If I travelled back in time to introduce a medieval peasant to a modern concept I would simply pick baking powder. 

Me: --so basically, while we still have yeast, it’s not as necessary anymore!  Peasant: I don’t understand. You eat your bread unleavened?  Me: Well, sometimes? But other times, this acts as a yeast and leavens it. It’s less tangy, but it’s still good, especially for flavor profiles that need less tang, like something sweet.
