Hahah, yes! Of course! Western fried eggs are cooked low and slow, while fried eggs in many Asian cultures are fried on high heat very quickly. The quick scorch creates lovely crunchy edges that are both yummy and texturally interesting.

Crunchy fried eggs would get you kicked out of Gordon Ramsay’s kitchen, but are the key to my heart.
