you should talk about Howard the Duck!!
okay okay okay
so today is the 37th anniversary of the howard the duck movie!! it's like.. a lot-
it's a really weird movie for sure I guess i should list the pros and cons. let's start with the cons so we end on a positive note :
cons
-it's really not a faithful adaptation. like the writers straight up pretty much admitted they don't understand the source material which is veeeeery questionable
-the movie just can't decide what age it's for. like it tries to be a kid's movie but there are too many weird sexual references for it (i guess nothing too blatant just duck boobs for a few seconds, Howard's weird duck condom, that infamous scene that ultimately never went beyond kissing and well okay the worst one is probably that weird bathhouse scene. i legitimately don't understand why that even exists.)
-the weird genre switch. it's SO out of nowhere and it's just.. a really jarring transition. one second you're watching a romcon about a duck and singer and the other second you're in a high stakes sci fi and you get basically no time to adjust you just have to accept it
-phil blumburt tends to be the most annoying man sometimes. and then sometimes he's just a funny guy. they can't decide i guess.
-THE FUCKING 7 MINUTE CHASE SCENE I HATE IT SO MUCH
-sometimes the duck puns can be a lot
okay but of course I don't hate this movie at all it's actually a big comfort for me so

-Lea Thompson as Beverly Switzler is such a casting choice she SLAYS it genuinely changed my life her version of Beverly is the most iconic to ever
-also Chip Zien voicing Howard. can't get better than that. he's a damn good voice actor tbh. people say they wish the movie kept Robin Williams but tbh? they're cowards. Chip Zien Howard is best Howard i take no criticism
-the howarly plotline is definitely the heart of the movie and it's set up so well. it's a liiittle cheesy but it also makes me squeal every two seconds. they've got the angst the fluff and everything in between and you KNOW I'm a sucker for them! seriously they made a point to show how much they understand each other and care for each other and Howard basically makes it his life mission to fix all of Beverly's problems while Beverly makes it her life mission to protect Howard from this wirld that tries to hurt him and they're just so soft and i love them they have SO MANY big moments in this movie and it feeds me
-THE. MUSIC. OH MY GOD. between John Barry's score (the howarly leitmotif titled you're the duckiest is genuinely BRAINROTTING to me) and Thomas Dolby cherry bomb songs (ughhh they're all perfect) the music is such a strong point in this movie
-speaking of: cherry bomb!! they don't have a big part in the movie unfortunately but Ronette, K.C. and Cal are just so charming i want a sequel just focusing on the band without any of the alien stuff. i want more spotlight to my girls!! and of course also Howard and Beverly and even Phil but i need my girlies to get something!!
-this is bit of a minor thing but every single outfit Beverly wears is iconic
-there's some very explicit acab messaging and Beverly aims a gun at a cop <3
-just. the vibes. they're fun. i wish people would just accept this movie as a fun time instead of expecting some kind of deep philosophical whatever because then of course it will disappoint them! take it for what it is! because for what it is it's cute and fun and comforting! and i love it.

'We are on the verge of a "Hartnettaissance."
Josh Hartnett recently had impressive performances on TV ("Black Mirror") and in movies ("Oppenheimer").
Since he's known best for his work on the big screen, we're highlighting Hartnett's top movie roles.
14. John Tate in "Halloween H20: 20 Years Later" (1998)
In his big screen debut, Hartnett played John, the son of Jamie Lee Curtis' character, Laurie.
It's what you'd expect — he runs for his life from Michael Myers. It's not the most memorable performance, but landing the role did help catapult him into the "next big thing" conversation in Hollywood.
13. Hugo Goulding in "O" (2001)
In this modern-day retelling of Shakespeare's "Othello," Harnett plays the evil Hugo (essentially an adaptation of the Iago character in the classic play), who plots against his supposed friend Odin (Mekhi Phifer) to get the attention of Desi (Julia Stiles) and ruin Odin's life.
Released at a time when Hartnett's star was rising fast, the movie helped show that Hartnett was more than just a pretty face.
