Ahora que la pertinaz sequía pende como una amenaza existencial sobre la viticultura española, tal vez sería bueno prestar más atención a la variedad francesa viognier, cepa robusta y resistente, alguno de cuyos clones soportan bien la escasez de agua, aunque su cultivo es complicado porque le afecta mucho las heladas, y es sensible a algunas enfermedades como el oídio. Para mostrar todo su potencial debe ser vendimiada en su punto óptimo de madurez, evitando desequilibrios como su tendencia a una importante acumulación de azúcares que elevan el grado alcohólico de los vinos y reducen la acidez.
Dificultades que propiciaron una lenta disminución del cultivo, estando a punto de extinguirse en su lugar de origen, el Valle del Ródano, aunque algunos sostienen que es oriunda de la Dalmacia, en Croacia. En los años 60 del siglo pasado tan solo unas 16 hectáreas sobrevivían a duras penas. Pero los excepcionales y altamente cotizados vinos blancos secos de viejas cepas de viognier, elaborados en la prestigiosa denominación francesa Condrieu, capaces de superar habitualmente los 150 euros la botella, despertaron el interés en numerosas zonas vitivinícolas de todo el mundo, deseosas de romper con la estandarizada tendencia a la chardonitis. Uno de los primeros en plantar Vioger en España fue la bodega Vallegarcía, creada en 1997 por Alfonso Cor-tina, con el asesoramiento de Carlos Falcó. Pequeños viñedos de viognier se plantaron en zonas de Castilla y León, Castilla-La Mancha, Cataluña, Murcia, Baleares, o en Tenerife. Según datos del Ministerio de Agricultura, Pesca y Alimentación, en 1999 había 34 hectáreas de viñedo, que ascendieron a 72 en 2009, y que hoy ya suman 624 hectáreas. Las razones de esta milagrosa recuperación y posterior extensión por todo el mundo se deben a sus vinos potentes, pero delicados, sutilmente complejos, muy aromáticos, con gran variedad de notas frutales en las que destacan las frutas blancas maduras y tropicales, un sugerente paisaje floral, notas de hierbas silvestres, y especiadas en el postgusto. Se trata de blancos untuosos, muy versátiles, buenos para armonizar una amplia gama de comidas, o tomados solos, por su potencia y madura sapidez. Alfonso Cortina tuvo, a finales de los 90, la genial idea de plantar ‘viognier’ en su finca en los Montes de Toledo, a 900 metros de altura. Hoy la bodega cuenta con el asesoramiento del bordelés Eric Boissenot. Este vino procede de seis parcelas. El 30% de las uvas ha fermentado barrica nueva de roble francés, para terminar con una crianza sobre lías en roble de seis meses. Aroma complejo a frutas de hueso madura y exóticas, con refinados notas flor de árbol, frescor balsámico de las hierbas, en un fondo lácteo y especiado. Sabroso, evoluciona elegantemente hacia un final amargo.

La bodega, creada por Philippe Dambois en 1989, fue una de las primeras en plantar ‘viognier’. Lo hizo en la finca Más Gil, situada en un pequeño valle de la cadena montañosa de Las Gavarres, a pocos kilómetros de la Costa Brava. Las uvas proceden de cepas plantadas en 1991 sobre suelos de arena y pizarra en pequeñas parcelas ubicadas en Calonge (Baix Empordà). El vino ha fermentado y criado con sus lías en barricas de roble francés durante seis meses. Intenso y fino aroma afrutado con frescas notas cítricas y de pastelería. Sabroso, estructurado, de regusto ligeramente amielado.

Martina y su hermano Ignacio, la tercera generación de los Pariente, se han embarcado en un proyecto de excelencia en el que prima calidad de la materia prima y una elaboración rigurosa. En este caso, parten de las uvas de una pequeña parcela de ‘viognier’ plantada en 1999 en La Seca (Valladolid). Una parte del vino fermenta en depósitos ovoides de hormigón, y la otra en barricas de roble francés. Finalmente, se cría durante seis meses con sus lías. Fragante aroma frutal, con notas de flor blanca, hierbas de monte, cítricos y tonos de pastelería. Vall Llach mima sus cepas de 'viognier' plantadas en el paraje más agreste de la finca Mas del Porrerà, de condiciones ambientales, orográficas, insolación y altura propicias. Solo lo elabora en cantidades muy limitadas, y cuando la añada es excepcional. El vino tiene una leve crianza de cinco meses en barricas nuevas de 500 litros. Aroma intenso y expresivo, con abundantes notas de fruta carnosa, madura y exótica, flor blanca, hierbas balsámicas en una sugerente atmósfera levemente especiada. Un ejemplo de logrado 'viognier' mediterráneo que se beneficia de su ubicación, a 1.373 metros de altura. Las cepas, plantadas en 2011, se benefician del clima fresco y la buena luminosidad características de la zona de Moratalla (Murcia). Las uvas proceden de los pagos de Las Perrera en la finca El Ático. El vino tiene una crianza en depósito de acero inoxidable durante ocho meses. Aroma cargado de frutas blancas y tropicales maduras, con notas florales, de cítricos, y hierbas silvestres. Finca Las Caraballas es un proyecto de viticultura ecológica y elaboración de vinos que arranca en 2005 impulsado por el riojano Elias Redondo. Los viñedos se ubican en Finca Las Caraballas (Medina del Campo), zona de pinares resineros, sobre terrenos franco-arcillosos. Inicialmente concebido para elaborar vinos de verdejo, pronto amplió la gama con otras variedades. Destaca entre ellas su ‘viognier’ fermentado en depósitos de hormigón pulido. Aroma fresco, con notas de hinojo, piña, pomelo, lavanda y hierbas. En boca resulta untuoso, con cuerpo, un final de atractivo regusto amargo.

Fiorano Bianco Tenuta Fiorano 2013 Italia, Lazio Grechetto; Viognier Bianco 13,5 % Tra i migliori laziali v’è proprio questo vino, maturato “sur lies” in botti di rovere e di castagno da 10 ettolitri. La Tenuta di Fiorano si trova vicino a Roma, tra il Parco dell’Appia Antica e le pendici dei Colli Albani ed è proprietà del Principe Alessandro Jacopo Boncompagni Ludovisi. Egli è erede di Alberico, personaggio misterioso che negli anni ’40-‘50 piantò i vigneti con Malvasia di Candia e Sèmillon, attraendo la curiosità di Luigi Veronelli e Tancredi Biondi Santi. Nel 1998 improvvisamente il Principe espiantò le viti e il figlio decise di acquistare 13 ettari dei terreni adiacenti, iniziando a produrre vino. Entrando dal cancello di ferro si percorre lo sterrato adornato da pini marittimi per giungere a degli edifici storici e un granaio, dove si trova la cantina storica scavata nelle grotte ipogee. Il terreno è caratterizzato dalla pozzolana e i sedimenti di polvere dell’eruzione del vicino Vulcano laziale. Le vigne impiantate a controspalliera ed esposte a Sud Ovest/Nord, sono ventilate dal vento che soffia dal mare e dalle colline dei Castelli Romani.
