花山（宮城県栗原市）の蕎麦と岩魚と舞茸

この秋は、本当にいろんなところに行く機会に恵まれました。なかでも花山（宮城県栗原市）は4〜5回は行ったと思います。花山の良いところはあげればキリがないんです。どの土地でも良いところを考えると「食」と「景観」、あるいは「歴史」「文化」あたりが思いつくのですが、分かりやすいところだと「食」と「景観」だと思います。 花山の食は、まさしく地の利をめいっぱい享受しているのが良いところでしょう。 栗駒山から鬼首にいたる火山活動が生んだ急峻な地形と、一迫川がつくった谷間上の地形とは、下流部と比べたら冷涼で、今や和食の一角を担う食を美味しくいただくことができます。 たとえば蕎麦。 冷涼な地域であることに注目してはじまった栽培が、美味しい蕎麦を提供する店舗がいくつもある地域を生みました。 写真は「山菜茶屋ざらぼう」のもりそば。 ふつう盛でも十分な量なので、こちらに天ぷらをつけても山菜茶屋の名の…