12. Dwight "Bucky" Bleichert in "The Black Dahlia" (2006)
Though this Brian DePalma-directed adaptation of James Ellroy's classic pulpy noir didn't get the acclaim you'd expect with such legends attached, Hartnett still shined as a detective investigating one of Los Angeles' most notorious murders.
In a cast that also featured stars like Aaron Eckhart, Scarlett Johansson, and Hilary Swank, Hartnett proves here that his dramatic acting chops are on par with those of genuine movie stars.
11. The Drifter in "Bunraku" (2010)
A rare impressive performance from the decade or so where Hartnett found himself in B-movies that often went straight-to-video or On Demand, Hartnett has a blast in "Bunraku" playing the movie's lead, The Drifter, who stumbles upon some interesting characters — and a lot of blood.
10. Matt Sullivan in "40 Days and 40 Nights" (2002)
Hartnett leans heavily on his heartthrob status in this rom-com, in which he plays a guy who gives up any sexual contact for Lent.
Playing up his character's wide eyes and penchant for hyperventilating as his hormones gradually get out of control, Hartnett delivers big on the laughs and the charm here.
9. K.C. Calden in "Hollywood Homicide" (2003)
A year after doing the rom-com thing, Hartnett teamed up with Harrison Ford for this studio action comedy.
Harnett holds his own across from Ford, delivering a playfulness he doesn't often give us in his filmography.
8. Ernest Lawrence in "Oppenheimer" (2023)
In Christopher Nolan's biopic of J. Robert Oppenheimer, Hartnett stars as one of the real-life physicists who joined the Manhattan Project to create the atom bomb alongside Oppenheimer.
Hartnett plays Ernest Lawrence as a man who is not just friendly with Oppenheimer, but who tries to make the genius understand that his actions, especially his favoritism towards Communist thinking, can lead to problems.
7. Trip Fontaine in "The Virgin Suicides" (1999)
In Sofia Coppola's feature directorial debut about the tragic lives of five teenage sisters, Hartnett plays Trip, the movie's heartthrob who dates the most rebellious sister, Lux (Kirsten Dunst).
Hartnett plays his role perfectly, and Coppola frames him as a high school God on screen, complete with a flowing 1970s-style haircut and stylish outfits.
6. Dave "Boy Sweat" Hancock in "Wrath of Man" (2021)
The recent "Hartnettaissance" can be traced back to this Guy Ritchie action thriller.
This revenge movie set in the world of armored truck guards finds Hartnett playing one of the guards who befriends Jason Statham's character.
It won't be the last time Ritchie calls on Hartnett to bring one of his characters to life.
5. The Salesman in "Sin City" (2005)
As the slick assassin in the Robert Rodriguez adaptation of Frank Miller's iconic comic series, Hartnett's character plays a key role in bookending the movie.
His voiceover narrates his target at the start of the movie at a party. Then, dressed as a doctor at the end of the movie, he encounters a woman in an elevator. She knows from the sight of him that her fate is set.
Though Harnett doesn't get a lot of screen time, his presence in both scenes is thrilling and chilling.
4. Matt Eversmann in "Black Hawk Down" (2001)
Hartnett is front and center in Ridley Scott's acclaimed war movie, which follows the aftermath of a Black Hawk helicopter crashing in enemy territory in Mogadishu in 1993 during the Somali Civil War.
The role was a breakthrough in positioning Hartnett as not just a heartthrob, but a good actor in his own right.
3. Danny Francesco in "Operation Fortune: Ruse de Guerre" (2023)
Teaming again with Guy Ritchie, Hartnett delivers one of his best performances in recent memory. In this Ritchie action movie, Jason Statham plays a spy who must track down a device before an arms dealer (Hugh Grant) sells it to the highest bidder.
Hartnett plays the dealer's favorite actor, whom Statham's character uses to infiltrate the dealer's world.
