Something that took me way too long to learn that I thought I'd pass along:
"Picky eaters" are, in fact, picky.
When you offer something to eat to someone who has preferences for certain foods, and they say, "No, thank you," it's because they don't like what you've made, or because they like other things more.
It's not because your food is unpredictable, and they don't *know* if they like it.
Here's the thing:
If I make taco soup for a neurodiverse child and they love it, then they believe they love taco soup. The soup has ground beef, a bag of frozen mixed veggies, some beef broth, and taco seasoning. It's served with tortilla chips, and it's tasty.
And if, perhaps, the next time I make it, I add beans and a can of tomatoes?
I think it's excellent that way.
But it's the *same* taco soup as the one they remember. And maybe they can stand the texture of beans, or the acid of tomatoes.
They know that -- they just don’t know that they feel like they've been tricked.
Taco soup isn’t supposed to be one thing, every time.
If I say we're having "tacos" and one time it's chicken and one time it's ground beef and another time it's carnitas, that child can know whether "tacos" are something they can eat.
"Stir fry?" Forget it. Way too few variables.
Bananas aren’t variable.
Neither are apples.
But you know what does have variables?
Amy's frozen enchiladas.
Bread and peanut butter.
Add-hot-water-and-eat instant pho.
Taco Time meal number 8 with chicken, corn tortillas and a root beer.
Frozen gluten-free waffles.
Those are never the same every single time, no matter what.
If, God help me, I make chili mac (or hamburger macaroni, or hamburger helper, or whatever you call noodles and meat and tomato sauce all combined in a pan,) and I make it different every time? Then that child will be able to eat chili mac, even if it's not their favorite food.
Two of my kids went through a phase where they could only eat certain things, and I could always understand why they could love something one day and hate it a week later.
Turns out it's my creative, delicious, never-changing, unadaptable cooking.
I'm hoping this latest child with food preferences will adapt and overcome -- one of my older kids, who was at one point down to a list of six foods, just made excellent gumbo for Christmas and a plate of fantastic stir-fried rice at midnight tonight.
So if you're wondering why your kid wants to eat fast food but not your cooking?
It's entirely possible that it's because they hate your cooking, or because they love fast food.
It's because they don’t know they don't hate fast food. And they're sure they're going to hate whatever you're making.
(Comments, insight, discussion, empathy, as always, are welcome. But please give me advice on children and food preferences unless you have raised neurodiverse children with food aversions, have had to deal with being gluten-free and/or dairy-free for years, and understand the biology and psychology behind texture and taste sensitivities. Anyone who comments anything along the lines of, "Make them eat what's available -- eventually they're break down and eat" will be celebrated. It's like saying, "I know they're a vegetarian, but if they're hungry enough, they'll eat steak and like it." It's helpful and kind.)

Belize day 6!

Day 6
Che’it Mayan chocolate!!
Best day ever honestly. We got to go a Mayan chocolate place. We started with lunch which was soup with potatoes vegetables and chicken served with rice and little tortillas. The soup was really good and the chickens were raised right there in the farm as free range chickens. After lunch we got to go tour the farm.
We walked down the road to the main farm. We passed pineapple plants and bananas and the free range chickens and then entered the chocolate grove. We were surrounded by chocolate trees with taller trees above them. The coco trees need shade so they need the taller trees to keep them growing and healthy. The coco trees can grow 30 feet tall but they keep them short because the coco pods only grow on the bottom. The coco pods are the fruit of the tree and thus are healthy and full of antioxidants
They cut of the pods off of the tree using very sharp machetes. They have to use sharp ones to be sure not to damage the flowery part that the pod grows from because it won’t grow back but if you don’t damage it it will just keep generating pods.
Then they use a wooden club (just a round stick) to break open the pods . They hit it in a circle and then it cracks down the middle. The inside of the pod has a bunch of white little pods that look like garlic. You can put them in your mouth and suck them and they are very slimy and a bit like mochi. You can eat them raw but they don’t taste good.
They then let them fermente for six days and then roast in the sun for seven days. Once they dry them they remove the shells and then you have coco nibs.
We got to help grind the coco nibs into chocolate using the Mayan stone and grinder called ka (accent on the a) the nibs release oil and then you get a paste.
And then you get to add the cane sugar and get chocolate!! We got to try things at each and every step of the process. The chocolate was so so good. Even the 80% dark chocolate was so good (still a little bitter but still so good)
And then got chocolate things to take home and chocolate ice cream to eat right then. Honestly the dream.
Our resort is so bougie.fancy fountains, pretty lights, flowered manicured gardens, a welcome drink, the whole nine yards. It’s definitely fairly pricey but honestly I mKe enough for this and I’m going to lean into the full resort vibes. They also do a horseback riding trail ride through the jungle and me my roommates are going to do it on our free day. It’s just a half day so then we can paddle board or whatever in the evening. I’m also so excited for snorkeling tomorrow

