Currently reading? Lots of fic!! Just read ch 2 of @jadevalentine-writes Good Omens fic Living in Sin and it is so good!! 🤌 (check it out if you haven’t already!!). In the same Good Omens vein, am abt midway thru Slow Show by mia_ugly. I have also been reading a lot of bg3 fic featuring Astarion (favorites so far include Dancing With My Demons by again_please, Kindred by aevellare, and Another Path by asidian). And planning to start my yearly reread of “A Christmas Carol” soon!
Last movie? Home Alone 2, which we watch while we eat turkey tetrazzini (which we made Friday!)
Sweet/spicy/savory? Ummmmm. Bold of you to assume that I, a Libra, can choose 😅🤣 I love them all- it depends what I am in the mood for. Right now I could go for spicy, bc I have not had a lot of spicy this week and am craving it.
Relationship status? If it’s meant to be, it will be.
Current obsessions? Baldur’s Gate 3 (I am HOOKED), Good Omens, TGCF, Destiny 2, my dnd characters (from past and current games- almost always turning Ellie, Lucii, and Liis like rotisserie chickens in my mind lol). I am sure I am forgetting something, but these are at the forefront of my mind rn!

Currently working on? Playing thru Act 3 of Baldur’s Gate, knitting my sorrel sweater, trying not to drown in paperwork at work 😅, cleaning the house for the holidays, and just surviving!

Turkey Tetrazzini
A recipe for “the only valid reason to cook a whole turkey”, per my father, as cobbled together from various recipes, the family group text, and my gut.
YOU WILL NEED:
1/2 lb spaghetti (ish? maybe more like 3/4?)
4 tablespoons of butter
5 cloves garlic, minced
12 oz white button mushrooms, quartered
1/2 pound spaghetti (ish)
1 cup white wine
1/3 cup flour
3 cups stock (chicken or vegetable)
4 oz cream cheese
3 cups roasted turkey, shredded or diced
1.5 cups frozen peas
2/3 cups of slivered almonds—per my father, it HAS to be slivered, don't ask me why.
1 cup Monterey Jack cheese, shredded
A bit of Parmesan, shredded (or the shake kind, it's fine, I won't tell)
Salt & pepper as needed
OKAY SO HERE’S WHAT YOU DO:
Cook the pasta like you normally would. If you have a small pot, it’s fine to break it in half. When it’s done, drain it thoroughly and set it aside.
Melt the butter in a (LARGE) pan. Add the garlic and sauté for a few minutes. Add the mushrooms and some salt—1/2 tsp ish?—and let it cook for a few more minutes.
You’re going to need stock later; have you started water for that?
And are you preheating the oven?
Just go ahead and grab your casserole dish too, while you’re at it; you probably still have the butter on the counter, so you can use that to grease it real quick.
Add the wine and let the whole thing cook for several minutes, until the liquid has reduced by roughly half.
I used a much nicer wine than I needed to, because it was what I had, but any white wine would probably be fine.
Sprinkle in the flour—you want to do this a bit at a time, stirring frequently to break up the clumps. Maybe even break out the whisk, what do I know? Also add your broth now—I added roughly 3 cups. Cook for a few minutes, stirring frequently, until your sauce has thickened.
Fun fact: this is what is technically called a roux, which comes from the French word for ‘redhead’. Why is that the word? Because fuck you, that’s why.
Actually, a quick Google tells me that it’s because it was originally beurre roux, or ‘browned butter’, which I guess makes as much sense as anything?
Reduce heat to medium low. Cut cream cheese into pieces and add it in. You really do want to cut the pieces as small as you can stand it—it helps them melt down better.
I also saw recipes that called for heavy cream; I didn’t go with those because I hate buying things for a single recipe, and cream cheese at least is good on bagels, but honestly next time it might be worth trying.
Once the cream cheese is REALLY VERY MELTED, add in the turkey, the peas, the almonds, and the cheeses. Add salt and pepper as needed.
I might actually increase the almonds to a full cup next time—you really do need that crunch.
Various recipes I found call for bacon and/or olives; if you like those, you should add them! I don’t like olives, and I forgot about the bacon, so I didn’t.
Depending on how big your pan is, you may be running out of room. If you have space, add the spaghetti to the pan and give it a good solid stir. If not, dump spaghetti and sauce alike into your casserole dish and mix well.
Sprinkle with Parmesan and some more almonds. Bake at 350 for 25 minutes, or until the crumbs are nicely browned.
I might actually go 30 minutes next year?
Serve hot!
