This is a tea that is generally hidden in a box in my tea drawer so I rarely end up thinking of it while staring down at all my tea.
My decision wheel doesn’t forget, though, so it came up as the tea of choice today!

"Formosa #18"¹ from Yuchi, Taiwan. red tea² thats a hybrid of Indian Assam and various Taiwanese tea plants, its a Mi Xian³ red tea so it was quite sweet and fragrant like honey, One of my favorite teas ive tried. :3c
the scent⁴ the dried leaves have is one of my favorite smells⁵

footnotes
1. Name of the tea, i bought it from the Red Blossom tea company store in San Francisco when I visited, i have previously bought online from them and i like their teas and service, ive also previously had their "Formosa #20" which i prefer and will get once this runs out, its a little more fruity, apricot if i had to pick one
2. for those not aware, of the true teas that are leafs from the Camellia Sinensis, there is red, green, white, and black tea. what we often call black tea in the west, is what in china they would call red tea, we name it for the color of the leaves, as oppsed to in the east where it is named for the color of the drink, the term black tea as used in chinese tea, refers to puerh tea, a tea type mostly loved for how it ages, and is often sold by its year unlike its other teas
3. term that translates to "honey fragrance" usually implies tea has not been treated with pesticides and has allowed for bugs to bite the tea, as the leaves heal from injury they create new chemicals to ward off bugs and create a stronger new leaf. this gives it a sweeter, honey life aroma and taste
4. the unsteeped leaves have a lovely raisiny sweet scent, and im not much a fan of raisins but its the closest thing i can compare it too, its more complex then i described but im not good at scent and taste notes
5. the tea itself is also lovely, has an open warm scent, besides the honey i sense light fruity notes, like the skin of an peach or apricot, hopefully i can describe better as i progress into tea

After a mission…
Dick: I can’t wait to go home, have a bowl of cereal, and go to sleep.
Duke: Lucky, I have patrol in like, two hours. No sleep for me. What’re you going to do when you get home, Jason?
Dick: Wait! Let me guess. Crack open a beer, order in Chinese food, and fall asleep on the couch watching a gritty action movie.
Jason, fully planning on having a lavender scented bubble bath while drinking vanilla earl grey tea and watching Pride and Prejudice: … Something like that.

Started at 96°C for 10s.
And then I forgot it on the table and over brewed it. So much darker! Still drinkable but a very different beast. 😂

How does fermentation affect the quality of Korean red ginseng tea (Jin-Gul)?
Fermentation plays a significant role in the production of Korean red ginseng tea (Jin-Gul), and it can impact both the flavor profile and potential health benefits of the tea. Here are some ways in which fermentation affects the quality of Korean red ginseng tea:
Enhanced Bioavailability: Fermentation can potentially enhance the bioavailability of certain bioactive compounds in ginseng. The process may break down complex molecules into simpler forms, making the beneficial compounds more accessible for absorption by the body.
Changes in Flavor and Aroma: Fermentation can impart changes to the flavor and aroma of Korean red ginseng tea. It may develop deeper, richer, and more complex notes, leading to a more robust and enjoyable taste profile. The specific characteristics can vary depending on the fermentation method and duration.
Increased Antioxidant Activity: Fermentation has been linked to increased antioxidant activity in some foods. Antioxidants play a crucial role in neutralizing free radicals in the body, and enhancing the antioxidant content can contribute to the potential health benefits of Korean red ginseng tea.
Potential Probiotic Effects: Some fermented products may contain probiotics, which are beneficial bacteria that can positively influence gut health. If the fermentation process involves the activity of specific bacteria or yeast strains, it may introduce probiotic elements to the ginseng tea.
Preservation and Shelf Life:Fermentation can act as a natural preservative, helping to extend the shelf life of the ginseng tea. This can be beneficial for both producers and consumers, ensuring the tea maintains its quality over time.
Unique Characteristics of Fermented Ginseng:Fermented ginseng products, including tea, often exhibit unique characteristics that distinguish them from non-fermented counterparts. This distinctiveness can be appealing to consumers looking for novel and refined flavors.
It's important to note that the specific effects of fermentation on Korean red ginseng tea can vary based on the fermentation process employed by different producers. Traditional methods, as well as modern techniques, may be utilized in the production of fermented ginseng tea. Additionally, individual preferences for taste and aroma can influence the perception of quality in fermented ginseng tea.
