Here is the finished Kashk. I pushed some down in a jar. The other rolled into balls I going to try drying. It does have a tart acidic flavor along with cooked milk. I can see it being another acidifier in the Quillisascut pantry along side ver jus. The directions said it will keep for a week in the refrigerator. Maybe I will cover it with olive oil to help preserve it. Si chiama Kashke Bademjan è un piatto tipico della cucina Iraniana. A base di melanzane.
Patto iraniano, con piadina romagnola e birra Moretti.
Sono cittadina del Mondo 😃.
Comunque mi è venuto benissimo.

کشک بادمجان ~ Kashk-e bademjoon

Since I've just made some and it's so so tasty, here's my recipe for kashk-e bademjoon (kashk & egglant dip dish)
You'll need:
1 big eggplant
1 big onion or 2 small ones
Garlic (be generous)
Ground walnuts
Kashk*
Spices: turmeric, paprika, cumin, black pepper (whatever you have)
Dried mint (optional)
*Kashk is not easy to find outside of iranian stores, and hard to substitute. It's a kind of fermented curdled milk paste and it tastes really strong. I see people online substituting it with greek yogurt and honestly, it just won't be the same taste at all. It probably makes a great dish, but it won't be kashk-e bademjoon. If you can't find kashk (which is likely, sometimes you can find dried kashk in indian/turkish stores but you really need the paste and I've never been able to rehydrate the dried balls into a paste lol), try to use a sheep or goat cheese which can melt/flake off and has a strong taste (if you can't taste the farm, if it doesn't feel like licking a sheep, it's not the right one lol).
That being said! Here are the steps:
As a forenote, do NOT add salt during the first steps, kashk is very salty and you'll need to wait until the end to add it and adjust to taste
Peel the eggplant and slice it lengthwise, cook it in a pan with oil and paprika until soft and lightly grilled
Slice the onions and cook them in a pan (use the same pan as the eggplant). When translucent, add turmeric, paprika, cumin, and hot paprika/cayenne if you want a little kick. Mince the garlic and add it to the onions. Cook until golden
Add the eggplant back into the pan and mix well
Add dried mint to taste
Add ground walnuts
Let cook until the walnuts are well roasted
Add about 3 big spoons of kashk, to taste
Let cook a bit more on low heat until everything is well incorporated
Bam! You've got kashk-e bademjoon. Eat it on some bread :)

It’s always a challenge to make something I’ve never seen or tasted. Here is my first attempt making #kashk a cooked down yogurt. It creates so many questions about the origins and how it’s different from a dried lactic acid cheese flavor wise. I used goat yogurt and water and let it boil for a couple hours until it reduced and started to thicken then stirred constantly so it wouldn’t burn, until it was thick. PATHO POST OF THE DAYYYY
So. Last we left off the Plague Had Begun. Oh dear. I was also caught flat footed again with no food, but I did have a healthy supply of tinctures. So I resolved to jog through the infected areas and give immunity boosters to the Stamins, per recommendation of the judge.
Though it was stressful and by the end I had taken some minor starvation damage, I made it! And I managed to crude sprawl trade for a little snack before going to bed :)
This, however, did not prevent the crude sprawl from being infected :( (my husband informed me that was a different side quest I missed earlier. Alas).
But in any case I did reunite with my old friends!! They were so sweet to me.... I love Lara .... Fuck Rubin kinda he's so weird to me he's like my fervently jealous younger brother. Like I'd die for him but also I want to punch him.... Bad Grief is like. Ok maybe if you weren't so hung up on Being Bad. I'd still also die for him. troubled younger brother.
Anyways at this point I was still starving, so I ended up doing the old knock on doors, look for people trading random shit to try and get food
AND LO AND BEHOLD -- I found a Teensy who had a schmowder!! Three schmowders!!!!! Wonderful. Also got that food incidentally, and I have a ball of kashk for later.
I swung by Big Vlad's house to save. Gonna slip Capella a tincture to be safe and then go catch the play :)

“As you know, Director, Tagge corporation is more than happy to pivot our engineers toward the Empire’s latest needs,” she began, pausing to sip from a cup of tea laid out on the table before them. “We have a vast array of technology in development that may be beneficial toward your…special project.” 
“However, you must understand that we cannot build upon such a vague foundation.” She had yet to even hear even a name for their newest enterprise, a project so massive that it sent ripples through her trade routes. Entire economies had been bent toward the gravity of some massive, unknown undertaking, and it was more than simple practicality that Domina sought out answers: it irked her that even their most entrenched spies could not provide details. Her cup returned to the saucer with a sharp click, and she leveled the full weight of her gaze toward Krennic.
