Perfect snack for Noa! Rich in calcium, protein and other micronutrients! You just have to cut cheese into small cubes and let them dry until they lose almost all the fat and become super hard. Then bake them in the oven for 8 mins or so at 209 degrees Celsius. Since we stopped eating massive amount of leafy greens (I.e. cellulose), our gut feels so much better. Less bloating, no heavy feeling after a meal. Imagine these vegetables go through our digestive system and starts to ferment - it would eventually produce endotoxin. - Rather, extract the minerals from the leaves by cooking them for few hours with some vinegar, and drink it. No digestive stress, no oxalates, just good stuff. We mix this veggie broth with yak bone broth and cook mushroom for a couple of hours for extra nutrients. Add some oyster essence for zinc. We often drop an egg into it, too. Now that’s a good meal 👍🏻. Thai food tends to have a lot of polyunsaturated fats (lots of fried food in vegetable oil) and it is quite hard to choose the dish without it. If I eat Thai, I tend to eat seafood salad without noodle. Unless you get organic rice, I avoid rice as well, because standard grade rice is still sprayed with a lot of pesticides here and you don’t know how much residue is still on it. If you want starch, you can have grilled banana. - Another good option is grilled or boiled seafood, and I bring my own ghee and sea salt. I prefer squid because prawns and other fish are most likely farmed. Thai curry with coconut is also good but you don’t know how much oil they used to fry the curry paste etc. Non-fatty soup is great, like Tom yam and mushroom soup, but again, you have no idea what base they use for the broth... 🤨. - Fortunately you can get hold of a lot of great ripe fruits here in Thailand! Home made beef jerky is the best 🙌🏻 Grass-fed beef from New Zealand, the marinade is a mixture of organic tamari, pineapple vinegar, raw forest honey, fish sauce, chili, paprika, sea salt, garlic and onion. Natto is a great source of Vitamin K2, which is very important for bone metabolism, heart health and energy production. Although soy is not my favourite choice of food, I think it is fine to eat it few times a week for the sake of getting good amount of Vitamin K2 from a natural source. - I like adding an egg (or just egg yolk) and season it with my home-made oyster source for extra zinc. It is absolutely delicious! - I’ve been also eating bee bread every day, which I got from our forest wild honey supplier in Thailand. They get me abandoned bee hives and I remove the bee bread from the hives, clean it as much as I can, and dehydrate them for four days at 40 degrees. - Pollen is fermented together with honey. It is like an emergency food for bees which they keep in the hive. When you chew on it, you can taste some propolis from the wax structure as well. It is not delicious, but I appreciate eating this nature’s divine superfood. Seriously, natural bee bread deserves the title of “superfood”, truly!!! - The bees collect honey and pollen from variety of wild flowers and we also eat the honey taken from the same area. If you have a good metabolism and healthy thyroid, home-made ice cream is one of the most nutrient-dense food you can eat! We just got fresh raw goat buttermilk so I had to try making buttermilk ice cream by mixing pasture-raised egg yolks, sugar, grass-fed cow’s cream, grass-fed milk and Okinawan sea salt. The red stuff is cranberry syrup I just made. Without gums it is very runny but I don’t care, it is delicious! Also Tobias insisted on adding some Ugandan chocolate..... wow. ☕️ Coffee jelly made with pasture-raised yak bone gelatin and coffee brewed with organic Thai arabica beans (Biohackes’ choice by @healtholicious.bkk , a mixture of light & dark roasted). This time I brew it the way @thedannyroddyweblog posted on his YouTube channel and wow, the coffee tastes absolutely fabulous! No bitterness, it is sweeter and rounder. 😋 The trick is to let all the difficult-to-dissolve chemical compounds dissolve with warm water first, and gradually increase the temperature to extract as many beneficial compounds as we can. This is not possible with an espresso machine. - This coffee jelly is very nutrient-dense, the water I used to brew coffee is in fact magnesium bicarbonate. On top, I make cream sauce with coconut cream, MCT oil, yak bone collagen, Okinawan sea salt and sugar, which goes so well with unsweetened jelly. The jelly itself is made with pasture raised yak bone gelatin which contains both Type I and III collagen (most of the big brands use cow hides which contains Type I collagen only). Because they only eat grass, there is no glyphosate contamination. This is a wonderful way of taking collagen!!! - Now I am no longer eating kombucha jelly because I don’t agree that kombucha is actually beneficial for me. Probiotics in fermented food are overrated, who knows what strains of bacteria are inside? OMG Rusty’s raw goat buttermilk is to die for, and tomorrow I am churning this into ice cream! Adding some cranberry swirls, too! What else shall I put inside!? 🥰 Some Uganda dark chocolate from @boehnchenchocolate 😊 may be!? - Since we started eating ice cream before going to sleep, the quality of sleep has gone much better for Tobias, who always had relatively short deep sleep. Seriously this way of eating is making us happy and more stress-resistant. Every day Noa picks acerola cherries from the garden, and I’ve been collecting them in the freezer until I get enough to make syrup. These cherries have the highest vitamin C content (something like 30-40 times more than lemon) and the aroma is incredible! I used to eat a lot of cauliflower because it was one of the most keto-friendly vegetables you could eat. Today I felt like eating it so made some tandoori cauliflower. Delicious, but it was not so necessary 🤨 those cruciferous vegetables contain compounds that inhibit iodine intake to the thyroid (goitrogens). Well, they were cooked well (45 mins in the oven) and consumed with ghee, as recommended by Dr Peat. - I don’t think I will be eating it anytime soon. There is so much my stomach can take, and this is certainly not worth taking it in.
