Hello~
Not much going on in the garden yet, but it has been rainy so thought I'd share a few pics of what I've cooked the last week :)
I made tomatilla salsa~

I had never made it before a month ago and now, my partner asks I make it weekly :). I'd like to get some tomatilla plants growing this upcoming spring/summer season.

Veggie stock (which I used in rice, cabbage dishes and soup) made from the bits.

Cabbage, sausage and peppers w/ some garlic + black pepper and steamed w/ veg stock.
Even the most die hard cabbage naysayers in the house enjoyed this meal :)

Homemade chicken nuggets. We've been on a quest to replace quick meals with homemade versions, this one is similar to one I posted awhile ago, only I left out the potato for a carb-less version.

Stir-fried veggie and chicken rice. We used leftover rice from a night out to try someplace new for this one :)
I know it looks like fried chicken, it's not lol. It's apple fritters without the powdered sugar. (We're cutting unnecessary sugars out)

The recipe from this one's an old one, but honestly it's really good and simple. I will be sharing this recipe at a later date :)
I'm feeling A bit hungry now looking at these food pics. so I think I'm off to make something to eat again~

This past weekend I started baking again, and I decided that hey, if any of these modified recipes are successful, I should share them.
And on Wordpress, which is what my professional writer site runs on, I can get a recipe plug-in to make it easier. SO. I have done this!
My goal is to start modifying old favorite recipes to be gluten free and lower in sugar so that I can enjoy them again. Some of them I probably won't post (mods of recipes that I developed that were never public to begin with). But modifications of publicly available recipes that work and don't taste like evil! I am THERE with the sharing.
This one was a classic prune cake that I used to love when I was a kid. So. Check it out if you're interested.

Banana Bran Muffins (Low Sugar, high protein)

I’m always looking for healthy snack ideas for those 3pm cravings! Problem is most store bought snacks are filled with preservatives, sugar and seed oils. So I can up with my own recipe for a healthy banana bran muffin that is low in sugar, high in fiber and protein, but tastes like a delicious and moist banana cake! I hope you love this recipe as much as I do! Enjoy!
Ingredients
1/2 cup of salted butter, melted and cooled
1/4 cup of organic light brown sugar
1/4 cup unsweetened apple sauce
2 organic eggs (room temperature)
1 tsp of vanilla bean extract or 1 whole vanilla bean
1/4 tsp of organic ceylon cinnamon
1/4 tsp of organic nutmeg
1 1/2 cups of organic all purpose flour
1/4 cup flax seed powder / bran powder (or combination of both)
1 tsp of organic baking powder
1/2 tsp organic baking soda
1/2 cup of 0% fat plain greek yogurt
3 medium size ripe bananas
Optional
1/2 cup of organic dark chocolate chips/chunks
1/4 cup of crushed organic walnuts
Instructions
INSTRUCTIONS:
Line muffin tray with muffin liners (12 liners). Set your oven to bake at 350.
In a stand mixer, add the melted (and cooled) butter and the brown sugar and beat at medium speed until smooth.
If you are using vanilla bean extract, add in the 1 tsp now, or if you are using a vanilla bean, cut the the centre line down the entire bean, open it gently and using a spoon (or the knife) scrape the beans and add them all to the butter/sugar mixture.
Add in the 2 eggs, one at a time and mix until the vanilla bean and eggs are all combined.
In a seperate bowl, add the flour, flax/ bran powder baking powder, baking soda cinnamon and nutmeg and mix well with a whisk. Add the dry mixture to the wet ingredients and mix on low speed until combined. Stop and scrap the sides and bottom of the mixing bowl and mix again.
In a seperete bowl, smash 3 of the ripe bananas with a fork, and add to the mixture. Mix on low speed until combined.
Add in the 1/2 cup of sour cream and fold it in with a spatula until mixed. At this point, add the chocolate chips and crushed walnuts and mix of you want to add them.
Bake at 350 for 30 mins or until golden brown. Remove from heat and let cool before serving. It makes 12 muffins.

Every year without fail, my sister’s former classmate will deliver a box of mooncakes to our house. This year it’s Jade Signatures Fortune Classic Gift Box (富丽敦福康礼盒) from the award-winning Jade restaurant at The Fullerton Hotel Singapore. Enclosed inside a long red box with flowers and peacocks imprinted, are four pieces of Low Sugar White Lotus Seed Paste with Single Yolk Baked Mooncakes (低糖单黄白莲蓉月饼). Will update this post once I had a chance to eat it.

Finally got the time to try a piece of this Low Sugar White Lotus Seed Paste with Single Yolk Baked Mooncakes (低糖单黄白莲蓉月饼). Sliced and took out a quarter of the mooncake and the egg yolk is perfectly positioned dead centre. The yolk is glossy but not dripping oil though upon lifting the whole mooncake, the kitchen towel is stained with oil. The lotus seed paste is silky smooth and just sweet enough which is what my family desired.
