Vegan Burrito Bowls with Chipotle Roasted Cauliflower and Black Beans

I’m a big fan of bowl based meals, I don’t know what it is about putting dinner in a bowl that makes it more comforting but it always works. Burrito bowls are no different, especially when they’re as easy to make as these are! Seriously, the oven does most of the work and you’re rewarded with tons of flavour.
Personally I’d rather serve a good coriander and lime rice with Mexican foods but this is where me and Kenny differ - I love citrus flavours, he hates them. So we compromise with a nice wild rice mix. Add in a tasty guacamole, a cashew crema, and some fresh tomatoes and you’re good to go.
Chipotle Roasted Cauliflower & Black Beans
Ingredients
1 Medium Onion, sliced
2 garlic cloves, minced
1 medium cauliflower, cut into small florets
250g cooked black beans (or a 400g tin, drained and rinsed)
2 tbsp oil
2 tbsp tomato purée
1 tbsp maple syrup
1 1/2 tbsp chipotle chili paste
2 tsp Chilli powder
1 tsp oregano
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp salt
3/4 cup of vegetable stock
To finish
Fresh coriander
1 tsp red wine vinegar (or your favourite acid)
Preheat the oven to 200 degrees C (400 F). Mix all the ingredients together on a large tray. Bake for an hour, or until the cauliflower is cooked through and starting to char around the edges. Toss through the coriander and vinegar before serving.
Tips & Tricks - this has always been popular when I make it but today I had some left over chimichurri in the fridge so I used that to finish instead of the coriander and vinegar, worked brilliantly!