Here, Hartnett gets to flex his comedic chops, as his egotistical actor character suddenly has to be as tough as the characters he plays on screen.
2. Danny Walker in "Pearl Harbor" (2001)
Michael Bay's blockbuster fictional epic about the attack on Pearl Harbor was slaughtered by critics and became a punching bag for audiences throughout the summer of 2001. But despite all of that, it features one of Hartnett's best performances.
Starring alongside Ben Affleck as two best friends who survive the attack, the role marks the biggest studio job Hartnett has had to date. Not only does Hartnett deliver an impressive dramatic performance, but he also carries the movie's main love story, alongside Kate Beckinsale.
1. Zeke Tyler in "The Faculty" (1998)
The same year Hartnett made his big-screen debut in "Halloween H20," he also starred in Robert Rodriguez's sci-fi horror "The Faculty."
As the rebellious, drug-dealing student at an Ohio high school who is repeating his senior year, Hartnett delivers all the qualities that would go on to make him famous: His boyish good looks, his brooding intensity, his signature deep voice, and that late-1990s look where you wear a long-sleeved shirt under a T-shirt.'

REVIEW: In his play "Witches!? In Salem!?" playwright Matt Cox presents Satan's perspective on the 1962 events in Salem, Massachusetts, and the subsequent trials, arguing that this was one historical event in which he had no involvement or even presence. Cox, the writer behind the long-running Off-Broadway comedy "Puffs, or Seven Increasingly Eventful Years at a Certain School of Magic and Magic," brings his irreverent and sharp wit to the Salem Witch Trials for an evening of theater that is both hilarious and thought-provoking.
Cox's play features eleven main characters, with the cast serving in supplementary roles for specific scenes. He constructs the satire from a cacophony of selfish motivations and desires exhibited by the characters. Among them is a contemporary character introduced by Satan- an eighth-grade student named Jenny Ann Bishop. A straight-A student, Jenny Ann boldly declares to the audience, "I'd sell my soul if I could lecture a captive audience on my favorite school subject: U.S. HISTORY." Throughout the play, she appears, providing commentary on the unfolding events.
The satire and irony are perfectly paced, while the character motivations and arcs are reminiscent of a less vulgar "South Park" story. The characters stand out as caricatures, offering a refreshing and engaging experience that avoids clichés.
In the play, there's a compelling scene where Bridgert Bishop travels through time, reflecting on past and present events. As she enters a Walgreens, she remarks on the irony of being murdered for something that is now celebrated everywhere she goes. She expresses a sense that her words are part of a comedy about her tragedy and expresses hope that the real world has progressed since the events of 1692. This scene highlights the enduring relevance of historical events and raises questions about how far society has truly come.
As the story reaches its climax, a chilling twist unfolds. Satan emerges, presenting his alternate version of events, creating a hauntingly captivating conclusion. The play leaves a resonant impact, adding a lingering crescendo, leaving the audience in awe of the unexpected turn of events.

The production values of the play were impressive, especially considering its modest budget and off-off-Broadway status. The puritan costumes were simple, enhanced by well-designed cardboard pilgrim hats. The Bloodkraven costumes were ironically fashionable, off-the-rack iconic pieces that added a touch of color to the otherwise puritan garb.
Most of the set and props were cleverly designed using cardboard, except for a few key elements such as the history book, gavel, church benches, and cauldron. Even the stage design, except for the quilt-like curtain, had a DIY feel that was both fun and effective, allowing for quick scene changes.
The lighting design, music, and sound effects were also impressive and added to the overall atmosphere of the play.

"Witches!? In Salem?!" features a truly brilliant cast, including playwright Matt Cox himself. The production boasts a talented ensemble of actors, many of whom are alumni of Cox's off-Broadway hit "Puffs." It would be unfair to single out individual performances, as the entire cast is outstanding. However, Aaron Parker Fouhey, Jessica Mosher, Andy Miller, Jessie Cannizzaro, and A.J. Ditty deserves special mention for their hilarious portrayals and their ability to navigate the show's demanding physical comedy and set changes. The ten-minute intermission is well-deserved, as the cast puts in a lot of effort during the show's two acts. Having seen "Puffs," I believe that Cox has assembled his dream cast for "Witches!? In Salem?!" These actors were undoubtedly aware of the show's demands and were up to the challenge.
