Pineapple Salsa 🍍🍅🌮🍍 I have found that with an awesome condiment everything tastes good!! Or as least that was the original idea. Take something I did not care for the taste of and kick it up!! Confession time!! I basically had chips and slasa for dinner!! Yes I made one cheese quesadilla but I smashed the chips and salsa! Everything came from @midohiofoodcollective #nnemapfoodpantry RECIPE🍍🍍 PINEAPPLE SALSA ** I call this one of everything cause it is super easy to remember just put in one of everything! ** ~1 cored and chopped pineapple ~1 medium Tomato ~1 chopped red pepper ~1 handful chopped cilantro ~1 chopped serrano chili( I used my own Tripping Vittles Pineapple Express seasoning Blend, if u use that you do not need the salt and pepper or the serrano chili) ~1 teaspoons each salt and fine ground black pepper. ~2 pieces crushed garlic Mix all in a big Bowl, let sit about hour. Serve how ever you like! It goes great with fish, chicken, shrimp!! I had a Vegetarian Mexican Food Inspired Feast tonight the only item not from @midohiofoodcollective and @NNEMAPFoodPantry is the @casamigos tequila RECIPE 👇🏻👇🏻👇🏻👇🏻👇🏻👇🏻👇🏻👇🏻 FAJITA VEGETABLES *mushrooms *green and red peppers *onions *Tripping Vittles Corn on the Cob seasoning , that’s in my cup board but salt pepper and garlic works too! Those are my favorite veggies but feel free to add whatever you like! Sauté with butter or vegetable oil and whatever seasoning you choose. I got both from the pantry today so I used butter for the sauté! Cook until tender! Wrap tortillas in aluminum foil and lay on top of veggies for a few minutes to steam and heat up! AVOCADO CREAM * I got two avocados that were a little over ripe and needed to be used today! *1/4 cup sour cream *half cup plain yogurt *juice of one lime *salt to taste *blend in whatever way makes you happy! Fork, mixer, blender Shred some cheese if you have it. I would have refried beans with this too but I did not have any! Fill the tortillas roll like a burrito and eat up!! I loved this meal! Oh!!! Everything is from what I got yesterday at Mid Ohio Food Bank but I added some Tripping Vittles Everything but the Bagel Seasoning. What are your thoughts can I use the spices in my cupboard? I have to establish the rules and I’m not sure about this one.! FOOD PANTRY FOOD! If you follow me on my blog at trippingvittles.com you will know I am taking on a project for the next month. I am writing about food insecurity, and showing how you can eat healthy, abundantly and deliciously. There is no shame on being food insecure. This is my first day on the project and I spent today at work then I volunteered at a food give away where I was able to get some food and then I went to Mid Ohio Food Pantry!
