Can we categorize how ghouls look? Like depending on their vessel, how they were summoned, when they were summoned, if the Haven't been summoned and so on.

It's very simple! very old demons, like Omega, are without a human vessel and appear as demons.

Demons like Aether were summoned with a vessel. The clergy was getting better at summoning demons! But as you can see, Aether still has demon features.

Then there's more recent demons, like Dewdrop, who upon summoning with the use of a vessel, appear nearly human!

How ghouls look really depends on the development of magic and summoning. 1300's, not enough knowledge to give demons a vessel. 1800's, they've gotten better! But still not entirely human looking. Then there's Dewdrop, a recently summoned ghoul who looks nearly human!
