time I want to make spaghetti, I’d much rather be able to roast off a whole box, then put it back in the box and have it ready to go whenever I want. And the original recipe suspiciously doesn’t say anything about being able to do so. So I set aside some from my initial experiment (Friday) to cook off today (Monday).

Surprise surprise, nothing happened to the pasta over the course of 3 days. It was so underwhelming I forgot to take a picture of it before putting water in the bag. Speaking of which, I think I’m gonna adjust the soak time to about 45 minutes to account for the thin spaghets.

Hmm… even at 45 minutes there still seems to be a noticeable amount of brownness leaching out into the water (in hindsight you can’t really tell up against a wood counter, but take my word for it). It's also not nearly as flexible, not that that really matters since we're just gonna boil it anyways.

Ok, bringing the soak time down to 45 minutes didn’t really help protect the roasted flavor, it pretty much tastes just like that first batch. If anything, the reduced soak time may have hindered them, because some of the noodles seemed to be only partly rehydrated, resulting in a mushy outer layer with an extremely al dente core, which was an interesting mouthfeel to experience. However, I feel like I can officially call this part of the experiment a success, since none of these oddities have anything to do with my main goal here: Can the pasta be roasted ahead of time? Yes.

Final Verdict

If you don’t care about the strange appearance, a healthy dose of olive oil on your spaghetti pre-roasting is the way to go. But is the roasting worth it in the first place? Overall, I think it’s a fun party trick, but I don’t think it’s something I can say makes a ton of difference if you’re just cooking for yourself. Unless you, you know, actually follow their recipe and use a spaghetti of regular thickness. Maybe that was the secret to unlocking its full potential all along.

he makes a perfect balance between a dork and smooth talker so he can vibe with all your family. Bashful laughs and genuinely polite greetings when he first meets your parents/grandparents/aunts/uncles to being able to act a fool with you and your cousins when the older folk are away

so when you first approach him like “hey do you wanna come to my family’s cookout,” hes excited. For one- its canon that this man loves food and loves to eat so hell yeah hes in. Second, i can imagine the fact that you’re comfortable enough in your relationship to bring him (whos obvs not black) is a big deal. Like you want him to meet your more extended family? hes like “oh shit i gotta impress” (also people be out here demonizing him more than needed- hes an asshole but not that bad, so even before he was aware of the more cultural aspect of it and is super respectful and wants to learn)

So you pull up with him, and I can imagine him being lowkey nervous the day of/drive to and youre just like “relax, just dont be you” as a joke and he glares at you and youre just like “I’m kidding”

Give him a tiny pep talk, he’d appreciate it. It’d be one of the times you get the sweet side and not the “yall just wild ass best friends who are dating” type him.

The minute he steps out of the car he literally hits a 180 on you and suddenly isn’t nervous. The music is a vibe, your hand is in his, and that food smells good. Hes annoying though and as yall walk thru to the central location hes like “watch your family like me more than you”

Anyways when yall get there its not early but its not late either, so food is highkey still cooking, save for a few hot dogs (which i’m gonna say turkey or veggie for my own selfish indulging LMAO). And this mans does NOT care. He’s still gonna eat 2-3

Anyways, you make quick rounds with him by your side to greet: he straight turns on the charm. To the point where its like “OK but you didn’t even charm me like this sir.” And trust me he eats the compliments your aunties and shit shoot off at him up. (but also props to you because you bagged a man who is fine as fuck)

Whether you say something or not, he asks YOU to go dance. So yall got your little red solo cups and he smooth grabbing your hand and just straight vibing with you. (he looked at youtube videos and learned to step much to your surprise so uh, you better know how to before he embarrasses you). bonus: when youre alone with close cousins later they like: spill the tea. his hips? d**k game gotta go crazy

anyways towards the later half of the day where the air is a lot more settled and everyone is just chilling, hes over with some of your guy cousins (lets say yall around the same age). Anyways you walk over after talking with your parents, beer in hand for him. Hes the type of bf to just wrap his hands around your middle even while your standing and you gotta give him the look that his hands better not slip lower. But yeah, your fam teasing anyways F in the chat

idk if hes more touchy because its getting late and the adrenaline and excitement for the day is winding down, or its because hes that comfortable with your cousins and they all friends now so if he wanna touch on his baby hes going to

Khaleel, let’s start with your story. We’d love to hear how you got started and how the journey has been so far. My friends call me leel and the fans call me Mr.Wckd, leel or Khaleel it’s all the same shit really… I started Wckdthghts on my own in High school at Crenshaw High school, located in the Crenshaw district Right next to Leimert park which is all in south central Los Angeles.

