Hiya! I'm an infernal felinekin looking for quick but yummy and nutritious, protein rich meals I can toss together for lunch and dinner. I'm living my best life eating pretty much just a pan fried protein + roasted veggies + honeyed fruit for dessert, and would love some more inspo. I'm big on sweet and spicy flavors, I love any white fish + salmon, shrimp, rabbit, venison, and beef (but not huge on pork or most poultry, though I'll eat eggs), and I don't tend to eat a lot of grains in general but will be willing to eat wild rice and whole grains as long as it's not the main part of my meal. I adore some good, hearty veggies, but most legumes don't really do it for me. Can't stand eggplant or tomatoes. Typically, I like my meals to feel both fancy and refined but also like I could really sink my teeth into it and taste the freshness of the kill. Think crisp and juicy textures? thank you so much!

RECIPE: Grilled Pork Tenderloin with Chimichurri (from Meal Prep Magic by Catherine McCord)
It was in Argentina where I began my love affair with chimichurri; a pot of it accompanied whatever meat we were eating. Just the thought of pairing it with pork tenderloin makes me giddy.
PREP TIME: 15 minutes, plus 1 to 2 hours for marinating COOK TIME: 15 minutes SERVES: 4 to 6
¼ cup (60 ml) Dijon mustard
½ cup (120 ml) apple cider vinegar
3 tablespoons light or dark brown sugar
8 cloves garlic, minced
⅓ cup (75 ml) plus 2 tablespoons olive oil
1½ teaspoons kosher salt
2 to 2½ pounds (910 g to 1.2 kg) pork tenderloin, fat and silver skin removed
½ cup (15 g) packed fresh cilantro
½ cup (15 g) packed flat- or curly-leaf parsley
1 small shallot, peeled
2 tablespoons red or white wine vinegar
2 tablespoons fresh lime juice
Pinch crushed red pepper
Freshly ground black pepper
Place the Dijon mustard, apple cider vinegar, brown sugar, half of the garlic, 2 tablespoons of the olive oil, and 1 teaspoon salt in a large zip-top bag. Squish the bag to mix the marinade. Add the pork tenderloin and use your hand on the outside of the bag to move the marinade around the pork. Marinate for 1 to hours at room temperature or overnight in the refrigerator.
To make the chimichurri, in a food processor, place the cilantro, parsley, remaining garlic, shallot, the remaining ⅓ cup (75 ml) olive oil, the red or white wine vinegar, lime juice, crushed red pepper, remaining ½ teaspoon salt, and black pepper and pulse until finely chopped.
Heat a grill to medium heat. Grill the marinated pork on several sides for a total of 14 to 15 minutes, or until the internal temperature is 135 to 140°F (55 to 60°C) when checked with an instant-read thermometer inserted in the thickest part of the meat. (Alternatively, you can use a cast-iron skillet to roast the pork. Heat over medium-high heat and add 1 tablespoon of olive oil. Sear the pork all over for a total of 6 minutes. Transfer the pan to a 400°F (205°C) oven and roast for 15 to 20 minutes.)
Allow the pork to rest for at least 10 minutes to allow the juices to settle before slicing. Use a sharp knife to cut pork on a bias into ½-inch (12 mm) slices and top with the chimichurri sauce.
Make sure not to overcook the pork. Pork should never be cooked to more than 135 to 140°F (55 to 60°C). You want the internal color to be light pink.
Make double the amount of chimichurri sauce to serve with fish, shrimp, chicken, or steak later that week.
TO ENJOY LATER The cooked pork can be cooled and refrigerated in an airtight container for up to 3 days. Enjoy at room temperature or warm for 30 seconds in the microwave. Store the chimichurri in an airtight container in the fridge for up to 5 days, or freeze in ice cube trays then transfer to labeled zip-top bags for up to 4 months.
PREP IN ADVANCE Place the zip-top bag of the pork in its marinade in the freezer for up to 3 months. When ready to cook, place the pork chops in the zip-top bag in the refrigerator to thaw overnight; cook as directed.

