Feels good to be back.
RECIPE:
1-ยพ cups all purpose flour
1-ยฝ teaspoons pumpkin pie spice
1 teaspoon cinnamon
ยฝ teaspoon baking soda
1 teaspoon baking powder
ยผ teaspoon salt
2 large eggs
1 cup granulated sugar
ยฝ cup canola or vegetable oil
1-ยผ cups canned pumpkin puree
1 teaspoon vanilla extract
ยผ cup apple juice or milk
CRUMBLE:
3 tablespoons granulated sugar

cup brown sugar, packed
ยพ teaspoon ground cinnamon
pinch of salt
ยพ cup all purpose flour
6 tablespoons unsalted butter, melted

My husband and I decided to check an item off our Fall Bucket List: Apple Picking!
There are plenty of wonderful recipes to make from Apple Pie to Apple Fritters but, today I had to have Apple Chips.
Ingredients:
3 Sweet Apples of Your Choice
Cinnamon
This is a slow and low recipe. 200ยฐ F for about 2 and a half hours. Itโs so worth it for this sweet tooth curing, healthy, fall snack.

I asked myself today what was I shedding.
I realized I was shedding all my anxieties.
Looking to the evidence of when my worries proved to be wrong.
There are so many examples in my life of when joy, happiness, and peace prevailed beyond my worst case scenario.
This life of mine like yours is cyclical.
Good times come. Good time go.
Bad times come. Bad times go.
I have been a giver of my power for far to long.
Iโm taking it back.

MUFFIN:
2 cups (250 g) all-purpose flour
1 cup (200 g) granulated sugar
2 teaspoons baking powder
1 teaspoon kosher salt
2 teaspoons apple pie spice
2 large eggs, room temperature, beaten
2 tablespoons vegetable oil
ยฝ cup (124 g) apple cider, or apple juice
ยผ cup (61 g) whole milk, room temperature
TOPPING:
ยผ cup (ยฝ stick / 57 g) unsalted butter, melted
ยพ cup (150 g) granulated sugar
1 teaspoon apple pie spice

HAPPY FIRST DAY OF FALL ๐๐๐ซถ๐พ๐
Pumpkin Spice Syrup Ingredients:
1/3 Cup Pumpkin Purรฉe
1 and 1/4 Cup Water
1 Cup Sugar
1 Tablespoon Pumpkin Pie Spice
1/2 Teaspoon Vanilla Extract
Put all together in a sauce pan on medium for 15 minutes occasionally mixing so syrup does not stick to the bottom. Once syrup is thickened place in heat safe container and cover on counter until use.
I made mine at night to use for the next morning.
After that add your ice, choice of milk (Iโm a fan of oat), and matcha.

Half Onion
5 Cloves of Garlic
3 Carrots Shredded
3 Cups Broccoli Chopped
Half Stick Butter
2 Teaspoon of Garlic Salt
1 Teaspoons of Paprika
4 Tablespoons of Flour
2 Cups Chicken Stock
1 Cup of Cheddar Cheese

RECIPE:
Batter Mix -
1 Cup Granulated Sugar
1/3 Cup Dark Brown Sugar
1 Cup Flour
2 Teaspoons Baking Powder
1 Pinch Salt
3/4 Cup Whole Milk * Sub Oat for Vegan Option
4 Tablespoons Melted Butter
Peach Mix -
2 Cans Diced Peaches
1/2 Tablespoon Cinnamon
1/3 Cup Light Brown Sugar
Tips:
- Put a teaspoon of butter at bottom of cake liners.
- 2 Tablespoons of batter.
- 1 Spoonful of Peaches
- Bake at 375ยฐ for 20 Minutes
- Keep leftover peaches for french toast, oatmeal, or side.

2 Shots Espresso
1 Cup Milk (I used Oat)
3 Tablespoon Pumpkin Purรฉe
2 Tablespoon Maple Syrup
1 Teaspoon Pumpkin Pie Spice
1 Teaspoon Vanilla Extract
* Add whipped cream topping or milk froth.
* A little extra spice is nice!
