Easy vegetarian 'sausage' rolls Ingredient 👉Save this post for recipe. 👉Follow @ketodietrecipe6 to get dialy Keto tips and recipes. 👉 Complete Keto diet free E book, Link in bio 1 tbs olive oil 1 brown onion finely chopped 2 garlic cloves 2 tsp Vegemite 1 pinch dried chilli flakes *optional 200 g button mushrooms coarsely chopped 1 cup sweet potato grated 400 g canned brown lentils drained rinsed 2 tsp fresh thyme leaves 150 g colby cheese cut into 1cm pieces 2 sheets frozen puff pastry just thawed 1 egg lightly whisked 1 tomato sauce *to serve 1 pinch salt and pepper *to taste Method Preheat oven to 200C/180C fan-forced. Line 2 baking trays with baking paper. Heat the oil in a large frying pan over medium heat. Add the onion. Cook, stirring often, for 4-5 minutes or until soft. Add the garlic, Vegemite and chilli (if using) and cook, stirring, for 30 seconds or until aromatic. Add the mushrooms and cook, stirring often, for 5 minutes or until soft and the liquid has evaporated. Add the sweet potato and cook, stirring, for 2 minutes or until softened. Stir in the lentils and thyme. Season. Transfer to a large heatproof bowl. Set aside, stirring often, for 15 minutes to cool. Stir in the cheese. Cut each pastry sheet in half. Place one quarter of the sweet potato mixture in a log shape along one long edge of the pastry. Brush the opposite edge with egg. Roll up tightly to enclose. Repeat with the remaining pastry and filling. Cut each roll into 4 pieces and place, seam-side down, on the prepared trays. Brush the pastry with egg and use a sharp knife to score lines into the top of the pastry. Bake for 25 minutes or until golden brown. Place salmon skin side down in a deep tray. In a bowl, mix salt with water and mix well. The water should be as salty as seawater. Pour over salmon to cover completely and leave for 12 minutes to brine. Drain, place on paper towels and gently dry. Place salmon on a flat baking sheet big enough to fit the whole salmon, brush with oil, and scatter over zest and season with pepper. Bake for 12-15 minutes or until a fork can pierce easily through the flesh. I personally like it to be slightly rare in the middle, which is completely safe and even more tender. At the same time, thinly slice the peeled broccoli stalk and florets with a mandolin (carefully) into a large bowl. Alternatively, you can use a peeler for the stalk and coarsely chop the florets. In a serving bowl, whisk together mayonnaise, lemon juice, oil, maple syrup and salt and pepper to taste. Add broccoli, almonds, most of the herbs and gently mix with your hands. Adjust seasoning and top with shaved parmesan. Brown the chicken in batches, setting aside once golden. Fry the onion for 8 minutes until softened. Then add the garlic, chilli and ginger and fry in the other 1 tbsp oil for 1 min. Add the garam masala and fry for 1 min more. STEP 2 Stir in the peanut butter, coconut milk and tomatoes, and bring to a simmer. Return the chicken to the pan and add the chopped coriander. Cook for 30 mins until the sauce thickens and the chicken is cooked through. If you are using coals, wait until they turn white. If you are indoors, heat a griddle pan. Cut four pieces of foil that will easily wrap a piece of salmon and lay them on the work surface. Spread a little butter onto the centre of each piece of foil to stop the salmon sticking. Lay the salmon on top. Mix the soy with the honey and divide it between the parcels, pouring it over the salmon. Dot any remaining butter on top and then fold the foil around the salmon tightly to make a parcel. STEP 2Put the parcels on the barbecue or griddle and cook for 5-10 mins. Check one parcel to see how it’s getting along but be careful – it will be hot. Once the salmon is cooked, open the parcels and scatter some sesame and spring onion into each. STEP 3 Mix the cucumber with a few drops of sesame oil and season with a little salt. Add all ingredients into a food processor, except for the raspberries and icing sugar. Mix to a smooth batter. Place defrosted raspberries in a sieve and push down to carefully extract some of the juice out of the fruit. Set the juice aside. Remove raspberreis from seive and add the into the batter, mix carefully to combine and pour into muffin patty pans. Place in the oven and reduce heat to 170C. Bake for 25 minutes.
