Roti Chevdo
Ingredients
5 chapatis,1/4 cup peanuts,2tbsp roPted chanadal (daria), 1/4 cup sev, 1/2 tsp red chilipowder, 1/2 tsp turmeric,1/2 tsp amchur, 1 tsp sugar powder, sait, 2 tsp oil
Method
1) Cut chapatis. Put chapatis in microwave proof plate or paper plate.
2) Microwave chapatis for 3 minutes, stir after every 1 minute. Make crispy.
3) Put oil, add peanut,dalia dal, salt,turmeric roast for 30 seconds.Then add crispy chapatis. roast for 2 minutes,stir after every 30 second.Add red chili powder, sugar powder, aamchur powder. Microwave for second.

Chole
Punjabi Masala
1 tbsp dry coriander (dhana), 1/2 tbsp cumin seeds (jeera), 3-4 dry red chilis, 1 cinnemon (taj), 3-4 cloves (lavig), 1 bay leaf (tamal patra), 1 big cardomom  (elacho), dry roast masala & grind it. Add 1/2 tsp amchur or anardana powder
Ingredients
1 cup chole (kabuli chana), 1/4 cup gram dal (chanadal), 2 potatoes, 2 onion,   3 ginger paste,tt omatoes, 1 tsp garlic paste, 1 tsp green chili paste, 2 tbsp coriander, 1/4 tsp turmeric, 1 tsp red chili powder, 1/2 tsp cumin seeds, 4 tbsp oil, 2 tbsp ghee, salt 
Method
1) Soak chole for 8-10 hours & chanadal for 2-3 hours. Boiled chole and chanadal. Crushed boiled chanadal.
2) Blench tomatoes & make purey.
3) Put oil,deepfry potato chips.
4) In the same oil,add ghee, add cumin seeds. Then add slice onion & roast it.
5) Add tomato purey, cooked it for 3-4 minutes. Then add punjabi masala. After 1 minute add crushed chanadal, turmeric,red chili powder,salt, boiled chole. Cook sabji at low flame untill oil release. Add potato chips & coriander.
     Serve with parathas, naan, bhature,kulcha,rice,roti etc.

Green Chole
Ingredients
1/2 cup black chana, 2 cup spinach (palakh), 1/2 cup coriander, 1/2 cup green onoin, 2 tbsp green garlic, 2-3 green chili, 1/4 tsp turmeric, 1/4 tsp garam masala, 1 tbsp ghee, 1 tbsp oil, 1 tsp jeera, 1 tbsp cream, salt
Method
1) Soak black chana 8-10 hours & boiled by adding salt.
2) Crush spinach, coriander,green onoin & green garlic. Make paste, it may be 1 cup.
3) Put ghee & oil,add jeera. Add green paste & cook it for 5-7 minutes, add salt (of paste).
4) Add boiled chana & cook it for 4-5 minutes,at low flame. Add garam masala, cream. Serve with roti, paratha,naan, rice etc.

Chapdi Undhiyu
Chapdi Undhiyu is also called ‘Tavo‘. Its famous dish in kathiyawadi.(saurastra). 
Ingredients
Chapdi
2 cup wheat flour (thick), 1 tbsp cumin seeds, 6 tbsp ghee or oil, 1/2 cup milk, salt, oil (for deep fry)
Method:
Make stiff dough from above ingredients. Make chapdi (thick puri) with hand. Deep fry chapdi in hot oil at low flame.
Undhiyu
Ingredients
1 potato, 1 brinjal, 2 onion, 1/4 cup green peas, 1/4 cup carrot, 1/4 cup udad dal, 4-5 tomatoes, 1 tbsp garlic paste, 2 tbsp dhanajeera powder, 1 tbsp red chili powder, 1/2  tsp turmeric, 1 tbsp green chili-ginger paste, oil, salt, 2 tbsp coriander
Method
1) Boiled udad dal.
2) Put 2 tbsp oil, add finely chopped potato, carrot, brinjal,green peas,add salt,turmeric,red chili powder, mix it well.Add 1/4 cup of water & pressure cook for 2 whistle.
3) Put 3 tbsp oil, add garlic roast for 30 seconds. Then add chopped onion, roast it for 1 minute. Then add tomato purey, cook for 3-4 minutes.Add red chili powder, dhanajeera powder, turmeric,green chili-ginger paste. Add boiled & crushed udad dal.
4) Add vegetables ,cook it for 4-5 minutes, add coriander.
Red Chutney
4-5 fresh red chili, 5-6 garlic cloves, 1 tomato (chopped), 1 tbsp jaggery. Crush all ingredients to make paste.
Tadka-  1 tbsp oil, 1/2 tsp mustard seeds,pour on chuntney.
      Serve chapdi with undhiyu, red chutney, green chutney (coriander, green chili), sprig onion & chas.

