*Hajime beams as you lean in to take a bite of the hamburger patty piece that he offered in return; finding you graceful and adorable as you do so. His body thrums a little with the want to kiss you again but he resists. Even a little peck on the cheek he saves for another moment. But the resolve almost goes out the window when you smile at him so he swallows nervously and nods* “Not cheesy at all because I’ve got a bunch of them bumping around my stomach. All of them telling me I should kiss you. But I told them we can have another kiss later. If that’s okay with you?” *He throws a sheepish grin before grabbing some rice to eat then a bit of the potato salad. He hums at how good they both are before again offering you some of the potato salad too* “I dunno Ms. Cindy, you seem to be a really good chef to make such yummy bentos. And I thank you, for taking your time to make these. I am honored and I feel a little spoiled that you put your heart into all this food. Maybe you can teach me some nice recipes another time? I can come over to your place or you can come over mine and we can make something yummy together? How does that sound?” *He suggests earnestly, hoping he’s not springing a date idea of coming over each other’s place and having dinner. Hajime hopes that didn’t put you off but he means it: he wants to do something domestic like making a meal with you and maybe relaxing with you while just talking* *He takes another sausage to have and makes a noise of agreement about dessert. He makes sure to chew and swallow before grinning at you, a little blush on his cheeks* “We can get any and all desserts that we both like and we can share. There were sakura mochis too. We can pick up that with the taiyaki and dango then share it. Maybe… Maybe we can get some fortunes too? Maybe we can get a peek into our love fortunes? But only if you want! We’ll walk around and see what things we can do too, like a little game stall?”
Hajime Iwaizumi
*I hum around the bite he feeds me, enjoying the small acts of vulnerability we were able to show each other. I knew they would add up and eventually form a solid foundation of trust between us. I looked forward to that, and being able to open up to him more. I smile at his comment though, unable to help teasing just a bit.* Oh? You speak butterfly now? I wish you could translate what mine are saying, though I'm sure it's along the same lines. I'd love to have another kiss later. *A blush tints my cheeks after admitting to want to kiss him too. I didn't want to come across as too eager, but I also wanted him to know I liked him and not act too prudish by keeping my walls up too stubbornly. I enjoy a bit more of my bento as well, happily leaning in to take the bite of potato salad he offered.* *I raise my eyebrows as he suggests cooking together at one of our places soon. I tilt my head as I study his face. If I took his word at face value, I'd feel excited. I could picture the two of us clearly standing in my kitchen, laughing and flirting while cooking a yummy dinner together. Afterwards, maybe some kissing and cuddling. I told myself to trust that he still was trying to build a connection with me, and not just find an excuse to get into my bed. He was a good man.* I think that sounds really nice. I might know the perfect meal already, actually. *Hearing about the sakura mochi has me perking up, and I'm glad he seems open to sharing desserts so we can get a good sample of everything.* I don't think it would hurt to get a peek at our fortune as a couple, do you? We just need to make sure to take it with a grain of salt. And I hope we do come across a game stall. If you win me a prize, I think there's a good chance you'll be rewarded with that kiss we mentioned before.

