Repost @tativegancooking 𝐆𝐫𝐞𝐞𝐧 𝐁𝐞𝐚𝐧 𝐁𝐚𝐬𝐢𝐥 𝐒𝐨𝐮𝐩 when making this soup I was not sure whether I was going to love the final flavor but wanted to give it a try, and I’ve got to say it was so easy to make and so delicious that I will add it to my list of favorite soups! 📝What you’ll need: ▪️8 oz green beans ▪️1 potato, peeled and sliced ▪️10 large basil leaves ▪️5-6 cups water ▪️7 oz tofu, drained ▪️2-3 garlic cloves, minced ▪️1/3 onion, chopped ▪️2 teaspoons of non-dairy butter, optional ▪️1 tablespoon pistachios or almonds, chopped . In a saucepan, add butter and onion and cook for 7 minutes, add garlic and continue cooking for another minute, I let my onion and garlic get a bit brown to give it that roasted like flavor . Add water, potatoes, salt and pepper to the same saucepan and bring to a boil. Cook potatoes for 10 minutes or until tender, add green beans and basil and continue cooking for another 5 minutes or until tender. Adjust seasoning. . Transfer to a food processor and blend until smooth. Adjust seasoning to taste and serve with chopped pistachios or almonds .
