Apollo and the little muses; aka the muses of the lyre; aka Cephisso, Apollonis and Borysthenis; aka Nete, Mese and Hypate cause Apollo nicknamed them after the strings of the lyre which I find adorable☺️
As to why Apollo’s playing a kemanes instead of a lyre, all I can say that it made sense at some point after way too much overthinking but I cannot recreate that logic anymore.

What godly parent would be good for a set of triplets oc?
There's a lot of options you could go for! Depends on what type of theming you prefer, I suppose. Lucky for you, Greco-Roman mythology loooooves things in threes. The original version of this post got long so I'll make a (slightly) shorter version:
Honestly, any deities that are twins/etc, or have twin/triplet/quadruplet/etc or otherwise large thematic groupings of children, or are part of a thematic triad (which Roman mythos has a few of)/etc, all easy options.
Hecate is an obvious one cause of the triple form. Selene, Persephone, and Artemis are also all associated with her as a triad. Selene also sometimes is seen as mother of the seasons, which is a grouping of four. Artemis is obviously a twin herself and Apollo is the father of the muses of the lyre, who are three sisters if not triplets (Cephisso, Apollonis, Borysthenis. Or Hypate, Mese, and Nete). Not to mention just the Muses in general. Janus is more twos/doubles but you could work with that. I've been enjoying playing around recently with children of Feronia (Roman goddess) concepts, because one of her mythological children had a triple soul and had to be killed thrice to truly die.
Zeus is another who often has children in thematic groups, also commonly in threes - the Fates, the Graces/Charities, etc. Helen of Troy, Clytemnestra, Castor, and Pollux are quadruplets (who sometimes have different fathers and hatched from like one or two eggs, depending, fun fact!) and sometimes Helen is specifically a child of Nemesis. Also you could totally use that myth as thematic basis for your triplet characters just straight up having different godly parents.
Nyx has a ton of kids who are sometimes thematically grouped. Fates were already mentioned, the Furies, the Oneiroi (which are basically literally endless cause they're dreams), etc. Hypnos and Thanatos are twins. The Somnia are 1000 children of Hypnos/Somnus (also dreams) and include the notable triad of Morpheus, Phobetor/Icelos, and Phantasos. The Horae are also often a triad - Thallo, Auxo, and Carpo. Eunomia, Dike, and Eirene. Pherusa, Euporie, and Orthosie. Iris and Arke are more twins. The Erotes have a lot of variation in them - Anteros is sometimes Eros' brother/twin, sometimes Eros, Himeros, and Pothos were all brothers. The Algea could be interesting if you want a darker triad. Astrape and Bronte aren't necessarily twins but are a duo. Deimos and Phobos are twins. Sometimes Ares and Enyo are siblings- and Enyo is also sometimes one of the Graeae, who are another trio of siblings! You get the picture.
As I said, any mythological figure that's known for having children that form a thematic group, or just a really large bunch of children could totally work. Or anyone who's a twin/triplet/quadruplet themself, or their parents, etc etc. And again, see: Leda's kids. Technically there is nothing saying you have to make them all have the same godly parent while keeping them triplets. You can get as funky as you want with it.

THE MOUSAI APOLLONIDES 
They were three younger Muses, daughters of the god Apollon. They were honoured at the shrine of Delphi.  
The three were sometimes called Nete, Mese, and Hypate after the lowest, middle and highest strings of the lyre.
The Apollonides were one of three sets of Muses–the others being the Olympian Nine and the Titanid Three.

