Sooooo hi, my depression really got to me and my fiancé and I had a COVID scare where my anxiety really kept me from doing ANYTHING until I found out the results (negative thankfully).
Today I weighed myself (241lbs) and set some goals for the coming year.
End of January: 226 (based on losing 10lbs water weight the first week and 2lbs a week until July and 1lb a week after that).
End of February: 218
End of March: 210
End of April: 202
End of May: 196
End of June: 188
End of July: 184
End of August: 180
End of Sept: 176 (goal weight/wedding at the end of the month)
End of October: maintain 176 and do 5 assisted pull ups.
End of November: maintain 176 and do 10 assisted pull ups.
End of December: maintain 176 and do 1 unassisted pull up.
I know the 2lbs a week is a stretch but I’m going to try really hard for it. Going to do p90x classic schedule. When that’s done I’ll do Insanity and p90x2 after that.

Day 1 of Phase 3 of P90x2!!!
The warm-up felt like the workout! 😳
This was over 60 mins! I don't normally do this long of a workout (I try to stick to 30 min workouts) but I made a commitment this year and I'm sticking to it!
It was a mixture of strength and plyo for the lower body and it went fast! Not long breaks to catch your breath, get some water, or take a minute to die!
In fact, I had just about had it when I saw that I only had 15 minutes left! I told myself that those 15 mins included a nice cool-down so it was probably more like 10 mins of work. If I could do anything, I could finish this!
And I did! I left it all on the floor but that's what we're supposed to be doing every day! Giving it our best, pushing just a little bit further, and rejoicing when we succeed!
So everyone give me a 🖐️ if you succeeded today!!!

Blueberry Chocolate Birthday Truffle Balls
There’s no better way to celebrate a milestone birthday (or any birthday, really!) than with a sweet treat.
In honor of Shakeology’s 10-year anniversary/birthday, we created these Birthday Blueberry Chocolate Truffle Balls made with Chocolate Shakeology. (You can sub in Chocolate Vegan Shakeology if you prefer).
Shakeology Birthday Blueberry Chocolate Truffle Balls

In honor of Shakeology’s 10-year anniversary/birthday, we created these Birthday Blueberry Chocolate Truffle Balls. 
1 oz. freeze-dried blueberries
2 scoops Chocolate (or Chocolate Vegan) Shakeology
¼ cup almond flour
1 medium cooked white sweet potato, cut into chunks
¼ cup reduced-fat (2%) plain Greek yogurt
2 Medjool dates, pitted, chopped
1 tsp. pure butter extract (optional)
¼ cup unsweetened cocoa powder
Place blueberries, Shakeology, and almond flour in food processor; pulse to blend, or until blueberries are finely ground. 
Add sweet potato, yogurt, dates, and extract (if desired); pulse to blend. 
Place cocoa powder in a small bowl. Scoop 1 Tbsp. of blueberry mixture and roll into balls.
Place balls in bowl, rolling in cocoa powder to coat. 
Freeze-dried fruit can be found at your local supermarket (Trader Joe’s has a great selection) or purchased online. No blueberries? Try a different freeze-dried fruit in the same amount, like bananas, dragon fruit, or strawberries.
Substitute freeze dried raspberries for blueberries.
Can’t find white sweet potato? You can also use yams. White sweet potato lends color to the truffle balls, but you can also use your meal-prepped sweet potato.

Butternut Squash Mach & Cheese
Prep Time:15 minutes  Cook Time: 1 hour Total Time: 1 hour 15 minutes Servings: 10 servings, about 1½ cups each 
Ingredients
1 lb. dry whole wheat macaroni
1 tsp. olive oil
1 medium onion chopped
2 medium red bell peppers chopped
3 cups cubed butternut squash
1¾ cups low-sodium organic chicken broth
1 cup low-fat (1%) milk
2 Tbsp. low-fat (1%) plain Greek yogurt
1 cup shredded Gruyere (or Swiss) cheese
1 cup shredded sharp cheddar cheese
Sea salt and ground black pepper (to taste; optional)
Nonstick cooking spray
Finely-chopped fresh parsley (for garnish; optional)
Instructions
Preheat oven to 375° F.
Cook macaroni according to package directions. Drain and set aside.
Heat oil in large nonstick skillet over medium-high heat.
Add onion and bell peppers; cook, stirring frequently, for 4 to 6 minutes, or until onion is translucent. Set aside.
Combine squash, broth, and milk in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to medium; gently boil for 22 to 25 minutes, or until squash is tender.
Place squash mixture in a blender or food processor; cover with lid and kitchen towel. Blend until smooth.
Combine squash mixture, macaroni, onion mixture, yogurt, and cheeses. Season with salt and pepper if desired; mix well.
Place macaroni mixture in a 13 x 9-inch ceramic or glass baking dish that has been coated with spray. Bake for 25 to 30 minutes, or until sauce is bubbling.
Garnish with parsley if desired.