In Matt Cox's uproarious comedy titled "Witches!? In Salem?!", the infamous events of the Salem Witch trials are hilariously reimagined. The talented cast, like a well-oiled Swiss watch, delivers a marvelously synchronized and dynamic performance, creating a madcap comedy brimming with laughter and satire, and a couple of introspective moments. A memorable theatrical experience not to be missed.
Witches!? In Salem?! will be presented at 8:30pm on Sat 3/16, Tues 3/19, Fri 3/22, Sat 3/23, Tues 3/26, Thurs 3/28, Fri 3/29 and Sat 3/30 with 4:00 pm matinees on Sun 3/17 and Sat 3/23 at HERE, 145 Sixth Ave, New York, NY 10013. Tickets are available at www.witchesinsalem.com.

BILL RUSSELL, THE GREATEST WINNER IN HISTORY, PASSES ON

Bill Russell celebrated his 88th birthday last February 12, but even as the Boston Celtics’ legendary center had reached the autumn of life, his accomplishments both as an athlete and as a person had assumed even greater significance, and never before perhaps than it has now.  The greatest Celtic of all time passed away last July 31 in a sad, quiet farewell that triggered a deluge of paeans from every imaginable sector in America, and, quite surely, more from beyond, albeit more quietly, in a world whose connective barriers have been broken forever.
This is, after all, a once-in-a-lifetime human being, whose matchless accomplishments as an athlete are perhaps matched only by his character and sense of commitment to human dignity and justice. On the playing field, how can anyone ignore what Bill Russell accomplished?  Eleven NBA championships in 13 years, eight of them coming uninterrupted in eight years, five MVP awards, two NCAA championships, one Olympic gold medal with the US team, and the general belief as the greatest defensive player in the history of basketball, period.
You’re just talking sports here.  Bill was also ahead of his time as far as involvement in the civil rights movement is concerned.  One of the most outspoken and fearless critics of racial prejudice and discrimination during his time, Russell lent his name and reputation to gain for the movement significant strides, and, as NBA commissioner Adam Silver said in tribute to him, it’s a legacy he “stamped into the DNA of our league” and “passed down to generations of NBA players who followed in his footsteps.”
As a testimony to his contributions to breaking down the walls of prejudice in America, then-US President Barack Obama in February 2011 awarded him the Presidential Medal of Freedom, the highest civilian award that can be given to an American.  The White House, in conferring the award, said, “Bill Russell is the former Boston Celtics’ captain who almost singlehandedly redefined the game of basketball.  Russell led the Celtics to a virtually unparalleled string of 11 championships in 13 years and was named the NBA’s most valuable player five times.  The first African-American to coach in the NBA – indeed he was the first to coach a major sport at the professional level in the United States – Bill Russell is also an impassioned advocate of human rights.  He marched with Dr. Martin Luther King Jr., and has been a consistent advocate of equality.”
But it was in basketball that the iconic center really made his mark, as it is where bare numbers can more easily quantify one’s success.
His trail-blazing dominance started at the University of San Francisco, where he averaged more than 20 points and 21 rebounds in two years as he led the Dons to two straight NCAA championships in 1955 and 1956, and anchored a team that included future Celtics teammate K.C. Jones to a then-NCAA-record 55 consecutive victories, a record that stood for 17 years until a star-studded UCLA team led by Bill Walton broke it in 1973 en route to a new standard that ended at 88 straight wins. 
Russell after graduation then led the US team to the gold medal in the 1956 Melbourne Olympics, anchoring the Americans’ eight-game sweep that saw them beat opponents by an average of 53.5 points, still an Olympic record that only the original US Dream Team in 1992 could approximate at 43.8 points.  Fact is, the 1956 US Olympians’ average winning margin even surpassed their opponents’ average score of 45.6 points, and it was no doubt primarily because of Russell’s intimidating presence in the middle.
