I felt like cooking. Everything is from scratch today—collard greens, basmati rice with gravy (made the gravy with little bits of “turkey” from @theherbivorousb), mixed green salad with tomatoes, carrots and fresh basil drizzled with @followyourheart ranch dressing, and slow cooked pinto beans on the side. Sunday dinner was tasty. Decided to grill last minute. @the_tofurky_company Italian sausage, @theherbivorousb ribeye steak, corn on the cobb (trick is to cook them in aluminum foil with herbs and @earthbalance butter), grilled peaches for a touch of sweetness and a roasted potato-onion-carrot medley. This is a late post, and the pics don’t do it enough justice...but LAWD, the seitan buffalo wings (appetizer) and seitan “chicken fried steak” entree with gravy, mashed potatoes and seasoned veggies on the side was true comfort food. These pecan #vegan pancakes were so light, fluffy, filling and good today. The breakfast potatoes were also super tasty. Pick Me Up Cafe has been in my rotation since college. Great place to go when eating out with non vegans because there is something for everybody on the menu. Tons of options. And the $4 Mimosas don’t hurt either.