Cottage Cheese Sandwich
Ingredients
4-6 bread slices, 1/2 cup cottage cheese (paneer), 1/4 cup capsicum, 1/4 cup onion, 1/4 cabbage, 2 tbsp coriander, 1tbsp cream cheese or butter, salt, black pepper powder, 1/2 tbsp green chutney, butter

1) Mix finely chopped capsicum, onion, cabbage, coriander. Add paneer, cream, salt, black pepper
2) Apply butter on bread slice. Put stuffing and toast.
Serve with tomato sauce.

Ingredients
Sandwich masala 
8-10 clove (laung), 2 cinammon (taj), 1 tsp cumin(jeera), 1 tsp fenel seeds (variyali), 1/2 tsp black salt, 1/2 tsp salt
Crush all the ingredients.
Green Chutney
1 cup coriander, 1/2 cup mint leaves(pudina), 2-3 green chili, 1/2 tsp balck salt, 1 tsp ginger, salt, 1 tsp sandwich masala, lemon juice. Crush. Then add fresh bread piece, water if needed and crush
Sandwich
6-8 bread slice, 1 tomato (sliced), 1/2 cucumber (sliced), 1 onion (sliced), lettuce, 1/2 cup tomato sauce, cheese slice, 2-3 tsp butter

Method
1) Cut sides of bread slice
2) Apply butter on both the sides of bread. Apply green chutney on one side of the bread and tomato sauce on other slice.
3) Arrange veggies on one slice of the bread. Put cheese slice on it. Put another slice of the bread. Sprinkle besan sev on it.
Cut the sandwich and serve.

Dal Pakwan(Sindhi Breakfast)
Ingredients
For Pakwan
1 cup maida, 1/4 cup maida, 3 tbsp oil, salt, 1/2 tsp cumin seeds, oil(for deep frying)
For Dal
1/4 cup chanadal, 3/4 cup moogdaal, 1 tbsp oil, 1 tbsp jeera, 1 tsp amchur(dry mango powder), 2 green chili, hing, 1 tsp turmeric, 1 tsp red chili powder, 1/2 tsp garam masala, hing, 1 tsp dhaniya powder
For serving
onion,besan sev, chutney

Method
1) Making shift dough by mixing maida, salt, cumin seeds, oil, water. Rest it         for 10-20 minutes. Make small chapatis from dough and deep fry.
2) Boil chanadal and moogdal 
3) Put oil, add jeera, hing. Add green chili, dhaniya powder, red chili                     powder, amchur. Roast it for 30 seconds. Add boil dal, Add salt, mix well.         Smash dal. Cook it for 4-5 minutes. Add garam masala. If necessary,add           water.
4) Serve crushed pakwan in dal, adding tamarind chutney, onion, besan sev.

Tomato Curry Paste
Ingredients
5 tomatoes, 3 onion, 1 tsp ginger, 1 tsp pasley, 1 tsp sugar, 2 tsp red chili powder, 3-4 tsp oil

Method
1) Put oil. Add onion roast at medium flame. Add garlic, ginger, parsley (coriander). Cook onion still it fry. Then add tomato purey. Cook it, until oil release, like thick sauce. cool down.
    Fill in small air tight container as per requirement. You can store this paste about 6 months.
1) From above paste you can make punjabi sabji like mix vegetables, vegetable kofta, paneer sabji etc. During making punjabi sabji add kitchen king masala, garam masala, koya, cashewnut powder for making gravy.
2) You can use above paste as pizza sauce, add oregano, pizza-mix.
3) Used  this paste in making of biriyani vegetables.
4) You can also use this paste in making of pasta by adding oregano, mix-herb.

