Autumn months are all about returning indoors and enjoying a cozy evening entertaining friends, by having drinks and some nuts to accompany them.

This simple recipe for roasted chickpeas is unique because:

✔ They are made in minutes with ingredients you usually have at home,

✔ They are much cheaper than store-bought while...

✔ They are very rare to find in the shops as "dried nuts"

✔ They are quite healthy and nutritious

✔ They have a wonderful freshly roasted taste with a "Greek touch", an earthy/spicy flavor with warm and crunchy texture.

I made a small quantity just to show you, but I would advise you to make at least double...honestly they are gobbled up so quickly. Because nothing beats homemade!

Suitable for fasting and vegans.

 

INGREDIENTS:

·      400 gr. / 14.1 oz Boiled Chickpeas, canned (net weight)

·      1 tsp. dried Thyme

·      1/2 tsp. Sea Salt

·      1 tbsp. Olive Oil

·      1/2 tsp. sweet, smoked Paprika

·      1 Garlic Clove, minced

METHOD:

A.    Prepare the chickpeas for roasting:

1.     First drain the canned, boiled chickpeas. When drained, they weigh about 240 gr. / 8.5 oz.

2.     Rinse them with plenty of cold, running tap water.

3.     Shake the sieve and leave chickpeas to drain and dry well for about 10'.

4.     Then place them in a bowl.

5.     Add first 1/2 tbsp. Olive oil. Reserve the other 1/2 to brush on the baking dish.

6.     Next add the sea salt, paprika and minced garlic.

7.     Press the dried Thyme between your palms to release its aromas before sprinkling it on top of the chickpeas.

8.     With a small spoon, mix all ingredients making sure all chickpeas are well coated.

9.     Brush the rest of Olive oil on a small Pyrex dish of 22 x 30 cm / 8.7 x 12 in. If you prefer to use less oil, just line the dish with baking paper instead.

10.  Scatter the chickpeas on the tray and they are now ready to be roasted.

 

B.    Roasting instructions:

11.  Roast marinated Chickpeas in a preheated oven FAN @ 180 ℃/ 350 ℉, for 35' (depends on the oven).

12.  Halfway through roasting, open the oven and flip them.

13.  When ready, flip them again and remove tray from the oven.

 

C.     Serving suggestion:

14.  Leave the tray on the kitchen bench for roasted chickpeas to rest and set for 10', before serving them hot!

Serve them in a bowl with gin or beer or whisky on the rocks or wine or or...the list is endless!

Wonderfully crunchy, warm and golden, a bit spicy and so appetizing.

Time for you to enjoy them too.

D. Storage info:

If you have leftovers, let them cool down completely and save them in a glass container for a few days.

Then you can use them as garnishing on a Green salad; you will be surprised how the salad will be revitalized with their crunchy texture and spicy taste!

ΜΑΓΕΙΡΕΜΑ ♨  ΒΑΘΜ. ΔΥΣΚΟΛΙΑΣ 👩‍🍳⃒

    35 min.                   Πολύ εύκολο

Οι μήνες του φθινοπώρου μας επιστρέφουν μέσα στο σπίτι για να απολαύσουμε μια ζεστή βραδιά διασκεδάζοντας με φίλους, πίνοντας ποτό και μερικούς ξηρούς καρπούς για να το συνοδεύσουν.

Αυτή η απλή συνταγή για ψητά ρεβίθια είναι μοναδική επειδή:

✔ Φτιάχνονται σε λίγα λεπτά με υλικά που συνήθως έχετε στο σπίτι,

✔ Είναι πολύ φθηνότερα από τα αγορασμένα, ενώ...

✔ Είναι πολύ σπάνιο να τα βρείτε στα μαγαζιά σα «ξηρούς καρπούς»

✔ Είναι πολύ υγιεινά και θρεπτικά

✔ Έχουν υπέροχα φρεσκοψημένη γεύση με «Ελληνική πινελιά», που είναι γήινη/πικάντικη με ζεστή και τραγανιστή υφή.

Έφτιαξα μια μικρή ποσότητα μόνο για να σας δείξω, αλλά θα σας συμβούλευα να φτιάξετε τουλάχιστον διπλή... ειλικρινά καταβροχθίζονται τόσο γρήγορα. Γιατί τίποτα δεν συγκρίνεται με το σπιτικό!

Κατάλληλο για νηστεία και βίγκαν.

ΥΛΙΚΑ:

• 400 γρ. / 14,1 oz βρασμένα Ρεβίθια, κονσέρβας (καθαρό βάρος)

• 1 κ.γ. ξερό Θυμάρι

• 1/2 κ.γ. Θαλασσινό αλάτι

• 1 κ.σ. Ελαιόλαδο

• 1/2 κ.γ. γλυκιά, καπνιστή Πάπρικα

• 1 Σκελίδα Σκόρδο, λιωμένη

ΜΕΘΟΔΟΣ:

Α. Προετοιμάστε τα ρεβίθια για ψήσιμο:

1. Στραγγίστε πρώτα τα βρασμένα ρεβίθια. Όταν στραγγίσουν, ζυγίζουν περίπου 240 γρ. / 8,5 oz.