I got the name from ditching class one day, walking the hallways alone and I just kept coming up with Wicked thoughts of different scenarios popping up in my head (good and bad) I had already knew at the time I wanted to start a brand but for a long time I just couldn’t come up with the name, then bam!!! It happened to me like I saw God or something….. I was like that’s it “Wckdthghts” that’s gotta be the name, me being a kid I thought taking the vowels out of the actual spelling itself was the coolest shit ever, over time I slowly started disliking it but I never changed it due to the simple fact that I never wanted to kill the kid creativity that started the whole idea in the first place.

I honestly loved clothes my whole life, or actually to put it in better words I just like being fly my whole life, I was already in to skateboarding so I just already knew the lane I was going to come at, even though I had no real clue on how the streetwear game was at the time, that’s just the natural direction my brand took, over time I just started crafting and molding that blueprint… Still not knowing wtf I’m doing half the time but I guess its working somehow, I mean I did good enough for yall to wanna listen, hahahahahahaaha!

Once I got my sense of direction and I knew exactly how I wanted to come at it I just never stopped! It’s been crazy but I’m still here… What a fuckin ride to say the least.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you? Hahahahaha, hell nah it wasn’t no smooth road, I have been through almost every emotion dealing with this shit, but it’ll always be ups and downs for a real nigga and that’s just something you gotta charge to the game. If you really want something, no matter how farfetched it may sound you’ll go through every obstacle until you reach the end of your journey on where it is you was determined to go. That’s just what we call being “reckless with passion” tho.

I feel like I could give you a hundreds of struggle moments along the way but just to narrow it down for the readers & listeners the most common problems that I ran into that I feel like anybody who comes from nothing at all getting into the industry trying to make a name for themselves or the team would be:

1. Not having the proper resources – Sometimes It’s not what you know but it’s who you know, in my opinion, networking & experience can get you a lot further in this game than a degree could ever (personal opinion) so don’t take it up the but, sometimes you just gotta jump into it head first and let faith stir the wheel.

2. No financial literacy/Background – Not knowing the backend on how to manage the doe, cause believe me! It’s going to come and when it does you have to be ready for it, otherwise YOU. WILL. LOSE. IT. and I think we’ve all been there before doing it independently it’s one of those situations that’s just bound to happen unless you have some type of financial support and if your one of the very few like me that just knows “Selfmade” taste better, it’s almost like you want to go through it in a sense. They say what doesn’t kill you, only makes you stronger.

3. Timing – Awww man, I couldn’t stress this enough, making clothes, when I say this is the most important ingredient to the formula this is like the key!!! I’m not even gonna get into this too much but let’s just say this if I drop a mink coat in the summer, chances are it’s not going to sale as good as it would’ve in the winter but if I put the production in too late I hate no control of when I can get those mink coats ready… TIMING IS KEY, TIMING IS KEY!!!!

4. Consistency – Let me ask you this. When you cook food and throw it fresh on the plate, how good does it look? But let’s just say you leave it there and don’t eat it while it’s fresh and it’s sitting for a good period of time it starts to lose its appealing looks and then you’ll be like I’m not eating that shit lol. Timing can def be cancer to consistency, so this is why I’m going to yell it out again just in case you forgot already. TIMING IS EVERYTHING!

At the moment Wckdthghts is a solo operation so me being the owner I pretty much do everything, I love it tho it’s def made me sharp in a lot of ways but as the brand progresses, I know it can’t be like this forever. At some point, I’m going to need an extra hand, or maybe several more than likely.

I really don’t know what would set us apart from our peers tbh that’s not really something I worry about these days, I just try to worry about what I’m doing, how can I be great? that’s my concern so I don’t get caught up in anything that has to do with others.

Def prolly known for sure from the Klux busters campaign, that’s like us going gold in the music world hahhahaaha, yea we def went gold on that, no cap the whole roll out in itself is always fun honestly, it’s a lot of other shit too but that’s for sure the one.

