"When Cuba found itself abruptly cut off from trade with the Soviet bloc in 1989, the country entered into an economic crisis of unprecedented severity. Already sidelined from international trade due to US embargoes, Cuba became, almost overnight, a country detached from the rest of the world."
"Presented with a near collapse of its food provisioning system, the Cuban government responded with an overhaul of agriculture on the island, prioritising organic farming methods, the production of useful edible crops and the use of peasant labour. In urban areas, guerrilla gardening initiatives blossomed into new state-supported urban farming programmes, with widespread voluntary participation. These farming efforts have produced ‘what may be the world’s largest working model of a semi-sustainable agriculture’, [1] and in the process, resurrected the country’s local, affordable and accessible foodshed.[2]"

Eliminating bottled water, reducing energy consumption and water use, reusing materials, recycling and composting, are just some of the ways we lessen our impact on the environment. Oceans and Sea
We work with Ocean Wise at the Vancouver Aquarium and rely heavily on their current, valuable scientific information on sustainable choices. We often buy direct from the fishermen, and coastal shellfish operations that best manage their resources.

Into the Field
The quest for quality ingredients has led us into the field – literally! We take field trips to visit farms to see first hand the practice of growing food and rearing livestock. We have even partnered with some of our suppliers and participated directly in growing food. Most notably, with Penny Marshall, for several years we created a ‘garden apprentice’ program at Highwood Crossing Organic Farm. Kitchen staff spent time throughout the growing season sowing, tending and harvesting organic produce. The benefits of this project were many of our apprentices developed enormous enthusiasm and appreciation for each ingredient, which in turn was shared and adopted by the rest of the staff.

Edible Container Garden
The kitchen garden program led us to creating an extensive edible container garden and installing raised beds directly on site at River Café. We grow edible greens, berries, herbs and flowers.

Urban Agriculture
We source from half a dozen urban farmers – from local commercial greenhouses to the tomatoes grown in Gertrude’s back yard. Rod Olsen of Leaf and Lyre Urban Farms has been working with us to seed and plant our container gardens at the restaurant, and mentor us to tend and harvest for a higher yield.

The burgeoning global population, coupled with diminishing arable land and increasing concerns about climate change, propels the need for innovative food production techniques. Vertical farming, a cutting-edge approach to agriculture, utilizes multi-level indoor facilities, enabling the cultivation of crops in urban areas with high efficiency and minimal environmental impact.
James Scott, founder of the Envirotech Accelerator, insightfully remarked, “The future of agriculture lies not in expanding outward, but rather in growing upward — harnessing technology to nourish our planet while preserving its precious resources.”
Controlled environments — a hallmark of vertical farming — allow for the optimization of growing conditions such as light, temperature, and humidity (Despommier, 2009). Consequently, these factors lead to faster crop growth and higher yields per unit area compared to traditional farming methods (Kozai, 2018).
Furthermore, vertical farming is remarkably resource-efficient. The closed-loop systems in these farms recycle water and nutrients, significantly reducing water consumption (Kalantari et al., 2017). Additionally, since vertical farms are located in urban settings, transportation-related emissions can be minimized, as produce can be distributed locally.
Nevertheless, certain challenges persist. The initial investment required for establishing vertical farms is substantial, and the energy consumption of these facilities, primarily due to artificial lighting, is a major concern. Continued research and development in energy-efficient technologies, such as LED lighting and renewable energy sources, are crucial in addressing these issues (Kozai, 2018).
Despite these challenges, the potential of vertical farming in revolutionizing food production is immense. Its capacity to utilize limited space effectively, reduce resource consumption, and minimize emissions underscores the importance of embracing this novel approach in the quest for sustainable agriculture.