Pumpkin & Red Lentil Soup
Total Time: 45 min. Prep Time: 10 min. Cooking Time: 35 min. Yield: 6 servings
Ingredients:
2 tsp. olive oil
1 medium onion, chopped
2 cloves garlic, finely chopped
2 cups cubed pumpkin (or butternut squash)
1 cup dry red lentils
6 cups water
1 tsp. ground ginger
1 tsp. ground cumin
Cayenne pepper (to taste; optional)
Sea salt and ground black pepper (to taste; optional)
Preparation: 1. Heat oil in large saucepan over medium-high heat. 2. Add onion; cook, stirring frequently, for 5 to 6 minutes, or until translucent. 3. Add garlic; cook for 1 minute, or until tender. 4. Add pumpkin, lentils, and water. Bring to boil. Reduce heat; gently boil, covered, for 20 to 25 minutes, or until pumpkin is soft. Remove from heat. 5. Place soup in a blender or food processor, in small batches; cover with lid and kitchen towel. Blend until smooth. 6. Return soup to sauce pan over medium heat. Add ginger and cumin. Season with cayenne, salt, and pepper, if desired; cook, stirring constantly, until soup is hot. 7. Ladle soup into 6 serving bowls.

Roasted Cauliflower Steaks w/ Fresh Gremolata
Total Time: 50 min. Prep Time: 15 min. Cooking Time: 35 min. Yield: 4 servings, 1 cauliflower steak each
Ingredients:
1 large head of cauliflower
4 tsp. olive oil, divided use
½ tsp. sea salt (or Himalayan salt), divided use
½ tsp. ground black pepper
2 Meyer lemons (1 sliced into rounds, 1 finely chopped (including peel))
¼ cup finely chopped fresh flat leaf (Italian) parsley
1 medium shallot, finely chopped
1 clove garlic, finely chopped
Preparation: 1. Preheat the oven to 450° F. 2. Trim 1-inch off end of cauliflower, leaving stem intact. Cut cauliflower into four ½-inch thick slices. 3. Place cauliflower on a large baking sheet. Drizzle with 2 tsp. oil. Season with ¼ tsp. salt and ¼ tsp. pepper. Top with lemon slices. 4. Bake for 20 minutes. Turn with a spatula. Some background info
For the past decade I’ve had a love/hate relationship with health and fitness. I spent a lot of 2010 semi trying to lose weight and get fit. I ran my first warrior dash and roughly starting counting calories. I really didn’t start taking it seriously until 2011. From 2011-2013 I had lost 60 pounds (250 down to 190). Within that time frame I had gone through a lot of Jillian Michaels dvds, moved up from there to doing p90x (my favorite) and insanity. I had also picked up running and ran my first half marathon in Nov of 2012.
A lot of things happened in 2013-2014. I started dating someone who was not good for me and my anxiety and depression was the worst it’s been since high school. The only good thing to come out of that was going back to school and going into therapy. From 2014-2016 I mainly focused on my mental health and not physical.
Fall of 2017 I started up again with trying to lose weight. Started at 240 and got down to 215 in about 3 months. I was doing very well until I moved in with my fiancé and started a new job in spring of 2018. With the complete change of everything I couldn’t get myself to do much. It was all too much at once.
Summer of 2019 I gave it a shot again. I did whole 30 and started biking 3 days a week to and from the train station. On my days I didn’t bike I usually did a chest and back routine or a shoulders and arms rountine from p90x. I did really well with that. While not losing as much weight as I had wanted, I felt great. Once it started getting cold again I picked up p90x (lean routine) and did that twice. By February 2020 I advanced to p90x2. I was doing things I hadn’t been able to do since 2012. I was really doing amazing.
Of course when things are going great life likes to throw things at you. And it threw the pandemic at all of us. I lost my job and a week later my cat (my first pet) died. I spiraled into a deep depression. By June I was doing better and decided to redo the attic space as a gym. By August I was done. Once again some crap happened and now I’m starting over once again.
The point of this blog is to hold myself accountable and hopefully I’ll get some followers to help encourage me to keep going.