Green Peas Pancake
Ingredients
1/2 cup green peas, 1/2 cup rice flour, 1/4 cup besan (gram flour), green chili, 1 tbsp coriander, 1 tbsp curd, salt, oil
For Serving- Green Chutney
Method
1) Blench green peas. Crushed peas, coriander, green chili with curd.
2) Mix rice flour, besan, salt & peas paste. Add water to make batter.
3) Make pancake on pan, put oil, cook both side.
4) Serve pancake with green chutney.

Paneer Bhurji
Ingredients
2 tbsp oil, 1/2 tsp cumin seeds,(jeera), 3 tsp ginger, garlic, green chili paste, 2 onion, 1 capsicum, 2 tomatoes, 1/2 cup paneer (grated), 1/4 tsp turmeric, 1/4 tsp garam masala, 2 tsp red chili powder, 1/2 tsp dhanajeera powder, 1 tbsp coriander, salt
Method
1) Put oil, add cumin seeds. Add finely chopped onion, roast it. Add ginger,garlic, greenchili paste & roast it. for 2-3 minutes. Then add finely chopped capsicum & cook it for 2 minutes at medium flame.
2) Add finely chopped tomatoes, cook it. Add dry masala like turmeric, red chili powder, dhanajeera powder, salt, roast it.
3) When tomatoes cooked, add paneer, coriander, garam masala. Mix well.
4) At last add chat masala.
Serve this easy, tasty & quick sabji with naan, roti, paratha etc.

Minti Corn Crispy
Masala
1 tbsp dry mint (fudina), 1 tsp dry mango powder, 1/2 tsp garam masala, 1/4 tsp hing, 1 tsp black salt, 1-2 tsp red chili powder, 2 tbsp sugar powder crush it.
Ingredients
1 cup peanut, 1 bowl corn pahu, 1 cup besan, 1/2 cup coriander, 1 green chili, 1/4 tsp black salt, salt, oil for frying
Method
1) Crushed coriander & green chili, black salt.
2) Take besan, add salt, make batter by using coriander crush + water. You need almost 3/4 cup liquid to make batter.
3) Make bundi in hot oil by using bundi zara & deepfry crispy bundi.
4) Then deepfry peanut & corn pahu. Add masala immediately. Mix well.
Store in airtight container when tasty chevdo cool down. You can store this chevdo for 15-20 days.

Pizza-Sauce
Ingredients
5 tomatoes,2-3 onion, 1 tbsp garlic, 1 tbsp olive oil or butter, 1 tsp oregano, 1/2 tsp chili flakes, 1/2 sugar, 1/2 tsp cornflour + 1 tbsp water
Method
   Put oil, add garlic, onion roast it. Add chopped tomatoes or tomato purey cook it. Add oregano, chili flakes, salt, sugar. Crushed sauce when cool down.Put  sauce again in sauce pan, add cornflour slury. make thick sauce.
Toppings
 Bell-paper, onion, tomatoes,corn alopenoz, olives,
1/2 cup mozzerala cheese, 1/2 cup process cheese
   Put pizza-base in pan. Spread pizza-sauce, cheese, toppings. Sprinkle oregano, chili-flakes or pizza-mix, sprinkle oil. Put lid. Cook still cheese melt. Enjoy your home-made pizza.

Healthy Pancakes
Ingredients
1/2 cup samollina (suji), 1/4 cup oats, 1/4 cup rice flour, 1/4 cup broken wheat   (thuli), 1/4 cup gram flour (thick), 1/4 cup tomatoes, 1/4 cup capsicum, 1/4 cup onion, 2-3 green chili, 15-20 curry leaves (lemdo), 1 tbsp sambhar masala, 1/2 cup curd, oil, salt
Method
1) Mix samollina, oats, rice flour, broken wheat, gram flour, curd & make batter using warm water. Rest it for 30 minutes to 1 hour.
2) Then add salt, sambhar masala, finely chopped tomatoes, capsicum, onion, paste of green chili & curry leaves. Mix it well. Add water if necessary. Add soda-bia- carb.
3) Make pan-cake on non-stick tawa. Served with coconut chutney.
Curry leaves has highly anti-oxidant value, rich source of iron,& folic acid,lowers blood sugar, helps in digestion, protect from heart disease, prevents skin infection.