Week 4 and Trip to Sevilla!
Halfway through my time here and I can’t believe it. I still feel like my abroad experience is just beginning. More housing changes but I finally was able to move into an apartment at the beginning of last week, so I am now living with six of my friends in our program which has been SO much fun. 
I started off the week with a cooking class! We made paella, tortilla de patatas, tarta de santiago (an almond and lemony pastry), and salmorejo (a Spanish soup including tomatoes, olive oil and garlic). All of the food was delicious, but the paella had to be my favorite. On Tuesday I had the chance to check out the Yatai market, which was a super chill Asian market in the center of the city. They had all types of noodles and asian dishes but I ended up getting sushi from a restaurant in the back which was so good. The market also had a cute seating area where I enjoyed my sushi with one of my friends for her last night in Madrid.

This weekend, our program took us on a trip to Sevilla. The weather was super hot, over 100 degrees, but we didn’t let that stop us from getting the most out of the city. Almost all of the students in the program went on the trip, which was super fun and allowed me to get closer with a bunch of the students I had never met before! 
The city of Sevilla was so beautiful, it might have been my favorite Spanish city so far. It reminded me of Porto where all of the streets are narrow and stone, but it was much less touristy than Porto. I loved the way that the city’s layout created a very cozy small town vibe. All of the historical monuments in the city were filled with super intricate detail and tiling. Almost every building is styled in a way that fits right into the antique aesthetic of the city. One of my housemates described Sevilla as “a modern life happening within ancient buildings.”

In Sevilla, we went on walking tours, explored the plaza, and were even able to see the sunset on Setas de Sevilla, a popular building where you can stand on top and look out over the whole city. I had some of the best food I’ve had yet in Spain, including garlic chicken skewers, pork tacos and tuna and potatoes. Overall, many memories were made and this trip was one of my favorite weekends so far.

What’s your favourite type of survey to take? Decent questions that require a bit of explanation, but not really long philosophical questions that take ages.
What was the last topic you read about? I honestly couldn't tell you.
Have you ever made a diorama? No, they weren't really a thing in the UK.
Do you prefer Windows or Mac? Mac.
What’s the best amusement park ride you’ve ever been on? In terms of suspense, Oblivion at Alton Towers was really good, and I like AIR as well when it functioned, though it was always breaking down.
Where are you right now? Describe the room or place. I'm in the living room at the moment. It's quite a large space as it's a dining room/living room knocked into one. Two walls are red and two are grey - the carpets are grey too and all the furniture is white except the sofa which is grey. We have a woodburner in here as well as a large TV, a coffee table, some built-in units and two bookshelves, as well as a dining table and chairs. There are fairy lights going around the ceiling and a wax burner going that makes the room smell of vanilla.
Have you ever participated in a fundraising campaign? Yeah, just online ones though.
Do you know how to knit? No. My mum can knit but it was never something that interested me.
