I don't know if this experience is specific to me, where I went to school, or where I live, but I feel that my education in regards to nutrition (as a layperson) was just pigeonholing foods. Here are some examples of what I wished i had learned earlier in my life:
Dairies (milk, cheese, yogurt, and some alternatives) can be a good source of protein - protein is not exclusive to meats and fish
Coconut milk is a good non-dairy substitute for cream, particularly in soups/curries, but is high in saturated fat
Pre-made spice mixes typically contain more salt/sugar than necessary - if you're trying to be careful, it's better and cheaper to make your own spice mixes and adjust seasoning as needed
Avocado is a more nutritious substitute for butter spread or mayo, but it is still high in fat
There are meats, fish, and vegetables that are high in calcium - calcium isn't exclusive to dairies
If you're trying to be mindful of sugar intake, mind consumption of dairies/dairy alternatives, condiments like BBQ sauce/ketchup, juices, adding honey/sugar to coffee or tea
The human body needs salt! It's ok to season food in moderation
The human body needs fats too! It's ok to consume fats in moderation, with awareness of what kinds of fats are being consumed
Needless, restrictive, and/or unsupervised dieting can mess with your digestive microbiome and how your body absorbs vitamins and nutrients

Part of me wants to believe that I have some sort of Hanahaki Disease variant... seeds from berries, vegetables, and mushrooms have sprouted in my intestines, causing disabled digestion and poor absorption.
The only kind of body horror I'll accept at this point.

Lol I love the simplicity of this
Unfortunately, due to my stomach disorder, I can't have beans anymore. And I can't have a ton of rice due to insulin resistance.
Thanks for the suggestion tho!

I question if I'm mentally struggling with something and then I realize my body temp has dropped to the extent that it feels like I'm sitting in a refrigerator.

I never realized how people taking pictures of every meal they "have out" could get to me.
Just seems to be glorifying food, putting it on a pedestal, viewing it as a work of art. Placing the dishes and cups just so, staving off hunger to get the perfect shot.
Whereas meals for me are very difficult, mentally and physically. I have to view food now in a functional sense... food is food and I consume it because I must sustain my body. I stop consuming foods that make me ill.
The body is not for food, food is for the body.

Recipes from my Grandfather
My grandfather recently died and my grandmother on that side is deep in dementia. As a project to deal with my grief and come to terms with these losses, I鈥檓 copying all of their favorite recipes online in google docs.
It鈥檚 not done yet, but I also started adding recipes from the other side of my family, starting with those grandparents as well. In the grand scheme of the world, I think nothing would make them happier than feeding people. As such, I鈥檓 sharing a link to the ongoing project of my families recipes (US based measurements). Please feel free to look at, cook from, and comment on this piece of my families history. Know that wherever you are, and whoever you are, my Grandfather Charlie would have loved you and made sure to grow your favorite vegetables in his garden and told you every joke he knew.

According to dietician and diet recommendations for similar GI issues, I shouldn't be having whole avocados. I should be having 1/8 to 1/2 an avocado a day.
Do these people KNOW how avocados last after you cut into them???