Personal Diet Plan (Non-Gym Days) (Low-Cal) :
Side Note: Before I start I’d like to disclose that my diet plan is specific to me, my body type, how my body works & metabolizes food, along with my food preferences. What works for me and my body may or may not work for you. Regardless, anyone is free to try it out for themselves as I’m not stingy or protective over my diet and workout routines. I believe everyone should feel happy in their own skin, but with that I’d like to disclose that I’m not supportive of Pro-Ana/Mia romanticizing and am Pro-Recovery. Homecookings [July ed.]
I didn’t have many entries for the June edition of Homecookings post, nor much posts in June, in general. So I made it a goal to cook more this month!
Sadly, I don’t think I have accomplished my goal in terms of quantity, but I feel I’ve tried several new things this month so that makes up for the lack of quantity? *shrugs* I mean, the deck-basil fried chicken was a hit! So was the seafood jeongol! :P Nonetheless, here’s the rest of my July.. .
Tumblr media
I LOVE putting the hashbrown in my sausage & egg McMuffin (plus the ketchup). I can’t believe I didn’t apply this idea to a burger before o_O part of the reason bcos I don’t eat burgers that often.. . but anyway, I put one of my homemade hashbrown patties (aka the potato pancake) in my burger. Wowwwww!!! Liked the extra texture so much!
Tumblr media
Breakfast on a day-off~ kimchi fried rice + hashbrowns (bcos as you know, I’m trying to finish the old hashbrowns by incorporating it into diff things)
Tumblr media
*read the box* =P
There are 9 pieces of mochi per box, & there are 4 flavours per BIG box. The other flavours include: green tea, mango, & vanilla. This milk tea one was my favourite just bcos it is not vanilla & green tea lol the mango was the 2nd best.
FYI: Lotte is a South Korean brand but the Korean “starter” actually opened up the business in Tokyo, Japan. Then after almost 2 decades (when it got somewhat big enough), he migrated back to Korea. Now, it’s a huge international conglomerate with multiple “lines”, & depending on where you are, there are different Lotte products in different places.
Tumblr media
My mom made this but I thought I’d share on here bcos I don’t think I have ever shared this - it’s not a frequent dish. This is my mom’s version of the Vietnamese appetizer, “bot chien” (= fried rice flour cake). First, my mom steamed rice flour cake (mix rice flour with water with a bit of salt). Once cooled, cut into smaller pieces; the ones here are about 1-2cm by 1-2cm cubes. Then she stir-fried it with Chinese sausages, egg, green onion, & Chinese preserved radish. For flavouring, she added some abalone sauce (just a little bit! Bcos the sausage & preserved radish are quite salty already).
Tumblr media
“Jjam-dong” :D Jjambbong is Korean spicy seafood noodles, which is one of my most fav noodle soups. Here, I used udon noodles, which some places in Korea actually use for jjambbong .. . aka: “jjam-dong”. [Koreans call it u-dong, as opposed to udon, like it has a ‘g’ at the end, so.. . jjam-dong!]
Tumblr media
What is this pool of whiteness with black specks & like a patch yellow butter? lol this is a ‘sauce’ that I made using: milk, water, lime juice, coarse salt, coarse ground black pepper, & unsalted butter.
What did I use this for?
Tumblr media
Used it for seafood, namely the leftover mussels & baby octopus from my seafood jeongol. This turned out so well!
Tumblr media
Finally used another packet of the lychee powder - used it for its purpose: bubbletea. It was okay; I used half of 1 packet for 1 cup of milk bcos otherwise, it would be too sweet for me.
Other ‘current events’:
Work has progressed fast this month, where I actually finished my training a month before schedule so now I’m on my own. Not scared, but feelin’ the time crunch as I’m no longer with a trainer/buddy, who has been helping me do odd jobs for the past while. I miss it!!!! It is also very exciting, however, to work alone & be independent.
Downtown Edmonton traffic is a nightmare >.< long story short, the daily commute for me to/from work (via 2 different routes) have lengthened to almost 2.5 times the usual length of time. When put into perspective, it’s like driving in winter except I think it’s worse now. I don’t know anymore.. . but it’s annoying bcos there’s just so much going on in downtown with construction & NHL that the traffic situation is horrendous.
K-dramas. . . I’ve been on pause. I tried several dramas & couldn’t get into it =( Chip In looks intriguing though, so I’m gonna try that once it’s done airing!
Anyways, that’s all! I’ll ttyl~

