Brown Butter Omelette with parmesan crust
you will need*:
2-3 eggs, shallot or onion, paprika, salt and pepper, butter, bacon/bacon bits (can be swapped for preferred meat alternative), parmesan cheese (shredded, not the powdery kind), heavy cream is optional
*measure with your heart!
-cook bacon as desired
-chop shallot and bacon into fine bits and set aside
-melt butter in pan on medium heat, stir occasionally until brown
-in same pan, sprinkle parmesan cheese to form a crust
-beat eggs with salt, pepper, and paprika (optional: add dash of heavy cream to eggs)
-add eggs to pan and let set on med-low heat
-add bacon, shallot, and parmesan to center
-fold omelette in half
serve and enjoy! great with sweet hot sauces, chili crisp, or sriracha
After the recent feasts, a simple (one-or-two-course) meal at lunch may come as something of a relief! Yet, simple does not mean it shouldn't be tasty and hearty, like this Tomato and Goat's Cheese Omelette, which makes a nice weekend brunch, too! Happy Friday!
Ingredients (serves 1):
1 1/2 tablespoon olive oil
half a dozen Cherry Tomatoes, rinsed
1 tablespoon Modena Balsamic Vinegar
1/2 tablespoon unsalted butter
2 large eggs
2 egg whites
a pinch of salt and freshly cracked black pepper
30 grams/1 ounce good quality goat's cheese
In a medium, nonstick frying pan, heat olive oil over medium-high heat.
Halve Cherry Tomatoes and add to the hot pan, sauté, about 4 minutes, until softened and browned.
Deglaze with Balsamic Vinegar; cook, about one minute.
Add butter to the pan.
Beat eggs and egg whites, in a small bowl. Whisk in salt and cracked black pepper. Pour egg mixture over the Cherry Tomatoes.
As the omelet begins to set on the bottom, crumble goat's cheese generously all over the eggs and Tomatoes. Cook until the top is just a little moist, about 3 minutes total.
Serve Tomato and Goat's Cheese Omelette immediately, with buttered toasts and dressed lettuce.

3 medium potatoes
5 eggs
1/2 onion
4 ham slices
8 cheese sandwich slices

POTATO OMELETTE STUFFED WITH HAM AND CHEESE RECIPE:
1.- In a pan over medium heat, add plenty of oil. Then, add peeled and chopped potatoes and chopped onion into large pieces. Put a little of salt and let cook everything while stirring frequently with wood spoon about 10 minutes.