The Muses
The muses were the anthropomorphic personification of various types of literature, science, and the arts!  They were invoked by poets, musicians, etc. for inspiration.  Like many groups of nymphs and things like that, their names and even number tend to vary depending on source and over time, but most commonly the muses are known as nine.  
 Historically/archaeologically speaking the mythic figures of the nine muses are believed to have originated from Boeotia, where Thebes is.  
mythologically speaking, according to Diodorus, the muses came from Ethiopia and interestingly were recruited not by a Greek god but by the Egyptian god Osiris, or the Hellenized Osiris known as Serapis.  He also recruited the satyrs and took them all across Asia and Europe on a great tour where he taught people cultivation.  
according to Varro (who was Roman not Greek) and Plutarch, there were only three muses; one born from the movement of water, one born from striking the air, and one from the human voice.  They were called Melete (practice), Mneme (memory), and Aoide (song).  
in Delphi they worshipped 3 muses as well.  They were called Nete, Mese, and Hypate, who were named after the three chords of the lyre.  Alternatively they were known as Cephisso, Apollonis, and Borysthenis, and they were daughters of Apollo.  
yet another origin story has the muses as water nymphs, being born from springs that Pegasus made when he touched the ground with his hooves.  a group of maidens born from a spring is a mytheme across a few different cultures.  
Hesiod’s account is now seen as the standard one; according to him the muses were daughters of Zeus and Mnemosyne, the personification of memory.  Zeus took the form of a shepherd and they slept together for nine nights in a row, hence nine muses.  makes sense right?  since their mother was memory, the muses had the power to make people forget pain and bad memories as well as being inspirational goddesses, sort of like how people use art to escape their lives, i guess.  
early on the nine muses weren’t given specific functions or names, but eventually they were and there came to be less variation and kind of a standard for their names/roles:  
Calliope - the muse of epic poetry.  She was the father of Orpheus by Apollo, and her emblems were the writing tablet, the stylus, and the lyre.  
Clio - the muse of history.  Her emblems were scrolls, books, the laurel wreath, and later the cornett, a medieval wind instrument.  
Erato - the muse of love poetry.  Her emblem was the cithara which was an ancient greek instrument which i think of as an ancient greek guitar though its technically in the lute family.  later on it was common for her to be depicted in a crown of roses.  
Euterpe - the muse of music, song, and lyric poetry.  Her emblems were the panpipes and aulos, a type of flute, and also the laurel wreath.  
Melpomene - the muse of tragedy.  Her emblems were the tragic mask, the sword, the club, and kothornos which were knee-high boots.  
Polyhymnia - the muse of sacred poetry/hymns and sometimes pantomime.  Polyhymnia was also sometimes considered a patron of agriculture.  Her emblems are the veil and grapes.  
Terpsichore - the muse of dance.  Her emblems were the lyre and the plectrum (which is a musical pick).  
Thalia - the muse of comedy and pastoral poetry.  Her emblems were the comic mask, the shepherd’s crook, and an ivy wreath.  
Urania - the muse of astronomy.  Her emblems were the globe and compass.  
Besides Orpheus, the different muses had many children though often it is disputed which children were born to which muse.  For example, the Sirens were said to be the children of either Melpomene or Terpsichore.  
Apollo, as a god of music and poetry, was often depicted as their leader and had children with a few of them.  
In one myth, King Pierus of Emathia in Macedonia had nine daughters whom he named after the muses.  Pierus believed that his daughters’ skills were greater than the muses.  They challenged the muses and were turned into chattering jays because of their hubris.  
The muses feature in other myths, obviously with Orpheus, and also with Thamyris, but I feel like those stories deserve their own post.

I have a question since you know a lot about Apollo; do you know the names of the Korybantes (the sons of Apollo and the muse Thalia), or any myths involving the Apollonic Muses (not the nine muses, I’m pretty sure they’re his daughters with one of them tho) 💕💕
Uh- okay, first, I’m not quite an expert on Apollo- though I do worship him, I haven’t been worshipping him long. Second, thank you for sending me an ask! I’m glad I seem intelligent enough for someone to ask this.
1. The Korybantes- from what I’ve read, are “tribes” of dancers who worship Cybele/Rhea, and are descended from Apollo and the Muse Thalia. There were several “tribes”, and the names I’ve found so far are the Korybantes Cabeiri, the Korybantes Euboioi, the Korybantes Samothrakioi. Is this what you were looking for?
2. I haven’t found any myths of the Apollonic muses, or the Mousai Apollonides, but I do know they symbolize the three notes on the lyre- Nete with the lowest note, Mese with the middle note, and Hypate with the highest note. Strangly enough there seems to be three other daughters of Apollo considered to be muses but I can’t find what they stand for (their names are Kephiso, Apollonis, and Borysthenis if anyone wants to try to attempt to figure them out). I do remember seeing something that listed an “Apollonis” as a source for something somewhere though.

So according to Greek mythology, there were three muses named Apollonis, Borysthenis and Cephisso. All three of them were characterized as the daughters of the sun god Apollo (also the god of music), and were also known as Nese, Mese and Hypate, names synonymous with the lowest, middle and highest chords of a lyre.
Given how Apollo’s parents were both involved with music (Jove especially due to having been a musician), any children Polly would have if he were to get married would be more likely to pursue the life of a musician. And if Capcom does decide to continue the symbolism with Greek mythology, it seems like Apollo would end up with at least a daughter...or three.
...You get where I’m going with this, don’t ya? ( ͡° ͜ʖ ͡°)
(As a bonus: the daughters are born in the order from lowest to highest chord of the lyre. So it would be Cephisso (the eldest), then Borysthenis (the middle daughter) and finally Apollonis (the youngest). And Apollonis would be the one to follow in her father’s footsteps and become a defense attorney, especially since her name means “of Apollo”.)

Top 5 Immortal Children of Apollo?
We don't have many options, the list of his immortal children is short, and most of them don't have myths about them. But here are my fav Apollo kids (immortal)
Asclepius - It's every parent's dream to have a child who becomes a doctor XD also non problematic in every way. No wonder he's daddy's favorite.
Hymenaeus - WINGS! Also, because he's the god of marriage hymns, I think he'd pester his dad to get married 😂 "Dad I want to sing at your wedding! Why don't you understand? Get married already!"
Aristaeus - who doesn't love a bee keeping, cheese making god? He's that dude who'd sip ambrosia amidst godly drama but lose his mind over the queen bee's death.
Ialemenus - the personification of lamentation. He's seems like the black sheep of the family 😂 making sad poem over small things like his lost handkerchief.
Musa Apollonides - literally "Muses of Apollo". They're 3 daughters named Apollonis, Borysthenis and Cephissso. They have no myths but. like.,,,, Apollo with his lil girls,,,niiiice (bc most of his kids are sons) They're said to be the personification of his lyre strings, which is why they're nicknamed Nete, Mese and Hypate (lowest, middle and highest string) (I know this makes the list 8 and not 5, but oh well)
