Having to look for bright spots a lot these days. Murph is always mine. First boat day was July 10! (Way too late in my opinion!) And it was a gorgeous day for it! Almost no wind and so muggy the water felt great. As you can see, Murph was very much a part of things. He just loves the lake so much and is never more well behaved than when he is on the boat. I actually managed to swim quite a bit - it was almost like physical therapy for me. And I could kneel on the SUP board, not quite recovered enough to stand yet. The day after my incisions were very sore but not in a bad way. We are never more happy or at peace than when we are on the lake. It’s just a healing place. Slowly but surely, Lillie has been slowing down and wandering off on walks. Then she couldn’t keep up at all. Then she went blind a month or so ago. Walks were out of the question but we still wanted to include her. We kept meaning to look into a solution, but it’s been so chaotic we kept forgetting. Until our neighbor @cozylife1 asked where Lillie was and said she was surprised we hadn’t bought her a stroller by now 😆 I’m so glad she reminded us! Husband was on the case and quickly found something that would work for her during walks and for him while doing yard chores. It’s perfect! I thought we’d have to train her to sit in the wagon. I mean, most old and blind dogs won’t just settle in for a shaky ride. I read that it’s good to take blind dogs to a large, open area so they can still feel safe to run and play. So we took Lillie to the park. It’s true! It works! She trotted around a little bit like she used to and seemed to feel freer! Earlier this summer, Lillie started having a major eye issue that the vet can’t figure out. Her eye is filled with blood. She’s not suffering. But she’s now blind. (The other eye has a cataract.) I’ve seen her get lost in table/chair legs. Constantly run into things. So we are being extra good to the old girl, because she deserves the best. Well, it’s not perfect but it’s the first real thing I’ve made since surgery! It took me all afternoon because I have to rest between each step of the recipe but that’s ok. I did it! This is a Grilled Lemon 🍋 Chicken Avocado Orzo Salad with a Honey 🍯 Mustard Bacon Dressing - and it’s vegetarian of course! It’s the marinade/dressing that makes it great. Olive oil, honey, Dijon, lemon, balsamic vinegar, garden herbs (rosemary, thyme, basil, oregano), shallot, garlic. Divine! The @gardein chicken gets marinated in that and then grilled. Roast or grill a red pepper and chop it. Combine that, the @gardein chicken, and cooked orzo, smoked cheddar, cherry tomatoes, and cooked @morningstarfarms bacon with the remaining dressing. Serve it over lettuce topped with goat cheese. Yummm. Bluegrass Goes Pink was so amazing! I don’t wear pink, because I am representing ovarian cancer (teal), but it was great to see the sea of pink and all the remembrances and survivors! And the music? Another edition of #imadeitvegetarian 🌱 This is a beef stew with mashed potatoes - for the stew I used @gardein beefless tips, which is one of our favorite substitutes! The stew is simple: brown the beefless tips, sauté mirepoix, add a little flour and tomato paste, Marsala wine (never cooked with that before!)🍷 broth, a little soy sauce, fresh thyme and parsley. The potatoes are just potatoes 🥔 and butter 🧈 and a little cream🥛 Yum yum comfort food!
