Ricotta
Texture is spot-on.
1 package of firm tofu
1/2 of a lemon
4 tbsp of nutritional yeast
1 spoonful of minced garlic
1 tbsp of olive oil
basil
salt
pepper
Squeeze your tofu to get some of the excess water out (you don't necessarily need to press it unless you want to). Put tofu into a bowl and mash it up with a fork. Add the rest of your ingredients and mix. Easy peasy.

Spinach, Ricotta, and Broccoli Savory Cake
Ingredients:
• 250 grams of all-purpose flour
• 1 packet (7 grams) of instant yeast
• 200 ml of warm water
• 2 tablespoons of olive oil
• 1 teaspoon of sugar
• 1 teaspoon of salt
• 200 grams of ricotta cheese
• 150 grams of fresh spinach, blanched and chopped
• 100 grams of broccoli florets, blanched and finely chopped
• 2 tablespoons of fresh parsley, chopped
• 1 teaspoon of black sesame seeds (optional for garnish)
• Salt and pepper to taste
Instructions:
1. In a large bowl, combine the flour and instant yeast.
2. Add the warm water, olive oil, sugar, and salt. Mix until a soft dough forms.
3. Knead the dough on a floured surface for about 5 minutes until smooth.
4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.
5. In a separate bowl, mix the ricotta with the blanched spinach, broccoli, and parsley. Season with salt and pepper.
6. Once the dough has risen, punch it down and roll it out on a floured surface into a circle that can fit your greased cake pan.
7. Spread the spinach and ricotta mixture evenly over the dough.
8. Roll the dough up like a Swiss roll and then join the ends to form a ring.
9. Place the ring in the greased cake pan and let it rise for another 30 minutes.
10. Preheat the oven to 180°C (356°F).
11. Brush the top of the cake with a little olive oil and sprinkle with black sesame seeds, if using.
12. Bake for 30-35 minutes or until the cake is golden brown and cooked through.
13. Let it cool slightly before cutting into slices and serving.

A very vegan dinner: stuffed shells with a tofu ricotta
I legit have never made stuffed shells or tofu ricotta but daaaamn! Won't be buying expensive vegan ricotta ever again! Holy shit! This was so fuckin good. I couldn't tell the difference between this and regular ricotta.

Baked Ziti Ricotta
Probably should've used a bigger pan! Learn from my mistakes.

1 box of penne
1 batch of my ricotta recipe
1 jar of pasta sauce
1/2 of a bottle of Miyoko's liquid mozzarella (feel free to use less)
Optional: fresh herbs like oregano or rosemary, crushed red pepper, mushrooms, Italian sausage
Cook your pasta according to instructions on the box. In the meantime, make a batch of ricotta. In a baking dish, go ahead and pour about half of the pasta sauce into it. Once the noodles are cooked, strain and pour into the baking dish. Layer with your ricotta and then the rest of the pasta sauce. Pour the liquid cheese on top and bake in the oven at 500 degrees for 10-20 minutes (this depends on how much cheese you use- just a little bit, then 10 minutes should be fine; half of the bottle like I used, then closer to 20 minutes). Will be extremely hot so let cool before enjoying!

Negli ultimi anni l’offerta è aumentata e possiamo facilmente reperire nei negozi bio e negli shop online prodotti interessanti, molti dei quali genuini e davvero buoni. Realizzare in casa, però, una ricotta di mandorle crudista è un modo per avere facilmente a disposizione un alimento molto nutriente e salutare.
