In my own, probably delusional, world, Eric Matthews is in fact a pretty smart and on the whole emotionally mature guy who is sometimes just a bit clueless and neurodivergant. HOWEVER due to a lifetime of being told he's stupid by every single person in his life except Feeny, he has greatly internalised this and has pretty low self esteem. His relationship with dating doesn't help matters, or is maybe a symptom that feeds into it in a loop.
I headcanon that he has a complex relationship with food during highschool years (that one episode where Jason has him listen to a VERY 90s-00s Food Bad tape, a comment from the actor saying he was really skinny in the early seasons, and the episode in season 7when he's binge eating and goes on a diet with topenga.)
He mostly grows out of it by the end of his gap year and starting college (moving in with Jack probably helps, I feel like he's a good cook and would force Eric and Shawn to eat), but then more and more subscribes to the mindset of 'it's easier to not try so no one expects anything from me'. This translates into being more and more 'stupid' and the more he acts that way the more people call him that the more he starts to believe it.
The only thing he does put effort into his relationships with his siblings and friends--he cares too much about people to let his relationships and the feelings of those around him at risk. Which also means everytime he sees a kid who needs more support he will do anything in his power to help.
Basically I love Eric and he deserves better and he's a smart lad who can do so much and he should be a weather reporter and father.

Me: I’m fine!
My brain: Eric Matthews watched his best and closest friend Jack get chosen over him by his other good friend Rachel, felt he needed to leave his apartment and basically become homeless (in the middle of college, mind you) because he couldn’t handle the heartbreak of that but also loved them too much to intrude on their happiness, had his new little brother arrive too early and almost die after a good few scary days in the hospital (that he didn’t properly process to take care of/protect Tommy), and had to give up Tommy, the kid he pretty much would have adopted on the spot if he was a bit older, despite it literally feeling like having a piece of himself ripped away from him, all in the span of maybe a few weeks’ time.

coming on here again to say that while making theories about eric’s change in characterization is fine, pretending like he wasn’t just a victim of lazy writing and flanderization is frankly just dumb. him becoming more stupid as the series went on can’t be explained in universe because it wasn’t an intentional storyline or piece of subtext or anything, it was literally just them deciding eric was the comic relief character and then never giving him a shred of depth ever again. stop trying to find a convoluted answer to a simple question we already know the answer to.
