My Head Canons (I forgot to put on the original post): Illagers:

While there are many version of the Illager, they will always have some variation of gray skin, sharp teeth, and sharp eyes.

An Illager's magic is different from Witch magic but can be compatible

For some Illagers their teeth curve or over grow, this is quite common. You might see Illagers helping their other members file down their teeth, sharpen them, or fashion them with gold or silver caps

Illagers have very broad, curved noses and uniquely shaped eyebrows (which are normally very bushy and split into two ends). They are very proud of their curved, sharp features

Illager are know for being very tall, some tower over even the tallest humans and some even reaching Endermen height!

Unfortunately a lot of good and decent Illagers have been over shadowed by the truly curled and most despicable of their kind, giving then the stereo type that they are "Evil and beast-like"

Illager blood can very in color but they can range from redish-purple, wine, and dark purples with a red shine

Villager:

I wanted my Villagers to not look as human, look more like a separate species. This is why they will always have lamp-like ears, rectangular pupils, and a secondary, lighter, complementary color to their irises

Villagers have very curved, round nose bridges, with a more sheep-like end to their nose and while it is common to see unibrows among Villagers it is also just as common to see more separated brows (This varies on the biome, diet and culture)

Villagers also sport very square-like Hippo teeth with small canines. While they are omnivores, in a lot of practices and cultures they will mainly have a plant-based diet

While in game there is a lot of violence when it comes to Illagers and Villagers, in my headcanon it is more common to see Villagers treading with Illagers and Illagers providing protection to their farmlands. With Villager tipping the scale as they provide the food Illagers need. (This of course varies for biome to biome and culture as well!!)

Unfortunately there is a very negative view on Illagers which sometimes results in Villagers providing less goods for Illagers and Illagers having to leave or committing Raids on the village they protected

Villagers are a short race, with their tallest only reaching roughly 6'2 (187 cm), just a few inches shy of 2 blocks. They make up for this with very stocky or plump body types

Villager's is similar to Human blood but a bit thicker.

Witches:

As you can see by the chart Witches are far more colorful then both Villagers and Illagers, coming in shades of browns, yellows, and even greens

Witches also carry similar features to Villagers witch have some speculating that Witches and Villagers may be distant relatives of one another

Witches have lamp-like ears that are more pointed

Their eyes can come in many shapes but the most common are slanted, sleepy shaped eyes with their sclera (the whites of the eyes) always a darker, complementary color to the irises

One of the most notable features of Witches are their curled molars and sharp canines that they may bare at hostile mobs. While some think this may be more common due to their teeth it is very uncommon to see a Witch with protruding, overgrown, or crooked teeth. Like the Illagers Witches would have members of their coven help one another groom and file down each others teeth

Witches have very unique eyebrows, but it is more common for them to have unibrows.

Witches can be either sex doesn't matter

Witches stand roughly around human heights with their tallest being 7ft (213 cm)

Witch blood leans more to orange or rust color

Witch tend to keep to themselves, this can vary from coven to coven but Witches are known to be tricksters and to be wary of them

Extras:

All Illagers, Villagers, and Witches MUST have a "T" shaped marking that goes down the bridge of their nose and under their brows!

Examples:

Illagers have the best diversity with magic and are very attuned to the elements

Illagers, Villagers, and Witches can all have hair but it can range from uncommon to very rare depending on the race. Like for Illagers it is super rare (Unless they're a hybrid, Geomancer, or windcaller), Villagers it's just uncommon but can still happen, and for Witches it's a bit more common then you think. In some cultures hair can be seen as a curse or bad luck, while in others it's seen as good luck and a charm of sorts

Illagers, Villagers, and Witches can have offspring with each other, this can cause the child to either be very sick or super strong

Drew my sona as a Minecraft trader ^^ They travel around sell goods like wool, wheat, soup, etc. They're very small only standing at around 4'9 (144 cm) So maybe like a block and then some. They have a pet Moobloom and they love to wander.