2. Ξεπλύνετε τα με άφθονο, κρύο, τρεχούμενο νερό βρύσης.

3. Ανακινήστε το σουρωτήρι και αφήστε τα ρεβίθια να στραγγίσουν και να στεγνώσουν καλά για περίπου 10'.

4. Στη συνέχεια βάλτε τα σε ένα μπολ.

5. Προσθέστε πρώτα 1/2 κ.σ. Ελαιόλαδο. Κρατήστε το άλλο 1/2 για να αλείψετε το ταψί.

6. Στη συνέχεια προσθέστε το θαλασσινό αλάτι, την πάπρικα και το λιωμένο σκόρδο.

7. Πιέστε το ξερό Θυμάρι ανάμεσα στις παλάμες σας για να απελευθερώσει τα αρώματά του πριν το πασπαλίσετε πάνω από τα ρεβίθια.

8. Με ένα μικρό κουτάλι ανακατέψτε όλα τα υλικά φροντίζοντας όλα τα ρεβίθια να καλυφθούν καλά.

9. Αλείψτε το υπόλοιπο ελαιόλαδο σε ένα μικρό ταψί Pyrex 22 x 30 cm / 8,7 x 12 in. Αν προτιμάτε να χρησιμοποιήσετε λιγότερο λάδι, απλώς στρώστε το ταψί με αντικολλητικό χαρτί.

10. Σκορπίστε τα ρεβίθια στο ταψί και είναι τώρα έτοιμα για ψήσιμο.

 

Β. Οδηγίες ψησίματος:

11. Ψήστε τα μαριναρισμένα ρεβίθια σε προθερμασμένο φούρνο στον αέρα @ 180 ℃/ 350 ℉, για 35' (εξαρτάται από το φούρνο).

12. Στα μισά του ψησίματος, ανοίξτε το φούρνο και αναποδογυρίστε τα.

13. Μόλις είναι έτοιμα, αναποδογυρίστε τα ξανά και βγάλτε το ταψί από το φούρνο.

Γ. Πρόταση σερβιρίσματος:

14. Αφήστε το ταψί στον πάγκο της κουζίνας ώστε τα ψητά ρεβίθια να ξεκουραστούν για 10', πριν τα σερβίρετε ζεστά!

Σερβίρετε τα σε μπολάκι μαζί με τζιν ή μπύρα ή ουίσκι με πάγο ή κρασί ή ή... η λίστα είναι ατελείωτη!

Υπέροχα κριτσανιστά, ζεστά και χρυσαφένια, λίγο πικάντικα και τόσο ορεκτικά.

Ήρθε η ώρα να τα απολαύσετε κι εσείς.

Δ. Πληροφορίες φύλαξης:

Αν σας περισσέψουν, αφήστε τα να κρυώσουν εντελώς και φυλάξτε τα σε γυάλινο δοχείο για λίγες μέρες.

Στη συνέχεια, μπορείτε να τα χρησιμοποιήσετε σα γαρνίρισμα σε μια πράσινη σαλάτα. θα εκπλαγείτε πώς θα αναζωογονηθεί η σαλάτα με την τραγανή υφή και την πικάντικη γεύση τους!

Η καλλιέργεια των ρεβιθιών ήταν γνωστή από αρχαιοτάτων χρόνων στις περιοχές γύρω από τη Μεσόγειο όπου είχε αρχίσει να καλλιεργείται 3.000 - 4.000 χρόνια π.Χ.

Η πρώτη γραπτή αναφορά για το ρεβίθι απαντάται στην Ιλιάδα του Ομήρου, στο 1.000 έως 800 π.Χ.

Στο χάρτη των οσπρίων σε παγκόσμια κλίμακα, τα ρεβίθια καταλαμβάνουν την τρίτη θέση μετά τα φασόλια και τα μπιζέλια.

Χορτοφαγικά σουτζουκάκια που όχι μόνο μυρίζουν και έχουν την ίδια όψη με τα παραδοσιακά αλλά έχουν και απίστευτα ίδια γεύση! Πραγματικά όταν επιχείρησα να μετατρέψω τα παραδοσιακά σουτζουκάκια σε χορτοφαγικά δεν πίστευα με τίποτα ότι θα γίνουν τόσο τέλεια! Είναι σα να τρως σουτζουκάκια! Θα τα λατρέψουν όλοι! Υλικά: 300 γρ. μανιτάρια 200 γρ. κρέμα γάλακτος 200 γρ. ανθότυρο, κεφαλοτύρι, κασέρι 2 φρέσκα κρεμμυδάκια Λάδι, αλάτι, πιπέρι Ψιλοκομμένο μαϊντανό και τριμμένο κεφαλοτύρι Εκτέλεση: Kόβουμε από τα μανιτάρια τα κοτσάνια και τα τρίβουμε στον τρίφτη. Σε μία κατσαρόλα σοτάρουμε τα ψιλοκομμένα κρεμμυδάκια, ρίχνουμε τα κοτσανάκια, συνεχίζουμε το σοτάρισμα και ρίχνουμε το ανθότυρο, την κρέμα γάλ...