This dominance extended once Bill joined the Celtics after the Olympics. As the fulcrum of the greatest dynasty in NBA history – some say in all American sports history – Russell anchored the Celtics to 11 titles in 13 years, including an unheard-of eight straight from 1958-59 to 1965-66.  That could have been 10 straight actually had Russ not been injured in the 1958 NBA Finals, where the Celtics eventually succumbed to the St. Louis Hawks, whom they beat the previous year for Boston’s first-ever title.  This was after Russell suffered a severe right ankle sprain in Game 3, thus crippling the Celts as he could not play until the sixth game, where he struggled while Bob Pettit exploded for 50 points with Bill almost unable to move around with a cast on his injured leg.
Russell lost one other year – to the Philadelphia 76ers in the 1967 Eastern Division finals during his first year as player-coach of the Celtics.  This was after Red Auerbach retired after that eighth straight title the previous year and made him the first-ever Black to coach any professional sports team, breaking down that racial barrier and paving the way for the equal rights the minorities are now enjoying in the front offices of American pro sports teams.  Fittingly and symbolically perhaps, the NBA for the first time has half of its 30 franchises now – 15 – being led by Black coaches in Russell’s year of death.
But even that trail-blazing accomplishment would not have merited any attention – and inspired duplication – had Bill not succeeded as a bench leader.  True, Bill was also coaching a player named Russell but had he not proven worthy of that leadership position, there was no way Boston, even with him at center, could have won those two titles in 1968 and 1969 with him filling two roles, the second as bench tactician.  Boston, after all, was up in 1968 against the same Philadelphia team to whom it lost in the East finals the previous year, ending their championship streak at eight.  This time, the Celts fell behind 3-1, but Russ and company won the next three games to become the first team in playoff history to come back from such a deficit and win a series.  The Celtics went on to win their 10th title in 12 years by beating the Lakers in the NBA Finals in six games.
Russell and his Celtics set another record the following season when they became the first squad in history to come back from a 2-0 deficit in the Finals and win the championship, doing it in seven hard-fought games against a Laker club that now featured their former Eastern nemesis, Wilt Chamberlain, who that year joined Elgin Baylor and Jerry West in a Big Three setup that Boston nevertheless frustrated.  That would also be the last year for both Russell and Sam Jones, who teamed up with the 6-foot-10 center for 10 of his 11 NBA titles, as the duo later retired after their clinching 108-106 victory over the Lakers.
Some 53 years to the day Russell played his last game, his amazing accomplishments have not lost their glitter.  In fact, they could have assumed an even more awe-inspiring nature given the stats-driven analytics that are in vogue nowadays.
The Obnoxious Boston Fan, for example, once cited in The Boston Globe a record that Russell accomplished as a player, which was to win all deciding Game 7s his Celtics played during his reign.
“Of all the stats and numbers produced by Russell, one stands out as perhaps the greatest single numeric stat in Boston sports history (not counting of course Ted Williams' 39-0 record in the Korean War).  Bill Russell was 10-0 in Game 7s.  10-0.  LeBron, M.J., Kobe, Wilt, Larry, no one will ever match that Perfect 10.  At least not in this time-space continuum.”
And talking about deciding do-or-die games, his record in winner-take-all battles over his entire career – NCAA, Olympics and NBA – is worth noting as Russell played in 21 such games, and won all of them.  Twenty-one and zero!  Can anybody match that, much less top it?
There’s a reason the NBA Finals MVP award was named the “Bill Russell NBA Finals Most Valuable Player Award.”  The great Celtics center is, quite simply, the greatest winner in all sports history, as attested to by those 11 NBA championships in 13 years, a record that will probably be unmatched till the end of time, unless perhaps somebody with Russ’ toughness, character and heart, cerebral powers, athleticism and innovative skills comes along.