What were you like growing up? Ahh man, actually I’m glad y’all asked this question. I was born and raised in the district, Crenshaw District to be exact right near Leimert Park in the avenues in the heart of the 40’s shoutout my niggas nh!!!

So I was like not bad…. like gang banging bad or anything like that but at an early age I was just exposed to a lot of shit, it was easy to get into shit…. so hmmmm I’d say I was curious that’s a good way to put it, but I was also wise just cause I seen a gang of shit at an early age.

Like I said in the beginning, I was into being fly, I loved skateboarding and along the way, I’m not even gone front you for a quick second I was riding fixie bikes, that shit was fun, especially the little ride outs. We used to go up man I swear those was the days, critical mask, smashed up Sunday’s… I’m telling you I did it all! From partying at the kwitit parties off western until they got shot up to being danced on the sweaty floor at buffalo soldiers, I don’t know how if I’m even getting interviewed, but I’m glad I’m here.

Also for a hot second, I started gaming too a nigga almost went MLG, if I say my gamertag it’s pretty well respected In the COD world. 1v1 nuketown with the famous…. lol you couldn’t see me. The real gamers is on Xbox!

text I sent to my family at 3 a.m. :

Dear C and Mom,

I am trying to improve myself in order to be less depressed. I know you are sleeping but I just wanted to share.

I bought a budget book and I am planning out my weekly/monthly finances. My goal is to add $100 to my savings every month. I also spent $110.99 on door dash and meals last week alone which is insane of me and also like embarrassing lol. This week I am going to try my best to only get door dash or outside food on Tuesday before rehearsal. I am looking up easy things to cook on Pinterest and going to lidl tomorrow to get a few groceries on my new budget. I plan to eat everything in the freezer. Lol.

Also I want to paint my room tomorrow. I am sick of looking at paint buckets and having no art on my walls. The bathroom will just have to stay white because I can’t be doing all that it’s just too much for me.

I also am changing up my mold game to keep making money. I can’t expect to do the same thing over and over again if it’s not working. People really like my Xmas mold so tomorrow I am putting 10 of them on sale and shipping them out as I make them. People seem to be really into that idea.

Also! I am opening up my Etsy shop again to sell things I am making. It’s easier to get exposure on Etsy for new items and ideas and that’s how my mold store grew. I have a lot of cool ideas that I need to just be diligent about actually sitting down and making.

Also!! I am making myself a daily schedule. This past week I made a point of sticking to a certain schedule and stopping at 10:00 pm no matter what. I take my unisom at 9:30 because it takes like 2.5 hours to work. I’ve gotten more sleep which allows me to wake up earlier and be more prepared for work. It has actually helped a little in improving my mood. I was working on mold stuff and designs and Taradel stuff and taking my unisom at like 11 and going to sleep at like 1:30 and I felt like a fried egg. No one feels good when they are so tired. Whatever is unfinished will just have to be unfinished.

I also apply to one job per day.

Sorry to just dump all of this down yalls throat I just wanted you to know that I am really trying to like, better myself. I hope to not annoy you with my new schedule and ~life planning~ and if you have any suggestions just let me know. Also no more napping lol

so like, lets see if this works? I also have a phone interview for a job on tuesday. I don’t know if I want to leave or not because I worked so hard to get to where I am but also I am fuckin miserable. my boss is the worst and this job is not at all what they said it was when they hired me. I have no idea why I can’t seem to find a job that’s not shitty.

also S texted me yesterday and asked if we wanted to be friends. I said sure cause I really do miss hanging out with her. At rehearsal we had a totally normal and fun time talking so maybe it will be okay. who knows.

also I want to write another ocean’s 8 daphne/rose fanfiction. it’s in the works. I realize that not a lot of people read it so my validation will be low but at least i am prepared for that this time. apparently I will go down for any ship involving anne hathaway and an older woman. i just really like her? she’s pretty and seems like she’s a nice person.

also i made 2 new friends at work. they are the reason why i don’t want to leave. i have no friends. lol.

i already know I am not going to paint my room today but sometimes you just gotta do your best.

also I have a lot of cool new ideas for my business since the solds have slowed down. I hope I can be huge like I used to be. instagram is the worst and capitalism is a prison. goodbye.
