Servings: 8 slices - 55kcal/1.2g protein per slice
1 tsp pumpkin pie spice
2 tsp cinnamon
½ tsp salt
2 tsp baking powder
1/3 cup flour, such as spelt, oat, white, sorghum, or almond
1/3 cup sugar of choice or xylitol
pinch uncut stevia OR 2 extra tbsp sugar
1 15-oz can pumpkin puree
¾ cup + 2 tbsp milk of choice
2 tbsp oil, or omit and increase milk to 1 cup
1 tbsp flaxmeal OR 2 tsp cornstarch (can be omitted if pie will be served in a bowl)
2 ½ tsp pure vanilla extract
1. Preheat oven to 400 F, and grease a 10 or 9-inch round pan.
2. In a large mixing bowl, combine first 7 ingredients, and stir very well. In a separate bowl, combine all liquid ingredients with the flax, and whisk.
3. Pour wet into dry, stir to combine, then pour into the pan and bake 35 minutes. (It’ll still be gooey after baking, but that’s ok.)
4. Allow to cool completely before transferring uncovered to the fridge to “set” for at least 6 hours before trying to slice.
Mix the flour and boiling water in a large bowl with a fork. Let the dough cool a bit for a few minutes, then knead it into a ball and wrap with plastic wrap, leave it to rest for about an hour
Divide the dough into 12 even pieces. Roll into a 1/4 inch (1/2 cm) thick circles, brush with 1/2 teaspoon oil, season with salt and pepper, sprinkle with 1 teaspoon of green onions. Roll each circle into a tube and stick both ends together to form a disc. Roll them into 1/4 inch (1/2 cm) thick circles
Heat the remaining oil in a skillet. Fry the cakes over medium heat for about 4 minutes on each side
The recipe is for 3 servings (4 cakes per one), since making just one is pointless, so you can give some of them to someone or save for another time :))🌸
> chamomile tea helps with a bloated stomach (you can also use it as a steamer if you have a cold, just put it the in a bowl, put a towel over your head and inhale the steam for a few minutes)
> green tea boots your metabolism and keeps you awake
> lavender tea is good for insomnia or anxiety
> instant soups can be helpful if you’re craving something savoury
> if you’re tired of drinking plain water, make it fancy with some lemon juice or mint leaves
> freeze lemon water or tea and suck on it if you’re craving something
edit: part 2 is out, also wtf thank you for all the support <3