Consider: He has career playoff averages of 16.2 points, 24.9 rebounds and 4.7 assists, and even if he was not that big a scorer, one just has to reverse those rebounding and scoring numbers to come up with, yes, an out-and-out dominant player whichever way one cuts it.  He is not only a perfect 10-0 in Game 7s (1-0 in Game 5s) and led the Celtics to eight straight championships (which could have been 10 straight as we said had he not been injured in the 1958 Finals, the only time by the way he lost in the championship series) but he did all that at a time when all teams in the NBA were loaded with two or three All-Stars each because expansion had not yet diluted it, battling the likes of Chamberlain, Baylor, West, Pettit, Nate Thurmond, Walt Bellamy, Willis Reed, Jerry Lucas, Oscar Robertson, Rick Barry, and, later, Wes Unseld and Elvin Hayes.  Don’t for a second believe today’s observers overwhelmed by current-day players’ athleticism and size that the league in the ‘60s and ‘70s was not as good as it is now.  Had Russ and company had the benefit of today’s modern medicine and other amenities, they would have seamlessly grown into today’s game and beat the hell out of many of these players, who would certainly not match up with them in terms of smarts alone, or toughness and cerebral focus.
Of course, that undefeated record in deciding games has been extolled with the passage of time, along with Russell’s preeminent role in revolutionizing the game with his defensive skills, which could not be fully appreciated at this stage with the absence, for example, of statistics in shot blocks during his time (the NBA started keeping stats in blocked shots and steals only in 1973).  His redefining the game with his defense, rebounding and shot blocking, however, was amply demonstrated in his averaging 18 points and 29 rebounds in those 11 do-or-die games (including that Game 5) he all turned into wins.  He holds the Finals record for most rebounds in a game with 40, doing it twice, and also grabbed 30 rebounds in three straight games in the 1959 finals against the LA Lakers, in the process setting the record for highest rebounding average in a Finals series with 29.5.  He pulled down 30 boards in 15 straight Finals games between 1960 and 1963 and would have also held all blocked-shots records had records been kept of that stat at the time.
For all of what Russell has done, Adam Fromal of Bleacher Report put the 12-time All-Star in his mythical Mount Rushmore, which is populated by only the four greatest players in NBA history.  Fromal justifies his position by saying, “Russell was the NBA’s first superduperstar, and he was the No. 1 player in history before Jordan came around.  Championships galore were won for the Boston Celtics while he was patrolling the paint, and the biggest dynasty in the history of American professional sports thrived with Russell blocking shots and running in transition.
“Beyond that, he helped shrink the racial divide and continues to serve as an ambassador for the game.  There’s a reason people listen when he talks.  There’s a reason he’s treated with undeniable reverence by anyone who encounters him.  There’s a reason he hands out the Finals MVP trophy every year, which just happens to be named after him.” 
Yes, and there's also a reason – even when he would no longer be celebrating birthdays – that William Felton Russell will always be regarded as the greatest winner of all, bar none.

Why Are So Many Cakes Named After Fabric? Silk, satin, lace, and fur, but make it cake.

In what seems like a past life, my family owned a bakery with a menu that was overwhelmingly inspired by American confectionery—classic cakes from Appalachia, the South, and twists on iconic recipes from New York City bakeries. As I pored over piles of recipes to build my own foundation of baking knowledge, I quickly noticed a continuous thread throughout the archives of iconic American heirloom cakes: so many are named after fabrics.
My family is the proud owner of a red velvet cake recipe which, according to family lore, was given to us after a family friend purchased it from the Waldorf Astoria in the 1930s. In our bakery, we sold a delicate, zesty lemon chiffon cake, which was developed in the late 1940s. And as you dive a little deeper into the canon of American baking, the list goes on, including black satin cake, tweed cake, ermine frosting, and others.