Cooking With Anime: A Triple Potato Udon From Food Wars!
Ah, Food Wars! recipes! I feel like I always end the experience in a love-hate relationship. I love the final product, but the process to get there. Holy cow. And this particular dish is no exception. Soma and friends whip it up in order to pass the second stage of their exam. They ingeniously realize how to use their remaining supplies to craft together a delicious dish that will impress the examiner... but is it even possible to cook this particular dish in the time frame allotted?
Maybe. The dish, special Gousetsu Udon, requires a few moving parts. The soup base, thickened with potato shavings, comes together in a snap. The potato mochi too is brilliant in its simplicity; it comes together without a fuss. It's the udon noodles that are the issue. Having never made udon before, I needed to learn two things: a recipe, and the technique. I was unsure where to start, but I found this guide to be invaluable when it came to forming the noodles. However, finding a recipe was nearly impossible. At least in English, this is a recipe that simply doesn't exist. Luckily, my slight knowledge of Japanese helped me search, but even there I found only one recipe. I'm sure there's more out there, but this is where my search capabilities ended.
So, I had a technique guide and a recipe... but I still needed to cobble together something that would work for this variety of noodle. The recipe below is based on a combination of the technique guide as well as the Japanese recipe. The thing with udon, though, is that it's quite difficult to knead (requiring the use of feet) and require resting time – more time than Soma and friends had in the challenge. You can get away with resting the udon only a few hours, as opposed to overnight, but even so that's cutting it a bit close for the time limit. Theoretically, it's possible... if everything goes perfectly. And the team did waste time in the beginning attempting to go out to look for other ingredients.
In any case, is this dish even worth making? Well, yes. I was pleasantly surprised! My own noodles were nothing to write home about (honestly, unless you're a master noodle maker, it's always easier to buy pre-made noodles), but the broth was fantastic, as was the potato mochi. For me the mochi was actually the stand-out topping. It was creamy in the middle, yet crunchy on the outside; my favorite part of the whole dish!
If you make this at home, I'd advise buying pre-made fresh udon noodles (the potato flavor of the Gousetsu udon is really fun, but I'm not sure if it's worth the trouble). Everything else I'd make from scratch – you won't be disappointed! Watch the video below to get more pointers on how exactly to make this dish!
youtube
      Ingredients for Gousetsu Udon
This website is where I learned the technique. And I based the recipe below on the gousetsu udon recipe here.
Broth -8 Cups Dashi -1 Cup Soy Sauce -1 Cup Mirin -1 Russet Potato, peeled and finely grated
Potato Mochi -1 Russet Potato, peeled and cubed -1 Tbsp Butter -1 Splash of Milk -Salt -1 tsp Potato Starch -2 Tbsp Butter for Pan
Toppings -Green onion, chopped -Lightly Fried Green Shiso Leaf
      To Make Gousetsu Udon
  1. If buying pre-made noodles, skip to step 3. Otherwise, start with the noodles. Steam the potato, and then slip the skin off. Mash very finely, and then add in the salt, potato starch, flour, and water. Knead until it roughly comes together into a ball (this could take awhile).
2. Put dough into a plastic bag and continue kneading with your feet. Place it on the ground, cover with a towel, and step on the protected dough. Step on it until it reaches the edges of the bag, then reposition the dough away from edges, and step again. I did this three times. You want it to be firm but soft, and pliable. Place the ball of dough in a fresh plastic bag, and refrigerate overnight. The next day, remove from the fridge and let come to room temperature.
3. While waiting on dough to come to room temperature, create the broth. Make dashi, and then add in soy sauce, mirin, and grated potato. Bring to a low simmer, and keep on back burner until ready to use.
4. Make the potato mochi. Boil potato until soft, drain water, and mash. Add in milk, butter, potato starch, and salt. Stir to combine until mixture is smooth. Create small patties out of the mixture and set aside until ready to fry.
5. Bring a frying pan, preferably non-stick, to medium high heat. Melt butter in the bottom of the pan, and then place patties in the pan. Fry on each side, about 5 minutes, or until golden brown. Remove from heat and set aside until ready to use.
6. Clear a space on your counter to roll out the dough. Cover with potato starch to avoid sticking, and roll out dough to a 1/8th inch thickness. You want to try to get it into a square shape if you can. Fold the dough like an accordion, and cut slices with a very sharp knife. The end goal is for the noodle to be approximately square shaped, so slices should be about 1/8th of an inch thick as well. Dust cut noodles well with cornstarch to avoid sticking.
7. Boil noodles in well salted water, 10-12 minutes (more time if noodles are thicker).
8. Chop green parts of green onion. Quickly batter and fry Shiso leaf to make it crispy.
9. Rinse noodles under cool water when tender and ready to eat, and place in serving bowl. Ladle broth over the top. Garnish with potato mochi, shiso leaf, and green onion. Enjoy!

The Bucket List
Spend your holiday in another country will be incomplete if you don’t visit the beach. Hear the surf and feel the heat of the afternoon sun on the soft and fine sands. Thick, moist and flaky NZ hake fillet in thinly beer battered and crispy fries tartare with a glass of icy cold beer. can’t be any better to kickstart the weekend.
The Bucket List at Bondi Beach
Address: Bondi Pavilion, Shop 1, Queen Elizabeth Drive, Sydney NSW 2026

The elegant barramundi is de-boned, baked and stuffed with diced prawn and vegetables. The barramundi had a mildly sweet taste with a delicate texture. Added a twist of Thai red coconut curry sauce and served with a bowl of steamed rice.

