Ingredients
½ cup aquafaba (the water from a can of chickpeas-22 cals
Sprinkle of cinnamon-0 cals
¼ cup 0 cal sugar-0 cals
½ tsp 0 cal syrup Recipe Here-0 cal (careful to not make the mixure too liquidy
How To
Refrigerate your aquafaba for at least 30 min-1 hr before doing the rest, it’ll make your life a lot easier
Mix the aquafaba in a bowl with an electric mixer for about 5-10 minutes (It takes a shorter time if you chilled it before this) It’ll be done when you can make stiff peeks form by taking the mixer out of the aquafaba and shakin the bowl around and they’re still there
Fold in the other junk, if the thing is getting too liquidy just stop adding things in-just use your best judgment
Now put it in a freezer safe container and freeze for like 3 hours-overnight
Eat it now you got some nice bomb-diggity ice cream

3 tablespoons light corn syrup-93 cals
1 cup fresh pumpkin puree or canned pumpkin puree-83 cals

Stir in the vanilla and the walnuts, beat the mixture with a wooden spoon for 30 seconds to 1 minute, or until it begins to lose its gloss, and pour it immediately into a buttered 9-inch-square pan. 3 cups oat flour recipe-436 cals
1 tablespoon baking powder-6 cals
1/2 teaspoon ground cinnamon-3 cals
1/2 teaspoon salt-0 cals
2 flax eggs recipe-74 cals
1 cup non-fat plain Greek yogurt-137 cals
1/2-3/4 cup 0 cal sugar(to taste)-0 cals
2 teaspoons vanilla extract-24 cals
1/2 cup almond milk-20 cals
1/2 melted cup coconut oil-940
2 cups fresh or frozen blueberries (if frozen, do not thaw first)-158 cals
Ingredients: Honey Lemon Glaze
258 cals for all the things
1/2 cup powdered sugar-233 cals
2 teaspoons almond milk-1 cals-ish
1 teaspoon honey-21 cals
1 teaspoon fresh lemon juice-3 cals
How To: Blueberry Muffins
Preheat oven to 375°F/187ºC. Grease 12/24* baking cups with cooking spray, or line them with paper liners. Set aside.
Add the flour, baking powder, cinnamon, and salt together in a large mixing bowl, and whisk until completely combined. Set aside.
In a separate mixing bowl, add the eggs, Greek yogurt, honey, vanilla, and almond milk, and whisk until completely combined. Gradually add in the coconut oil, whisking continually as you add it in so that its warmth doesn’t accidentally cook the eggs. Whisk until completely combined.
Pour the wet ingredients into the mixing bowl with the dry ingredients, using a rubber spatula to gently fold everything together until just combined. (Be really careful not to overmix the batter.) Gently fold in the blueberries until just combined.
Scoop the batter into the prepared baking cups, filling them 3/4 full and topping with a few extra fresh blueberries if desired.
Bake for 17-20 minutes, or until a toothpick inserted in the middle of the muffin comes out clean. Remove and let cool on a wire rack. Serve immediately, drizzled with the optional glaze if you’d like. Or store in a sealed container for up to 3 days.
How To: Honey Lemon Glaze
Whisk all ingredients together until smooth. If you need to thicken the glaze, add more powdered sugar. If you need to thin the glaze, add more almond milk.
