👉Save this post for recipe. 👉Follow @ketodietrecipe6 to get dialy Keto tips and recipes. 👉 Complete Keto diet free E book, Link in bio Raspberry Muffins Easy 0:15 Prep 0:25 Cook 11 Servings Ingredients 1 1/2 cup plain flour 1/2 cup wholemeal atta flour 1/2 cup roasted almond meal 1 tbs lemon zest 2 tbs baking powder 1 tbs vanilla essence 2 tbs vanilla sugar 3 tbs coconut margarine 100 ml sunflower oil 400 ml almond milk 1 cup organic raw sugar 225 g frozen raspberries defrosted 1 cup icing sugar mixture Method Preheat oven to 180C and place muffin patty pans into your muffin tray. Add all ingredients into a food processor, except for the raspberries and icing sugar. Mix to a smooth batter. Place defrosted raspberries in a sieve and push down to carefully extract some of the juice out of the fruit. Set the juice aside. Remove raspberreis from seive and add the into the batter, mix carefully to combine and pour into muffin patty pans. Place in the oven and reduce heat to 170C. Bake for 25 minutes. Remove from the oven and set aside to cool. Meanwhile to make the icing, mix the icing sugar with the raspberry juice to a smooth consistency. Drizzle over cooled muffins and serve.
