I think you're being a little uncharitable to Elizabeth, remember she's a 20 year old leaving home for the first time, it's no surprise she's excited to finally get away from her family. Also, during the course of the novel she's become increasingly aware of her family's vulgar behaviour, so it's probably becoming more grating over time, especially when she has a fiance around who makes her ultra aware of it. It's like watching a movie you love with your conservative parents and suddenly realizing how much swearing there is in it...

In addition, Elizabeth never really considers class, she considers behaviour, and I don't think she's suddenly changed. She dislikes Darcy, wealth, rank, and all, when she thinks that he is rude. She is pretty into Wickham and knows his lowly background. She loves the Gardiners and they are in trade, so I don't think she's on a high horse here at all. She's just getting really tired of her mother and aunt (and probably her father, Mary, and Kitty) being embarrassing.

I mean, just read the Netherfield Ball scene again, she wanted to melt into the floor! Even Jane and Bingley only lasted a year within walking distance of the Bennet family.

Nugget is fairly quiet and well-behaved for a kid, and because he's not overly noisy and doesn't fuss or throw tantrums often his caretakers aren't fully aware of the full range of sounds he can make. Bird noises (peeping, cooing, chirping, and the occasional squawk) are the most common they'll hear out of him. He can do things like hiss, growl, and snarl, but never really has any reason to do so. He can't roar yet, but he also hasn't really had a need to try, so it's a skill he's not likely to develop any time soon. One day, though, his vocal cords will be developed enough to handle human languages, and it's going to be a massive shock to everyone around him when he starts speaking articulate sentences seemingly out of nowhere.
