At his restaurant Central, in Lima, Virgilio Martinez has been quietly creating similar works of art from an edible clay called chaco. It's usually cured with salt, to make a sauce to mellow the sharp, bitter flavour of just-harvested potatoes and, according to Virgilion is 'an ingredient that has helped spawn over 50 ideas. Some were good, some just OK, others didn't work at all.' Those good ones have helped Virgilio to a @beardfoundation award nomination. Good luck Virgilio! Delicioso Kapchi de habas con setas en el pueblo de Lucre - Cusco. Nos contaron en el pequeño restaurant/bodega donde las comimos que estas Setas las cosechan en las montañas y crecen donde caen un rayo. Efectivamente estos hongos reaccionan al Galvanotropismo que hace que el rayo active la esporas formando los micelios del hongo. #materiniciativa @materiniciativa (en Lucre, Cusco, Peru)