Salt and pepper to season

6 cloves garlic, minced
1/4 cup honey

1/4 cup water (or chicken broth)
2 tablespoons rice wine vinegar (or apple cider vinegar, or any white vinegar)
INSTRUCTIONS
Heat the grill or broiler in the oven to high. Just before cooking, season chops with salt, pepper, and garlic powder.
In a pan or skillet, heat the oil until it is hot. Chops should be seared until golden and fully cooked on all sides (about 4-5 minutes each side). Move to a platter and reserve.
Heat to a medium setting. In the same pan, melt butter while scraping away any browned bits from the bottom. Garlic is cooked till aromatic (about 30 seconds). Honey, vinegar, and water are added. Increase the heat to medium-high and cook, stirring periodically, until the sauce slightly thickens and reduces (approximately 3 to 4 minutes).
Add pork back into the pan, baste generously with the sauce and broil/grill for 1-2 minutes, or until edges are slightly charred.
Garnish with parsley and serve over vegetables, rice, pasta or with a salad.

Root Beer Pork Chops

Ingredients
   4 (1-inch thick) pork chops    3 (12 fluid ounce) cans or bottles root beer    salt and pepper to taste    1 cup beef stock    2 tablespoons brown sugar    1/2 teaspoon chipotle-flavored hot sauce    2 teaspoons Worcestershire sauce    1 pinch salt, to taste
Directions
   Place the pork chops in a dish; pour 2 cans of the root beer over the chops. Place in refrigerator to marinate at least 2 hours. Remove the pork chops from the root beer; season with salt and pepper.    Combine the remaining can of root beer, the beef stock, brown sugar, hot sauce, and Worcestershire sauce in a saucepan over medium heat; simmer the mixture until it reduces to about 3/4 cup. Set aside.    Preheat an outdoor grill for medium-high heat, and lightly oil the grate.    Grill the pork chops on the preheated grill until the no longer pink in the center, about 8 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Brush the chops generously with the reduction sauce and continue cooking for about 2 minutes more per side. Remove from grill and brush with any remaining sauce. Season with salt to taste before serving.

If you have been searching for an easy steak marinade, you will love this four-ingredient option! Simply mix Italian dressing, A1 sauce, Worcestershire sauce, and lemon juice together. Pour over steak in a Ziploc bag and let it do its thing for twenty-four hours. 
Tri Tip Marinade
Since not all steaks are created equal, you always need to have more than one type of steak marinade. There are so many different tri tip marinades you can try. However, our personal favorite is a balsamic marinade. Simply combine garlic, rosemary, ground black pepper, soy sauce, and balsamic vinegar together before placing in a Ziploc bag with the tri tips. It is best to let the meat marinate for at least three hours, but it will taste better if you can let it go for twenty-four hours. 
Mexican Chicken Marinade
This marinade says it is for chicken, but you can easily use it for turkey or pork chops too. Simply mix together olive oil, lime juice, minced garlic, cilantro, chili powder, salt, pepper, and cumin. Add the chicken, or other meat, and marinate for at least thirty minutes. We prefer to let the meat marinate for two hours, because the flavors have more time to intensify. 
Pork Chop Marinade
While you can use marinade for chicken to marinate pork chops, there are actual marinades you can use when grilling pork chops. Mix together brown sugar, soy sauce, pepper, and minced garlic. While most meats taste much better if you marinate them for longer periods of time, we don’t recommend marinating pork chops for longer than eight hours. Any acidic ingredients can cause pork chops to get mushy. 
4-Ingredient Chicken Marinade
If you are like us, the last thing you want to do is spend hours in the kitchen whipping up a marinade for dinner. You probably don’t even want to gather up too many ingredients either! Thankfully, we discovered this four-ingredient for chicken! Simply combine brown sugar, oil, soy sauce, and vinegar together before adding chicken and letting it marinate until you are ready to grill. 
Cajun Grilled Fish Marinade
There are so many marinades that are specific to the fish you are making, which can make barbecue time frustrating. Thankfully, this fish marinade can be used on any type of fish you happen to have ready and waiting for dinner. Mix together paprika, garlic powder, onion powder, thyme powder, cayenne pepper powder, salt and black pepper before applying it to your fish. Let the marinade sit for approximately thirty minutes before cooking the fish on the grill.

Mix it all & put the sliced pork butt in a ziplock bag with it for 6 hours
I used a ninja woodfire grill to grill them .. flip every couple minutes to get the char .. they came out amazing!!! Enjoy