Once I started to notice them, I realized they were everywhere—a whole range of velvet cakes from the mid-1800s beyond the iconic red velvet; recipes that evoked silk, satin, lace, and furs; mid-20th-century magazines depicted cakes that had the alluring elegance of upper-class fashion. But where did this secret coding come from?
“My first initial gut reaction was that it was simple to explain why cakes are often named after fabrics: because they’re both women’s material culture—they are both historically part of women’s worlds,” says K.C. Hysmith, a food historian and writer.
As Hysmith explains, many generations of women throughout history have relied on embodied knowledge (that is, learning through the body’s senses, like sight, touch, smell, and taste) to acquire tactile skills like cooking and sewing. Before the standardization of measurements and innovation of precise cooking equipment, written recipes were often concise and lacked fine details; there was no standard way to communicate these details, anyway. Recipe authors assumed their audience had learned how to cook and bake from their mothers or from other skilled cooks who ran domestic kitchens; they likely knew what a “low oven” was by having an intimate knowledge of their personal oven, how much coal or wood to light, and feeling the heat of the oven on their hands—just as someone would have shown them in person.
According to Anne Byrn’s American Cake, scales have been used in American baking since the 1860s and many recipes, including pound cake, relied on this kitchen technology. However, it wasn’t until a few famous cooking schools in Boston and Philadelphia opened in the 1890s that volumetric units of measure, such as cups and tablespoons, were standardized. Without these precise measurements, or the high-resolution photos that accompany today’s recipes, it helped to know whether your cake batter should resemble more of a tight, glossy silk, or an airy, frothy chiffon.
“It makes sense that to help other women understand and navigate elements of a cake, including its texture, women would describe it in terms of something they would know, something universal, which would be fabric,” Hysmith tells me.
To get a better understanding of the types of textures these fabrics—velvet, ermine, satin—were hoping to convey to bakers, I reached out to one of America’s foremost experts on cake texture.
“People don’t take into account the profound effect texture has on flavor,” says Rose Levy Beranbaum, author of the 1988 instant classic The Cake Bible and pioneer of the all-butter reverse creaming method for cakes. “If you’ve ever made a cake using all the right ingredients, but say you didn’t use bleached flour and your cake fell in the middle and the texture was coarse—suddenly you’d realize that it has an awful taste.”
While texture and flavor are intimately linked, there is a startling lack of vocabulary to precisely describe what a cake should feel like. Beranbaum, who studied at the Fashion Institute of Technology in 1968, says that this vacuum was easily filled by textiles—a familiar category for many homemakers through the mid-20th century.
“I like to say I went from draping fabric to draping fondant,” Beranbaum says. “All the skills I learned as a craftsperson were transferable to baking. It was kind of a logical thing to use fabric because fabric is so visual and textural, as are a lot of cakes and cookies and pies and tarts.”
Beranbaum points out that the crossover language between fashion and cake can account for texture, but also presence and persona. Both a cake and a dress can be ethereal, stunning, and showstopping, and both can be emotionally evocative in a way that transcends a list of ingredients or components. Beranbaum’s The Cake Bible included a White Velvet Butter Cake as soft and fluffy as its textile namesake, a lusciously smooth Silk Meringue Buttercream, and several variations of light-and-airy chiffon cake.
“People can be in different professions, but when they’re interested in beauty and form and shape and taste, there are deep connections between artists of different forms,” Beranbaum adds.
And, as Hysmith points out, food and fashion—tiered cakes and elaborate gowns—both speak to a fundamental desire to live well. An expertly crafted cake that emulates the texture of a fine fabric suggests a familiarity with luxury itself.
Baking in the 19th and 20th centuries, says Hysmith, “was a very aspirational activity. It was something you could do to be very creative, to escape, to celebrate things, but there was also always this element of making things fancier, better…. These fabrics—velvet, chiffon, and especially ermine—you might not be able to afford those fabrics as a housewife in the 1950s who’s making a boxed cake mix. [Or] you might have those, but you never get to wear them except for fancy occasions. However, you can bake a cake emblematic of that class using the same name.”