Messina Gelato
There are plenty of Messina outlets in Sydney. My favourite outlet remains at Rosebery (HQ). The gelato is smoother and melts fast than others. My top choices are honeycomb (new flavour) and pistachio (standard flavour).

Sokyo
We were here for sashimi and found another gem here! Must try the beef wagyu skewer with caramelised shallots in BBQ teriyaki sauce. The smoky meat was very tender with tasty burnt ends. It’s so addictive that one skewer is not enough.

Tetsuya’s Restaurant
Address: 529 Kent St, Sydney NSW 2000
The Rocks Cafe
Char-grilled crocodile patty with watercress, tomato, roasted garlic aioli and served on brioche with crispy fries. It might be one of the most unusual burgers but tasted similar to what we usually eat. The crocodile patty was very lean, tasted like chicken breast to me. It was well-marinated and flavourful, there isn’t any unpleasant taste in the mouth.
Crocodile burger at AUD26.
If you have seen my previous post on Crocodile Burger, we’ve also tried Kangaroo Burger. Char-grilled kangaroo patty with rocket leaves, tomato, red onion, cheese, beetroot relish and roasted garlic aioli. The kangaroo patty had a tough texture with an unfamiliar taste. Unfortunately, the beetroot relish did not help to mask the gamey smell which I cannot stand it. This is gonna be the first and the last time for kangaroo burger.
Kangaroo burger at AUD24.
The Rocks Cafe
Address: 99 George St, The Rocks NSW 2000
Two Good Eggs Cafe
Love the fresh avocado spread on sourdough with poached eggs, hollandaise, spinach and choice of bacon, ham or mushroom. A very generous serving of delicious bacon, juicy mushroom and the fun moment of slicing into the egg and seeing the river of golden yolk flow.
Two Good Eggs Cafe
Address: 144/148 Goulburn St, Surry Hills NSW 2010
Hydro Majestic
Served in the Majestic Wintergarden and Eastern High Tea overlooking the spectacular views of the Megalong Valley can’t get any better.
The Hydro Majestic Hotel
Address: 52-88 Great Western Highway Medlow Bath, NSW 2780
Silk’s Brassie
“Please resolve any disputes over dessert-sharing amicably + fairly” written on the menu. And I understand this statement after the first mouthful. There are eight choices of dessert to choose from. Medjool date shortcrust tart with fig syrup, Chantilly cream, pistachio ice cream. I am amazed by the taste after the first spoon. The Medjool was very soft and sweet and the smooth salty pistachio ice cream in every bite giving your mouth a taste of dessert heaven. Even my boyfriend who is an avowed date hater has been convinced by it.
This is part of a course meal.
Silk’s Brasserie
Address: 128 Leura Mall, Leura NSW 2780

