The boy was doing more cooking this weekend. Roast chicken from the Jaime Oliver cookbook was a big success. The gravy …. Not so much but my snowberry sauce from the Skyrim cookbook was so good I was glad the gravy failed. The mash is potato and celeriac. Not pictured was the roast asparagus eaten while trying to make the failed gravy

We had nice weather today with clear light, so there was some quick cooking (recipes to follow when written-up) and more Middle Kingdoms food pics.
Here are celeriac strips with chopped bacon, oven-roasted in spicy lard and served alongside peppered breast of pan-fried chicken...
...and oatcakes done two ways, one without leavening but with beaten egg-white folded into the batter and done on the griddle, the other with buttermilk and baking-soda leavening done in the oven at the same time as the celeriac, one shelf down, to save energy.
After that, they were served up savoury with wine and sweet with milk...
The savoury accompaniment is coarse country sausage, horseradish sauce and some of the chicken which had escaped my attentions...
...and for the sweet, simple butter and honey.

Creamy Roasted Celeriac Spaghetti with Prosciutto
150g celeriac, peeled and cut into small cubes
150ml milk
1 garlic clove, roughly chopped
2 sprigs thyme
1 tbsp butter
1/2 tsp apple cider vinegar
200g spaghetti
4 slices of prosciutto, torn into pieces
1. Put the celeriac, milk, garlic, thyme and butter in a saucepan and bring to a gentle boil. Turn right down to a simmer and cook for 20 mins until the celeriac is soft.
2. Meanwhile cook your pasta in a large pan of salty water until al dente, saving a mug of pasta water once done.
3. Heat a little oil in a frying pan and add your prosciutto, cook until nice and crispy.
4. Blend the sauce until super smooth, add the vinegar and season to taste. Adding a little more vinegar if needed.
5. Mix the sauce into the pasta with a little of the pasta water and plate up with the crispy prosciutto on top and a drizzle of olive oil.
Serves 2