Day 4 in Taipei: Spirited Away
Hopping out of bed early, we arranged to meet our Japanese friend Soyo, a student we met in Belfast who now works and lives in Taipei. Strolling along our crowded morning market lane, the smell of sweet doriyaki filled the air and our nostrils enticed us to shift a sly hand into our pockets and hand over $10 (25p) for the red bean filled cakes. A wave and a smile to the cute auntie and we were off to catch our bus.
Longshan temple area was also thriving when we arrived, and again, we were tempted by a busy food stall selling fresh soya milk and a scallion pancake. Reaching the temple, we greeted Soyo (after many years!), took a few selfies and headed inside.
The colourful, elaborately decorated is one of the top attractions in Taipei, and was brimmed with people buying incense and leaving food offerings for the gods. I stood back and watched as they prayed, held up the food and bowed, before thrusting it back in their bags and heading home. The array of these gifts kept me amused: everything from fruits to cookies, healthy hazelnut granola (probably more meant for the young female worshipper) to candies. We then strolled down a morning food market street, bought a bitter Chinese herbal drink (so pungent it was undrinkable- any wonder the vendor looked amused when we asked to buy one) and found Bopiliao Historical street. This one was interesting: with history from 1979, Its now been revamped and houses an education centre and one can imagine walking the streets of the Qing dynasty. For some strange reason, they had an art exposition featuring bathtubs. Think bathtub see seasaws, bathtub cars, bathtub climbing frames. I understand this is difficult to fathom…
Next we hopped on bus to the famous Din Tai Fung restaurant (one of several branches… we choose the shorter queue thanks to a handy app!) and picked up an iced coffee at Louisa (not me unfortunately). This restaurant is a must eat, and now has branches worldwide- the Hong Kong one being awarded a Michelin star. The xiaolongbao didn’t not disappoint either- we savoured a basket of the original, a fish and pork variation, some pickled cucumber, a hot and sour soup and some prawn dumplings in chilli oil. The staff were so attentive and a credit to the business.
After a break chilling at our second home, the Bouti Capsule Inn, a sneaky chocolate bubble tea and a red rice & peanut mochi, we got a private taxi to the famous Jiufen. The hour journey cost about 8 quid each and was a stress-free way to reach the beautiful lantern-lit streets filled with little shops, lots of street food and colourful buildings. The whole scene felt magical as the sun set and the whole place glowed with life. It really did feel like stepping into an anime movie, like Spirited Away from which the setting was based.
After some haggling we jumped on a taxi home and watched the sky flash and roar as we got pummelled by floods of rain. It didn’t deter our plans to visit the biggest night market in Taipei though: Shilin. This was one place we wanted to visit, however the market did feel more commercial compared to the local ones we had been used to. Meandering the streets and clinging to one-another under our dripping umbrellas, we tried a chicken yakitori stick (Japanese influence), some kind of potato dumpling with an awful artificial yellow/orange cheese sauce and pig intestine noodles. I loved the noodles, and asked for a top up of the aniseed-rich Taiwan basil leaves. That cheese thing I didn’t touch though. To tick another few eats off our list, we had a deep-fried oyster/cabbage patty (like okonomiyaki), the famed oyster omelette with chilli sauce, minced pork with rice (lu rou fan) and some refreshing clam soup. The tastes were good, but everything was quite greasy for my liking. We ended our evening chilling in a coffee/tea house with two new local friends, David and Wesley and enjoyed ice-teas until midnight. I wish places like this opened late in the UK!
The MRT was our way home, and the familiar walk along our night-market street to our apartment. Anthony couldn’t resist an egg tart, and we found ourselves in a convenience store gazing at the array or milk drinks in the fridge.
I had to remind myself that it would be rather glutinous in looking for dessert at 12.45am, so shared a chocolate milk and did face masks (best travel buddy!) to wind down at the end of another jammed day.

We climbed a mountain!
For our first morning in Kyoto we took a train south to the Fushimi Inari Shrine. Inari is the name of the mountain it resides and also the name of a god (of business, manufacturing). There are hundreds (thousands?) of red gates lining the walkway up the mountain, each donated by a Japanese business. The crowds were crazy, including hundreds of school children. One group stopped us to ask questions for a project and practice English! Once we got a short way up the mountain the crowds thinned and the way got steeper. We decided to go ahead and go for the summit, sweating and panting in shorts and tshirts while 80 year old Japanese couples and well-dressed Japanese businessmen (in blazers and dress shoes) chugged along easily. The journey was beautiful and serene and according to Kelsey's watch we climbed 55 flights/walked 4 miles! And that was all before lunch. Outside the shrine were street vendors selling souvenirs and snacks so we got yummy meat skewers and fresh mango juice before heading back to Kyoto station. Outside the station an aspiring photographer asked to take our portraits as part of a series of tourist portraits. We apparently look very inviting and welcoming. We'll post a link when the photos are on his portfolio site 😂 From the station we walked to two nearby temples that were beautiful, intricate, and old: Nishi-Honganji and Higashi-Honganji. Side note: you'll only be seeing exterior photos because the interiors are sacred and contain Buddha statues. From there we walked (we're very find of walking!) to another temple a few miles away called Sanjusangeri-do. Inside are 1000 hand carved wooden statues flanking a giant hand-carved Buddha. It was so overwhelming and hard to grasp how many and how much craftsmanship went into this...btw these were carved in ~1200-1300 by 4 sculptors. Nbd. After staring in awe for awhile we crammed onto a bus and rode around town to our next destination: Nishiki Market where mochi (a gummy dessert) is made. We bought mochi desserts with strawberries in the middle, a peach slush, and a tasty potato/curry/onion/fried patty to enjoy while perusing the market. Now we're tired and off to bed. Ps. Total mileage today: 12.5 miles
